This is the one I use for white chocolate and macadamia nut cookies (you can use milk chocolate and omit the nuts). They turn out like Mrs Fields's cookies and are great the next day if you warm them slightly in the microwave![]()
Lightly grease a couple of baking trays.
Pre-heat oven to 190 C (375 F)
125g (4.5 oz) butter, softened slightly
125g (4.5 oz) brown sugar
1 egg, beaten
200g (7 oz) self-raising flour
pinch of salt
3/4 of a block of white chocolate, chopped roughly
handful of macadamia nuts, chopped roughly
Beat butter and sugar in a bowl until light and fluffy.
Gradually add beaten egg, stirring well after each addition.
Add flour and salt to the bowl and mix well.
Stir in the chocolate and nuts.
Place heaped spoons onto baking trays - leave an inch or so between them as they spread a bit.
Bake for 10-12 minutes until just golden brown.
Eat the raw dough while cookies are baking.
Transfer cookies to wire rack to cool. Eat while warm, purrrrrrrr![]()
