Fur, I think. Don Juan has longish guard hairs over a luxuriant undercoat. Zerlina's is short and feels just like silk satin.

Or, maybe the eyes. Or the markings. Or the tails (especially Zerlina's Black Whip). Or the personalities. Or the velvety little paws....
