Chevron is goat meat, and the farm is down by savannah on an island her family still owns, and she sells to a wholesaler, not sure if she does private sales. I have known her for years so she saves the offals from the butchering for me. I can ask if she sells to private buyers, and also a list of stores that carry it, I do know it rather expensive, compared to beef or lamb.
Also, you may want to contact beefalo breeders, and slaughter houses, they often will sell the offal also.
