    Sustaining Summer Salady Thing

    Okay, I don't think I have posted this one before, but it is a favorite of mine when it is too hot out - summer being my least favorite season. Do not be put off by the inclusion of quinoa - it is just as easy to make as rice or pasta, and is high in protein, so nice and filling!

    Start in a large mixing bowl ....

    Chop in largish pieces-
    3 tomatoes
    1 large onion, or a couple shallots or some combination thereof
    add to that
    a couple pieces of prosciutto (or ham), diced
    about 1/2 cup of fresh mozzarella in 1/2 inch cubes
    a handful of fresh bail, chopped

    2 dashes of soy sauce, 3 of balsamic vinegar, stir and let sit in the fridge.

    Cook 1 cup of quinoa in 2 cups water, then let cool a bit.

    Stir that into the other mixture, if necessary, add a bit more vinegar and soy sauce to taste, then refrigerate.

    It makes a full bowl, and is tasty, and filling, and basically all you need for a summer meal!

    If you are lactose intolerant, you can substitute tofu, diced small, for the cheese ....

    And if you serve it in lettuce cups, it looks fancy enough for company!
