Hee hee - I use Neufchatel - the lower fat version of cream cheese, so I guess it's already a little softer. This summer, I brought graham crackers, neufchatel, blueberries and raspberries to an event, so I'd make people little fruit cheesecakes! T'was lots of fun, and it was hot out so the cheese was softer in the sun, and it was an instant hit!
My beloved Grandma and I would have graham crackers with cream cheese and strawberry jam as a treat sometimes, so I cannot take any credit for the idea. Love you, Grandma!![]()
