Thanks for all the ideas. I ended up making a stir fry with an onion (like Richard said to add), peppers and mushrooms. It came out yummy. I served it on white rice. :)

I usually cook Italian or American. I have never cooked anything Mexican. I really didn't know you could get Tortillas at the grocery store. :(

if you don't eat them and you don't cook them and you came from a different country you wouldn't know what they were.
But you learn something everyday right?! ;):)
They are pretty inexpensive - usually found in the Mexican Aisle of the store. You should try them. The are EXCELLANT with some chocolate chips and Peanut Butter melted inside them or marshmellows and chocolate.
The possibilites are endless - anything you make a sandwich with you can put in a tortilla. They are great for low carb meals.

One thing about tortillas,
There are corn tortillas, yellow and white. When you warm them up you have to make sure you eat them quickly or they get hard.
There are flour tortilla, green, red and white......
They make them with different kinds of flour.
One thing you can do to keep them warm and soft it to put a kitchen cloth (what do you call them?), put the warmed tortillas into the middle and fold the the ends over cover them up.

I didn't see your recipe until it was too late....
I just added the beans and rice...:confused:
No worries.
One of my favorite things to do is make pizza out of tortilla shells.
I smush up some ripe tomato, spread it on the tortilla, top with cheese and other favorite pizza toppings, fresh basil - then put it in the oven until the tortilla is crisp and cheese is melted.
It's delicious! :)

And btw they are HAND TOWELS is that what you mean? OR dish rag- dish towel or I like to think of Slick and Gini using them as firemen catchers! ;)
