    Fruit of our Labor Thursday #387?

    Wow,

    I know we have some talented garden people out there!

    How about we do a little 'farming' and "produce" a Thursday to share our wares?

    I was looking for Basil recipes and came across this...

    Basil Pesto Chicken.

    200g dried fettuccine
    2 tablespoons olive oil
    2 single chicken breast fillets, thinly sliced
    2 tablespoons basil pesto
    1 cup cream
    shaved parmesan, to serve
    basil leaves, to serve

    Method
    Cook fettuccine according to the packet directions.

    Meanwhile, heat oil in a large, non-stick frying pan over medium-high heat. Add chicken and cook, stirring often, for 5 minutes or until brown.

    Add pesto, cream, salt and pepper to frying pan. Reduce heat to medium-low. Cook for 5 minutes, or until sauce has thickened slightly.

    Drain pasta. Add to pesto mixture. Toss over low heat until well combined. Transfer to serving bowls. Top with parmesan and basil. Serve warm.

    I feel like wine this week????

    I made a soup for lunch today that turned out yummy.

    2 white potatoes Peeled and chopped
    2 carrots sliced
    half a small bag of frozen broccoli
    onion
    salt
    a dash of Italian seasoning and a dash of celery flakes
    water to cover

    Let it all cook until the veggies are done and the water is cooked down a bit. Add a bit of oleo (I use Smart Balance)

    I'm still smiling over how good it turned out.

    I do need a cherry limeade to go with it though.
    No matter what anyone does, someone some where will be offended some how!!!!

    Our squash (yellow & green), zuccini, broc and cauliflower have all been winners so far as are (as always) green beans. If I could have a white wine spritzer with lime to lift me up I maaaaay be persuaded to start some tempura with dipping sauce. CAPITAL YUM!!!

    Mmmm Pesto Chicken & Connie's soup sounds so good.. I bought some Fresh Parker Co Peaches yesterday & will make up some Peach Smoothies.. Anyone for some Peach Smoothies?? Orc lets get the mixer going & the meals served..

    Been a LONG day (in a seminar 8-4:30, stopped home, went to the dentist, finally had dinner, sort of, an hour later, ordered the new kitchen floor-took 4 days to get hold of our tile guy-just really settling down). The Pesto Chicken sounds wonderful! We have fresh Basil from the garden to contribute, some nice Shiraz with that sounds good! Thanks Barkeep!

    Oh my goodness !! I totally missed Thursday's yesterday!!

    I want the soup and a peach thingy and something sweet and satisfying for deeeesert. . .um, chocolate/vanilla swirl pound cake with mint choc chip ice cream? Oh! That sounds gooooood.

    My garden is currently a densely overgrown mini-jungle but I do, at some point, intend to do something about it. . .it's just so HOT

    That would be great I could use all the help I can get. So far we've picked two shopping bags full of green beans and wax beans.

    How many rows of beans did you plant? We have 2, 5 foot rows that are close to being 'done'. So far, we have picked enough for 3 meals that serve 3. Also, we have 3 more rows that are about 3 weeks away from being ready to harvest.

    Beans just don't know when to quit. LOL

    We just have one 19' row, with a few plants in another row that didn't quite do as expected.

    The surprise in our bean rows are a few tomato plants which sprouted all by themselves from last year's drops.
