    Christmas Feast Foods?

    What kinds of foods do you eat/serve/cook for the holidays?


    Desxriptisns?
    Do you cook them?
    Ingredients?

    We eat menudo-tripe soup, not the boy band
    It's made of cow stomach lining, hominy and chili powder!

    Tamales.

    two kinds......sweet or meat....
    It's meat wrapped in corn meal, wrapped in a corn husk and steamed.

    The fillings are made cooked chicken, beef or pork, in a chile sauce with olives

    The sweet tamales are made with nuts or fruit.

    Each country has a different spin on the recipe/preparation....some countries
    use banana leaves to wrap the tamale instead of a corn husk.


    Atole.(ah Toe lee)
    Is a sweet drink made of corn starch, In coconut, strawberry, chocolate and walnut flavors.

    Pan dulce-sweet breads...sweet bread is made all year long but, with a hot cup of atole, on a cold night cannot be beat...

    I have made menudo before....tamales once and atole all the time...sweet bread is way too technical and beautiful for me to try...

    Richard, email me that tripe soup recipe. Sounds wonderful. I love tripe.

    I'm usually over at my sil's place and she whips up the full turkey dinner like nobody's business. This year it's different. She's making a ham. Don't ask me how she does it but I know it will be delicious.

    Turkey, corn, mashed potatoes, stuffin', lima beans, ( Thank godness I didn't have to have any) egg nog, My parents had white wine. I think that's it.

    We're too traditional here Richard~

    But, this year, I'm making another great Feast

    Ham
    BBQ Pork Ribs(every one gets a little wipey thing for their paws )
    Mashed potatoes and Gravy
    string beans
    Sweet potato cassarole, with cinnamon and nutmeg~ marshmallows baked over all~
    Dinner rolls
    relish plate
    Fruits and breads, 2 pies, (I have to have a Pumpkin Pie~ )
    and my Sister says she is bringing a grand dessert dish too!!!

    Not your traditional dinner that is for sure but I have no idea what. We are on our way to my husband's aunt's now and I will let you all know what we had when we return.

    I can tell you dessert as I made it.


    dessert: Pandoro with orange glaze and mixed winter fruits.

    On Christmas Eve we had...

    Candied Yams
    Mashed Potatoes
    Broccoli w/ Cheese Sauce
    Stuffing
    Turkey

    And for dessert, a caramel cheesecake.

    For starters we had
    crostini with smoked salmon

    then seconds consisted of
    jumbo shimp on a bed of baby spinach with cantalope chunks
    jumbo scallops on the half shell with oil, garlic, parsley & bread crumbs
    crawfish in a spicey red sauce

    and main course was
    broiled tuna steak with fresh veggies

    and finally for dessert
    caramel mousse covered with chocolate shaving
    pandoro with an orange glaze and mixed fruit

    we also had white wine: Terra Crua & Chardonnay
