    Thursday 160- Let's burn meat!

    Hi gang,

I haven't had a good Thursday for a long time....

So I thought we could open up the patio, dust off the furniture, fire up the grill and burn some meat?

I BBQed for mom's day and had a great time...

    Beer, slushies and a DONE?

    ------------------------

We also have a B-day cake to cut!!!!!

    Happy Birthday to LH......

He's out someplace with some turtles?

Beer, slushies and a DONE sounds good to me, bring it on!

Anybody remember Tom Hanks in "Bachelor Party"? "...charred animal flesh..." as he takes a blow torch to a pan with ground beef in it.

I take a Lemon Drop (make it a double) and a hunk of meat burnt beyond recognition. How's everybody doing??? Sorry I haven't stopped in Thursday's lately. Between working 2 jobs AND being sick as a dog, I've been sleeping and doing cold drugs in what little spare time I have.

    A BBQ!! Now were talking
How about some lamb on the BBQ washed down with a cheeky shiraz.

    Aussie Lamb Chops

    Ingredients:
2 tbl currant jam or jelly
    2 tbl ketchup
    2 tbl soy sauce
2 tbl brown sugar or honey
    1 tbl dry mustard
    2 tsp Worcestershire sauce
    12 x lamb loin chops - (abt 3 lbs) cut 1" thick,
    and trimmed
6 slc pineapple, abt 1/2" thick

    Method:
In a small bowl combine currant jam, ketchup, soy sauce, brown sugar, mustard, and Worcestershire sauce. Place lamb chops in large resealable plastic bag. Pour marinade over lamb chops. Close bag and marinate in refrigerator for 15 minutes.

Remove lamb from marinade; discard marinade. Place lamb and pineapple slices in center of cooking grate. Grill pineapple for 5 to 7 minutes or until grill marks appear, turning once halfway through grilling time. Grill lamb chops 7 to 9 minutes for rare (140 degrees), 10 to 13 minutes for medium (160 degrees), or 14 to 17 minutes for medium-well (170 degrees), turning once halfway through grilling time. Serve lamb chops with grilled pineapple rings.

Wine Recommendation: Want to blow your taste buds away? Try a Shiraz bursting with black cherry and ripe tannins. 'Nough said.

OK Oggy, that's not fair when I'm sitting here without breakfast and starving.

A suggestion for next week folks. Why down we get "down and under" and go on a field trip to Oggy's place?

It's been hot here all week long.....upper 70's if you must know. Even poor Max isn't moving around much...just lays under the ceiling fan. I guess Mr. Weatherman is giving us a taste of what's to come for the summertime.

Gonna be a busy day for me today folks but I'll try to check in later. For now, one big tall glass of ice water will do.

Just taking a bit of break here too before I get right back at it. Looking forward to our 3 day weekend... Yup, our dear late Queen Victoria (no Mario, not me...) is having a birthday and we all get Monday off. I could so use the rest.

Logan, please forgive me for not acknowledging you in my last post earlier this morning. I did respond to your other thread. Please know that my heart breaks for you and I do understand the pain of losing a furbaby. Big {{{hugs}}} to you.

I'm with Debbie. Some nice charred bits would be nice. I just thought...."bits" is in the furminology dictionary and refers to...well...you know. Please, leave out the bits and give me a nice prime rib steak....rare please. Just wave it over the BBQ and I call it done. I mean DONE!

    Thanks Trev!!

    Richard,
Those miners, yep, sure am glad they managed to be brought up out of the mine alive, however, I am getting a little tired of their "show me the money" attitude ......

    Cheers

    No worries, How about this,

BBQ PRAWNS WITH ASPARAGUS AND PEPPERCORN SAUCE
The delicate flavour of asparagus and the bite of peppercorns make this a great sauce to have with BBQ prawns. If possible, use pink peppercorns - their colour blends well with the sauce so that the bite of the peppercorns comes as a surprise.
    Ingredients
    · 1kg green prawns, peeled and deveined
    · 1 tin asparagus spears, drained
    · Peppercorn Sauce
    · 1 tablespoon Bertolli olive oil
    · 2 shallots, finely chopped
    · 1 teaspoon tomato paste
    · generous squeeze lemon juice
    · 1 tablespoon pink peppercorns
    · 1/2 cup cream
    Preparation
    • To make the sauce, heat the oil in a heavy-based saucepan and add the shallots. Cook for a couple of minutes before adding the tomato paste, lemon juice and peppercorns. Stir well over a low heat until the mixture is well combined and slightly warm.
    • Add the cream and heat gently, stirring continuously for a couple of minutes. Keep the temperature of the sauce low when adding the cream to avoid the sauce splitting. Keep the sauce warm while BBQ-ing the prawns.
    • BBQ the prawns until they are just pink. Place a few asparagus spears on individual serving plates and top with a generous amount of prawns.
    • Drizzle the prawns and asparagus with the pink peppercorn sauce and serve.
