Rats can eat a lot of stuff, veg, fruit, meat and dairy products. Tia loves meat, and she also likes cheese, egg and plain yoghurt. I don't give her too much of this stuff as it is quite rich and fattening, she'll usually have one of the above about once every 1-2 weeks. Rats seem to love banana too. I read somewhere that they shouldn't eat tomato leaves as they can be poisonous. Basically, don't give a rat anything you wouldn't eat yourself

Tia just has normal wood shavings, but some rats have allergies to it and you can keep them on wood based cat litter. Sawdust isn't recommended as rats are prone to respiritory problems, and never use cedar wood shavings. You can put hay or fluff in a place where they sleep to keep them warm and cosy, but straw is too stiff and can scratch them. Tia doesn't like having any bedding where she sleeps, I attatched a small plastic plant pot to the bars of her cage and she loves to sleep in there!

I don't know about giving them juice, I've never given Tia juice before, but I expect you can give it too them.
