Here's a Weight Watchers crock-pot recipe I love (although I've forgotten the point count... )

~ 1 1/2 punds of chicken. I prefer boneless, skinless thighs, but as you prefer ...

Slice one onion into thin slices.

1/2 cup of catsup

12 oz. of diet coke/pepsi

Dried onions

Parsley flakes to taste

Sliced mushrooms, to taste

~~~~
Okay. Put the chicken in the crock pot. Add sliced mushrooms and onions. Sprinkle with parley flakes and dried onions*. Pour the catsup over the items. Pour soda over all. Cover and cook for 8 hours. At the end, the soda and catsup should (famous last words) have cooked into a tomato based barbeque like sauce. I usually have to either cook the sauce a bit more by itself on the stove with a pinch of corn starch or flour to thicken it, or say the heck with it and eat it sloppy (my usual mode). It's _very_ yummy.
* I add the dried onions to help thicken the sauce a bit more, it's usually too runny when I make it. But I like it anyway.
