How about Chicken Spaghetti? The recipe I have makes a humongous amount and I have 3/4's of it left over so I put it in small containers for Brad to take to lunch..usually atleast 4 generous servings left over...and its easy to make.I need to make something that lasts a few days so it can just be heated. Besides tomato sauces for pasta, meatloafs...anybody have any other suggestions?
I also make Spicy Kielbasa Soup on a regular basis..you can make it in the crock pot and it will make 4 or 5 generous servings to freeze. I always keep some in the freezer to pull out for Brad's lunch when we don't have enough leftovers the night before.
I added the link in a previous post to Pamela's Kitchen but am posting these 2 recipes for you:
SPICY KIELBASA SOUP
kielbasa, sliced and each slice cut into fourths (or just use any polish style sausage)
1 medium onion, chopped
1 medium green or red bell pepper, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) chicken broth
1 can (15-ounces) black beans or kidney beans, drained and rinsed
1 can (14-1/2 ounces) fire roasted crushed tomatoes*
1 tablespoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
3 green onions, white and some green, chopped
Mix all ingredients together in your crockpot and cook on low for 10 hours
