    whats for dinner revisited

    I am in a real cooking slump...I have always been really into cooking and the last few years I just don't enjoy it anymore...mostly because I just run out of ideas...I don't know if I have forgotten everything or what...just lazy I think...you have to plan ahead, shop then cook

    so any helpful ideas...anything good that is pretty easy....
    don't breed or buy while shelter dogs die....

    I have been frosted!

    Pamela's site is GREAT! I'm a member there too. But tonight, I am NOT cooking as we get to entertain some business guests on the company tab and Scott is taking us OUT to dinner at a nice restaurant downtown!

    OMGoodness, Logan! I did not realize that was you on there til just now! lol..soooo sorry about that!! I have so many members that have joined that has come from word of mouth that I don't know who has joined from MY mouth..lol
    Glad you are there and now glad to know its you..and thank you for the compliment..I am sure loving it..
    And Trev (oggysflute) is a joy to have on there..he has so many good recipes/ideas...and has been such a great addition..

    I just joined....

    OK, I've already found 3 recipes I'm going to try. I can see that I'm going to be addicted to this site as well.

    I'm going to have to join your site Pamela! I love to cook, and even more love to eat!!

    Tonight I made pork medallions, wrapped in bacon, on our Foreman grill, with garlic buttered noodles, and corn.

    Okay, have to edit to say, I joined (LabsNSpots), and wow...there are some great recipes there!!!

    Tonight I had barbecued chicken with some kind of alfredo noodles and salad

    Glad to have y'all there..I pretty much post recipes daily as well as a few other members who are good about posting..but most just come to get ideas and/or pick up recipes..which is great too!
    Not especially meant for a visiting roost, but if that happens, I am ok there too..lol Mainly just want it to be a great help site for recipes~

    I was on there for about 30 min. today and could not figure out how to add a recipe. Also I was looking for some soup recipes...is there a search feature?

    Tonight is a meatless night for me. Asparagus with hollandaise sauce (the real stuff), spaghetti squash and sauteed mushrooms.

    Tomorrow, I have some chicken legs I have to do something with.

    Hey Slick this is my favourite chicken recipe, I mainly use it for wings, but legs will work just as well. Pamela has also one on the site "Chicken wings in honey suace" which is to die for. The honey sauce recipie is well worth it if you have the time as it will take about 3 hours or so to cook. (slow and low= succulent meat )


    Marinated chicken wings

    Ingredients:
    ------------
    8 chicken wings / 4 chicken thighs
    1 small onion, finely chopped
    1 tblsp oil
    1 tblsp clear honey
    3 tblsp tomato ketchup
    2 tblsp soy sauce
    1 tsp smooth French mustard
    1 clove garlic
    tobasco sauce to taste

    Instructions:
    -------------
    Mix onion + oil + honey + ketchup + soy sauce + mustard + garlic & tobasco sauce in a plastic or glass bowl (don't use a metal one as acidic juices in the marinade tend
    to react with metal). Put the chicken pieces into the bowl and make
    sure thoroughly coated with the marinade.

    Leave to marinate for either 1 1/2 hours in the fridge, or for 45
    minutes at room temperature. (I often leave it to marinate for several
    hours in the fridge sometimes if my time allows it, and it
    still works out fine).

    Preheat the oven to 180 degrees C.

    Again make sure the chicken pieces are thoroughly coated in the marinade
    and put the pieces on a wire rack above a roasting pan (just something
    to catch the drips really). Cook for 45 mins, and during that time take
    the tray out of the oven a couple of times to baste the chicken pieces
    with remaining marinade.

    This one is really easy, (it's scaled for one, so increase as needed)


    Lime Garlic Chicken

    Seasoned chicken breasts sautéed with butter and garlic and topped with a squeeze of fresh lime.
    (Scaled to make 1 serving)

    ¼ cup flour
    ¼ teaspoon salt
    1/8 teaspoon ground black pepper
    1 – ½ skinless, boneless chicken breast halves – cut into strips
    ¼ cup of butter
    1 clove of garlic, diced
    ¼ lime
    Lemon pepper to taste

    Directions:
    1) Mix flour, salt & pepper together in a resealable plastic bag. Add chicken, seal bag and shake to coat. Set aside.
    2) Melt butter in a large pan over medium heat. Add garlic and sauté 3 to 4 minutes, until it starts to change colour. Sauté coated chicken strips with butter and garlic for 10 to 15 minutes, until cooked through and juices run clear.
    3) Squeeze lime over chicken and sprinkle with lemon pepper. Serve hot.

    I may have figured out what is for dinner tonight...the lime garlic chiecken sounds great!!
