No, the key doesn't have to be in. I will bring Maggy with me to run errands, but I have a remote starter.

What I do, is I turn the AC on, turn off the car. Then as soon as I close the door, I use the remote starter to leave the car running. The doors are locked, AC going. I have 15 minutes to get in, do what I have to do before the car automatically shuts off. No one can take off with my car because if you touch the brake pedal without the key in the ignition, the engine cuts off. That point is moot however as I'm more worried about someone stealing Maggy than my car. The car can be replaced. That being said, I will only run errands, not full out shopping.
