Not true. I have groomed for 21 years, and we shave MANY long coated (as well as short coated) dogs down. It is owner preference. And the owners that have it done like the look, the ease of care and the dogs are happy. And the coat should grow back as it had been originally as long as the dog does not have an underlying cause that does not allow for proper regrowth.

You just need to decide what YOU want.
