    First of all, you don't HAVE to cook EVERY night just 'cuz he's home at dinner time. Make a deal with him that he's in charge of dinner at least 1 night a week.

    Secondly, if you hate to cook every night, make a large meal 1 night and heat the leftovers for the next night. We do that all the time.

    Thirdly, get a crockpot. Throw in a roast and a bunch of veggies the night before. Plug it in when you get up in the morning and go on with your day. There are some great crock pot/one pot meal cookbooks out there.

    I love to cook, but if I knew I had to do it EVERY day, I'd start to hate it too.

    I have been making this recipe forever! It's so easy! I place 4 frozen chicken breasts in a crockpot. Pour one large can of hot salsa over top and cook on high, 4 to 5 hours. For the last half hour of cooking, add chopped green onion, chopped mushrooms, black olives and a little cream cheese. I usually spice it up more as well, adding parsley, cumin, a little chili powder, whatever I have on hand.

    It's the easiest thing to make and it's so great. Serve it over rice with a side salad.

    I agree. The crockpot is my best friend. We always do large batch cooking on the weekend, and then use leftovers during the week. I make spagetti sauce, BBQ meats, soups during the weekend. Then freeze individual portions to alternate during the week.

    I would never have time to cook full meals every night during the week!
