When Grandma was still living "down at the beach", I once saw her taking the meat off a pig's head. I didn't watch too long, just knew what she was doing. It still tasted good. Mother made it for many years, using more common meats. Isn't also called silta? Or am I thinking of something else? (no longer have family of that generation to ask)
