    That is one of my favourites! I love nacho cheese that is of an almost liquid consistency. Take a block or half block of Velveeta style cheese, cube it up, toss in a can of Rotel, and eat with chips.

    Diced tomatoes, lettuce, browned hamburger! Taco salad!

    Take some lemon juice, dill and mix it with sour cream? GREAT on fish or fish tacos!

    That is a good idea!! I never thought to use it for taco salad. That is one I will definitely try!

    I have never had a fish taco! I wonder what that is like!

    Fish tacos?

    It depends on where you go to get a FT.....

    There are different 'recipes' - The FTs you get in Baja California are pretty much just a fried hunk of fish inside of a corn tortilla with salsa or cabbage.

    The FTs you get in a restaurant here are breaded then fried and packe with a bunch of stuff....

    I found this recipe and thought the cream cheese would be as good as the ricotta.

    California Rolls
    1cup reduced-fat ricotta cheese
    2(11-inch) flour tortillas
    1medium tomato, thinly sliced
    2cups stemmed, washed and torn fresh spinach leaves
    1cup chopped onion
    1/2teaspoon dried oregano leaves
    1/2teaspoon dried basil
    1cup alfalfa sprouts
    4ounces sliced turkey breast


    Preparation: 1.Spread cheese evenly over tortillas to within 1/4 inch of edges. Layer tomato, spinach, onion, oregano, basil, alfalfa sprouts and turkey over 2/3 of each tortilla. Roll up tortillas. Wrap in plastic wrap; refrigerate 1 hour. Cut each rolled tortilla crosswise into 10 slices before serving.
