Troy brought home a whole beef loin. After he cut it up, he set aside three beef tenderloins (about an inch thick, just a little over 1 lb.) and packaged the rest.
I set the oven to broil. Took the tenderloins and rubbed all sides with a total of 2-3 tsps of olive oil (collectively, that is). Each side was then rubbed with onion powder, salt, and pepper. I wrapped a slice of bacon around each tenderloin, secured it, and set it in a disposable lasagna pan. I cooked it for 6 minutes on one side, flipped them over, and cooked them for six more minutes. I cooked some frozen green beans to go with that. There was also milk and honey bread with butter.
It was pretty simple and very good!
Tomorrow I will take a small beef roast (cut from the loin) and put it in some barbecue sauce (probably honey or spicy honey). It will cook/simmer on low nice and slowly. It'll be put into whole grains buns on top of Cabot extra sharp cheddar cheese.Probably frozen sweet peas to go with it.
