A circular arrangement of wedges of fresh mozarella and a tomato that had been cut into eighths, set on fresh basil, with alternating pieces of prosciutto (sliced paper-thin at the deli, and I remove all the fatty bits so just the pink part is left) and slivers of purple onion, with just a little fat-free vinaigrette.
I like making my lunch look pretty when I can! ;) And that lunch just tastes like summer.
