Sounds like she is quite a "feral" type, from the fact that she was 'loud' as you put it. She needs LOTS of time to adjust. She is used to big wide open spaces. A ceiling is a HUGE concern for her just now, as are walls. I would take it very slowly in allowing her out of that room.
A true feral does not understand windows, and will throw themselves at the glass, thinking it is "outside." She doesn't sound like she is that wild.
Remember, she is not just adjusting to a new house, but rather to the fact of ANY house. Sights, sounds, smells as all new to her. Routine will help her a LOT, if you can go in a set times to feed, fill water, scoop litter box, sit and talk to her or just sit and read in there.
This is not like bringing a cat from someone else's house to your house; she is not used to be IN anything. It will take her time. I know, she was in the garage; it is very different, from a cat's point of view.
And once you do let her out into the house, she may well be intent on escape, so watch your doors to the outside. Don't leave a door open while you bring groceries in from the car.
She needs TIME to adjust to all this.
