It's being a good detective. Process of elimination as to "why" this is all happening.
Try to get his regular litter tomorrow see if his behavior gets back to normal.
You are finding out unfortunately the hard way felines don't like abrupt changes.
Sounds like this is more behavior issue (dislike for new litter) than health issue (UTI problem) but if things don't improve it's worth a call/trip to the vet just to make sure it's not health issue.
