Bourbon Chicken
4 boneless chicken thighs, cut into 1 inch pieces
1 tsp ground ginger
1/2 cup soy sauce
2 tablespoons minced onion
1/2 cup brown sugar
1/4 cup bourbon
1/2 tsp garlic powder
Mix all ingredients together in a big ziploc bag or covered bowl and marinate overnight. (Adds flavor but not neccessary to let it sit that long)
Pour into baking pan and cover with foil. Bake at 350 for 45 minutes. Remove foil and bake another 15 minutes.
We serve it over rice.
