The goal of feeding raw is to feed big pieces so the dog can use their teeth and paws if needed. If I feed a large pork shoulder and allow her to eat her fill or if I think she ate too much the day before - she gets fasted. Or if she threw up - that's just what should happen for any dog that gets sick regardless of what its fed.
It is stated that the bacteria and acids in a dog's gut will pretty much take care of any other bacteria. Not to say that it doesn't happen but its rare. And with proper hygeine the person handling meat shouldn't have a problem either.
