    I have today off, a shaggy cat in my lap, Rush on Rhapsody, and am on Pet Talk. It doesn't get much better than this.

    MOFF, I'm glad your brother is going to help you out!

    Have you all ever had French toast made with Bailey's? You mix the Bailey's with the eggs. I'll whip some up if anyone's interested.

    My plans for New Years Eve rarely change, see if I stay awake to see The Ball go down in Times Square I will probably have mimosa's on New Years day, with some buffet dishes including, of course, black eyed peas for good luck. One thing I'm planning for the table this year (shall I use you guys as guinea pigs?) is... ta dahhh

    6 tablespoons unsalted European-style butter, room temperature
    1 tablespoon chopped fresh dill
    1/2 French-bread baguette
    Dijon mustard
    1 cup watercress, thick stems trimmed
    6 ounces smoked salmon
    Coarsely ground black pepper

    Cut baguette horizontally in half. Spread Dijon mustard on cut sides of bread. Spread dill butter over. Top with watercress, then smoked salmon. Sprinkle with pepper. Cut each sandwich crosswise into 6 equal pieces, making 12 total.

    I never plan on having people over but there are a few that just know to drop by. I like that

    We should send a big stack of that fench toast to our dear Slick . It sure couldn't hurt. Any one heard any more from her and how she's doing? I hope Max is up to his nursing duties.

    I may get to go look at the inside of one of the houses I'm eyeing this afternoon. The realator has an out of town doctor's appointment and if she can get back in time, I'll get to see one. If not, it will be Tuesday because of the holiday! At least things are goining forward.

    I'm still hiding from my landlady. She can just write me. I don't need no screaming phone calls!

    Can I have a gallon of cherry 7 up and 4 cnt's ?

    Plus a recipe for onion rings!

    One cup of flour
    one cup of beer (the brand of your choice since there will be some left to cool the cook during the cooking!)
    3-4 cups of shortening for frying purposes
    Two - three tablespoons of sugar
    two teaspoons of salt or seasoning salt to taste.

    Some folks add one-fourth teaspoon of paprika to the batter to insure a golden color.
    Combine flour and beer in a large bowl, blending thoroughly. Cover and allow batter to sit at room temperature at least 3 hours (optional). Afterwards gently stir in the sugar and salt.
    Cut onions into one-fourth inch or larger (depending upon preference) slices. Separate slices into rings. Heat shortening to 375 degrees F. (You can determine this temperature by dropping a sample ring into the hot grease -- it should begin to immediately sizzle and quickly rise to the top.) Dry onion rings thoroughly and roll in flour before dipping into batter. Fry until delicate golden brown. For crispier onion rings add more beer to the batter; for a thicker crust add more flour to the batter.
