There's two avenues of thought here...
1) They use the scent to determine the health and abilities of another animal to be a good provider. ie: he's eaten good stuff, therefore he must be ok. Possibly your animal may not be wanting you to know that.
2) Regardless of their "opinion" of the donor, fecal material is not condoned for contact (by more mature animals), he may be trying to protect you, keeping you away from touching it.
Both are issues of trust, and there are numerous ways to create/maintain that. I can't help but think that may be just one of several indicators, you may be overlooking.
