Normally a mix of Cortlands and Empires, but we got to the orchard late this year, and the crop was lousy, so just empires, which means we have to add more sugar than we normally would.
Funny thing is that the applesauce we make and can at home has no preservatives in it ( potassium benzoate being frowned on for home use,), yet it lasts longer in the fridge than the commercial stuff that's loaded with preservatives.
Nope, it isn't the same color as Motts', but it tastes better.
