Good for you Kim! And by replying in a confident firm tone, you let her know that you do know what you're talking about and you should be listened to. Also, it might just have conveyed that you were trying to teach her something, even though she already knew it all.
Educating is the best way to get through to these people. They may not indicate what you said made any impact while you're still there, but I bet they stop and think about it afterwards and realize they may have been wrong.
Also, you let them know that you are in rescue, you do know what you're talking about, and I bet before long they come to you asking you questions about cats, etc.
