    I admin a page of recipes on FB. I have also sent quite a few to Carmen for cold dishes. HERE is the link to the salad & salad dressing topic on FB. You don't need to join the page if you don't want to view. It is called recipe exchange. I will also go through my messages to see if I still have the recipes I sent Carmen (beeniesmom).

    Italian Rice Salad

    500 g of rice (Prepared as package directs; parboiled works great for rice salad)
    100 g of fresh mozzarella (cubed)
    100 g of german hot dogs (sliced)
    1 small can peas
    1 small can of corn
    1 large carrot (cooked & cubed)
    pearl onions
    1 small can of sliced mushroom
    caper berries
    black & green olives (sliced)
    1 small red pepper (chopped in small pieces)
    1 can of tuna (in water)
    olive oil

    Prepare the rice as per package directions. Rinse in cold water and refrigerate to cool. In the meantime cook carrots and cut into cubes (cool), drain and cut mozzarella into cubes. slice hot dogs, chop red pepper, drain the peas, corn, mushrooms, caper berries, tuna, pearl onions. combine all the veggies, hot dogs, tuna & mozzarella. When rice as cooled some. Add all the ingredients and mix well. Add olive oil to coat rice so it doesn't stick. return to refrigerator and allow to cool fully.


    I also have a pasta salad with shrimp & broccoli if you are interested.

    My mom's yummy fruit salad:

    1 can mandarin oranges
    2 apples
    1 can pineapple
    3/4 cup coconut
    1/2 cup walnuts
    1 bag of marshmallows
    1 med sour cream

    Thanks everyone they all look yummy.

    Yes I was thinking of a pasta salad with shrimp kittycat so if you could pass that on I would appreciate it.

    The guest list is growing...hehe
    don't breed or buy while shelter dogs die....

    Pasta salad with broccoli & shrimp


    250 g di short pasta (type fusilli)
    200 g shrimp
    400 g broccoli flowerettes
    1 clove garlic
    1 tsp sesame seeds
    50 g of butter
    salt e pepper

    1. Divide the broccoli flowers into smaller flowerettes and wash extremely well sunder cold running water. Clean the shrimp well if not already shelled and de-veined. Wash, dry & cut into 2-3 pieces each. Peel and crush the garlic clove. Toast the sesame seeds 1-2 minutes in a small non stick pan over very low heat, mix continually.

    2. Bring water to a boil. In the meantime lightly brown the crushed fresh garlic in the butter. Add the shrimp and cook for no more than 2 minutes. Turn off the head and add the salt and a generous amount of fresh ground pepper.

    3. Add salt to boiling water. Add the broccoli flowers to the boiling water. Return water to a boil and then add the pasta. Cook the broccoli & the pasta for about 5 minutes. Just before you drain the pasta and broccoli put 4 -5 tbsp of the pasta water to one side. Then drain the pasta. Turn on the pan again with the shrimp. Add the pasta & broccoli to the shrimp in the pan. Add gradually the pasta water that was set aside and mix through the pasta, broccoli & shrimp.Cook until it mixture is slightly creamy. Place the cooked pasta into a serving dish and sprinkle with toasted sesame seeds. Place in fridge to cool for no less than 1 hour.
