Right before Isis goes to sleep she reaches over and chews on the diamond of my engagement ring. I thought it was a one time thing at first so I ignored it but it is every night. I'm afraid she's gonna pull it out of the setting cuz she pulls HARD like she's trying to pull the ring off.
Which brings up another point: I thinks my cat is half ferret! She picks up anything shiny and hides it! (change, figernail clippers, and if ya leave them laying around rings : my aunt found that out the hard way.) Fluffy never did this but is this a normal cat thing or is Isis just a lil pack rat?

Yup! She's half ferret all right!
Some cats just are like that! Either learn all her hdey places for her stashes, or hide the shiny things! To be on the extra-extra safe side, I'd ask a jeweler to check the setting ofr your diamond, and make sure it's extra secure. If said jeweler is a freindly type, you can explain that your cat chews on it, and you'd rather not have the check the litter box THAT carefully!

Pumpkin will do the same thing to my engagement ring if I have my hand too close to her mouth. I always thought it was strange so I try to keep my hand away from her mouth.

George just chews my hair. I now have the start of a fringe, thanks to him. But maybe that's because I don't wear rings... he he
