    My veggie soup is just a throw in what you have, type of recipe.
    I just use a can or two of chicken broth, a bag of frozen mixed veggies (or several cans of mixed veggies - not drained), a can or two of tomato sauce, any other veggies like potatoes and onions that you want to toss in. Add water to cover the veggies and cook until veggies are tender. I toss in 3 or 4 slices of cheese and let it melt before serving.

    Today's soup has baby carrots, a bag of frozen mixed veggies, one can chicken broth, a can of potatoes - not drained, and a can of tomato sauce and a can of water. Then 3 slices of American cheese tossed in after that cooked. It's really easy and you can make it as thick or soupy as you want!

    It's a great way to use any left over veggies or ones who are aging fast!

    No matter what anyone does, someone some where will be offended some how!!!!

    I do a similar thing but simply call it "refrigerator soup". It's usually made the day before a big grocery store trip in order to make room for new food Add a touch of this and a splash of that and don't even TRY to write down a recipe

    I do similar to MOFF except I make a white sauce and add it to thicken the soup and make it creamy. I do have a recipe at home...somewhere....I think....I'll look tonight when I get home and post it if/when I find it. My mom - who gave me the recipe - uses fresh veggies like cauliflower & broccoli but I just use the frozen. So much simpler and just as good.

    Couldn't find any soup for lunch so I had a salad. Blech - salads are no good on cold damp days.

    I think I'll take a nice steamy cup of hot tea to warm my innards after that.

    I love this soup.

    It's fast and easy.....You just have to chop some veggies.

    1 bag of split peas.
    Three stalks of celery
    Two potatoes.
    Three carrots
    1 large onion.
    1 cup Ham or 1/2 cup chopped bacon

    Prepare the peas
    Overnight soaking or place the peas in water, heat to boil and turn the pot off.

    Chop all the veggies. Add to the peas.

    Add the ham or bacon and cook for about 1.5 hours.

    Grab some bread and eat.

    You can puree or strain the soup before you eat.

    Richard, that sounds similar to my Navy bean soup but I use chunks of sausage instead of ham. I make split pea soup too, great way to use up leftover ham and I always have some dried beans or peas in the cupboard. Wow, now I'm ready to go home and start some soup for dinner with some sourdough bread!! Enough of the food already, let's have another round... Is everybody having a rainy, dank day? I heard it's even raining in parts of California.

    Its so funny I was just making split pea soup to have with the wonderful sourdough bread that Richard sent me. Need a good warm up as it only reached 34 degrees to day. we had a great 22 last night. Guess it is winter now here.
