I had homemade vegetable soup for dinner tonight, and a bowl of strawberries for dessert!

My dad made a HUGE pot of vegetable soup that I could eat, and another HUGE pot of vegetable soup that my mom would eat. She likes beef in hers, and I want mine vegetarian-style. So basically, we eat that until it's gone. Since I was the only one eating my pot, I'm *ALMOST* done... should only have one more meal left with it. But that's what I had for lunch today, and that's what I had for dinner and lunch/snack yesterday. Though, my lunches have been at a wacky time, along with my dinners, because of work. Stupid schedules.

FYI - vegetarian burgers/dogs/etc are made out of vegetables, beans, and soy... sometimes all of the above, and sometimes only one of the above. It depends on the brand you get, and the "style" you get.

Reminds me of a funny store. A few years ago we went camping and on one of the trails to the bathrooms there was a wild kitty crying for food. We threw it 2 hot dogs and that tiny kitty devoured both of them in seconds and looked at us and cried more. I told my daughter to go back to the campsite and get some more, she came back with 2 more from my sister in laws ice chest...the starving kitty wouldn't touch them. Later my sister in law told me they were soy hot dogs
don't breed or buy while shelter dogs die....

Aww, poor kitty. Soy is nothing compared to meat, but ah well, it's healthier and for the animals.

I felt bad for the kitty also, could not find it the day we were leaving and had nowhere to keep it to transport home anyway. I talked to the rangers and they said they had a colony of feral kitties at the campground and they did get fed pretty well by the campers but it was still pretty sad.

Lucky me! John and I got a last minute invite to our new neighbor's daughter's 1st birthday party! So much food..fried chicken, pasta salads, pizza, hot dogs, cake 5 different ice cream flavors, lots of refreshing beverages. Since I stopped smoking I did gain 4 pounds. I don't cook a lot in the summer anyway but now being one handed and not liking others in my kitchen, we've been eating out a lot. Bills going toward my law suit since my life has been altered.

[QUOTE=slick]Tomorrow night it's a baked chicken breast (I first coat it in a combo of mayo and dijon mustard, then coat in corn flake crumbs)....
okay i'm gonna try this later this week. on sundays i'll write out the menu for the week, go to the store and prep as much as i can for the week. it really makes it easier for me during the work week since i'm so often tired when i get home, and i'd rather play with the dogs and garden after work then be a creative healthy chef

I'm fixing to have a tomato sandwich ... soooo good! I'm going to a Rascal Flatts concert in a few hours () so I will probably grab something else on the way, or afterwards.
