Yum, I LOVE Zucchini bread! I usually just make it in the oven but I do have a recipe for a bread machine too.

    It's a whole wheat bread though . . .

    Whole Wheat Zucchini Herb Bread
    INGREDIENTS:
    1/2 cup water
    2 teaspoons honey
    1 tablespoon vegetable oil
    3/4 cup grated zucchini
    3/4 cup whole wheat flour
    2 cups bread flour
    1 tablespoon chopped fresh basil
    2 teaspoons sesame seeds
    1 teaspoon salt
1 1/2 teaspoons active dry yeast

    DIRECTIONS:
Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Set for Basic Bread cycle, or Normal setting.

    Here's mine

    3 eggs
    1 cup oil
    2 1/2 cups sugar
    2 cups grated zucchini
    2 1/2 teaspoons vanilla extract
    3 cups flour
    1 teaspoon salt
    1 teaspoon soda
    1/2 teaspoon baking powder
    3 teaspoons cinnamon
    1/2 cup chopped nuts

Beat eggs in a large bowl. Add oil, sugar, zucchini and vanilla. Combine dry ingredients. Add to egg mixture, blend well. Stir in nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for 1 hour. Yield 2 loaves.

I haven't made this in a long time. Knowing me, I would be inclined to add more than a half cup of chopped nuts. I've also like zucchini bread with pineapple in it, but apparently this isn't the recipe that has it.
