Lemon Sponge Custard
1/4 c. flour
1 c. sugar
1/4 tsp. salt
1/2 c. lemon juice
2 egg yolks
1 c. milk
2 egg whites beaten to soft peaks
1 Tbsp lemon zest
Mix flour, sugar, salt. Mix in lemon zest, lemon juice, egg yolks and milk. Fold in beaten egg whites (soft peaks). Pour into baking dish. Set into pan of hot water. Bake for 50 minutes at 350*.
