    !Chili Recipes!

    I *looooove* chili, and I thought since it's winter, and a nice hot bowl of chili is always *YUMMY* on a cold day (or any day for that matter) we could post some recipes for different chili's.


    I had my mom write down her recipe (since someone asked for a good one) and i'll tell ya.. it's AWESOME.

    Here it is:


    1 & 1/2 lbs ground round
    3 cans dark red Kidney beans
    2 large cans diced tomato
    chili powder to taste


    Brown ground beef, drain fat off
    Mix all together.

    Simmer 1/2 cup diced onions & 1/2 cup diced celery in little water.
    Add to chili mixture
    Simmer hour or so.


    Also, she says if you have green pepper you can add that as well. (1/2 cup diced and simmered with onions and celery.)

    Kay...that sounds a lot like my mom's recipe...

    Her's is:

    1 1/2 lbs. ground beef
    1 medium onion finely chopped
    1 (28 oz) cans of crushed tomatos
    1 can of tomato paste
    2/3 to 1 can of water (use the can from the tomato paste)
    1 tsp. salt
    pepper to taste
    2-3 tbsp. chili powder
    1 clove garlic, minced
    2-3 bay leaves
    pinch of oregano
    2 large (19 oz each) cans of kidney beans

    Brown beef (drain fat), brown onion, add salt, pepper and other spices, add all tomato ingredients including water...simmer 1hr- 1.5hrs.

    Add beans and cook one more hour...make sure to stir occasionally, b/c beans can stick to bottom of pan.

    Optional: Can add shredded cheddar, sour cream, bread and butter, tortillas, or whatever else you like...and enjoy!!

    This is my own special recipe:

    My boyfriend has a water smoker so I use smoked chicken breasts in mine but you could use regular chicken, too.

    2 chicken breasts, smoked
    1 large can kidney beans, rinsed and drained
    1 14 oz can black beans, rinsed and drained
    1 14 oz can pinto beans, rinsed and drained
    1 cup frozen corn, thawed
    1 onion chopped and sauteed in olive oil
    1 green pepper chopped and sauteed in olive oil
    2 14 oz cans stewed tomatoes
    1 tablespoon chili powder
    1 tablespoon cayenne pepper
    1/2 teaspoon cumin
    1/2 teaspoon meican oregano
    1 teaspoon kosher salt
    1 teaspoon black pepper

    Place all ingredients into a slow cooker and cook on high for 1 hour then on low for 4-5 hours.

    You can adjust the spiciness by adding or taking out some of the chili powder and cayenne. If you like a thicker chili then add some cornstartch at the end and cook for another 15 min.

    Garnish with sour cream and green onions if desired.
