Wow,

I know we have some talented garden people out there!

How about we do a little 'farming' and "produce" a Thursday to share our wares?

I was looking for Basil recipes and came across this...

Basil Pesto Chicken.

200g dried fettuccine
2 tablespoons olive oil
2 single chicken breast fillets, thinly sliced
2 tablespoons basil pesto
1 cup cream
shaved parmesan, to serve
basil leaves, to serve

Method
Cook fettuccine according to the packet directions.

Meanwhile, heat oil in a large, non-stick frying pan over medium-high heat. Add chicken and cook, stirring often, for 5 minutes or until brown.

Add pesto, cream, salt and pepper to frying pan. Reduce heat to medium-low. Cook for 5 minutes, or until sauce has thickened slightly.

Drain pasta. Add to pesto mixture. Toss over low heat until well combined. Transfer to serving bowls. Top with parmesan and basil. Serve warm.

I feel like wine this week????:D

I made a soup for lunch today that turned out yummy.

2 white potatoes Peeled and chopped
2 carrots sliced
half a small bag of frozen broccoli
onion
salt
a dash of Italian seasoning and a dash of celery flakes
water to cover

Let it all cook until the veggies are done and the water is cooked down a bit. Add a bit of oleo (I use Smart Balance)

I'm still smiling over how good it turned out.

I do need a cherry limeade to go with it though. :love:

Our squash (yellow & green), zuccini, broc and cauliflower have all been winners so far as are (as always) green beans. If I could have a white wine spritzer with lime to lift me up I maaaaay be persuaded to start some tempura with dipping sauce. CAPITAL YUM!!! :D

:) Mmmm Pesto Chicken & Connie's soup sounds so good.. I bought some Fresh Parker Co Peaches yesterday & will make up some Peach Smoothies.. Anyone for some Peach Smoothies?? Orc lets get the mixer going & the meals served..

Been a LONG day (in a seminar 8-4:30, stopped home, went to the dentist, finally had dinner, sort of, an hour later, ordered the new kitchen floor-took 4 days to get hold of our tile guy-just really settling down). The Pesto Chicken sounds wonderful! We have fresh Basil from the garden to contribute, some nice Shiraz with that sounds good!:) Thanks Barkeep!

My garden is currently a densely overgrown mini-jungle but I do, at some point, intend to do something about it. . .it's just so HOT

:) Boy Howdy that was great = Connie's soup & Richards Pesto Chicken.. Ok Orc has the Mixer going & he will be passing around the Fresh Peach Smoothies.. Now here in TX we needs a swimming pool to cool off in.. They are saying 105% straight for the next week or two.. :cool:

Nothing to contribute from my garden since I don't have one, but I picked up a couple of huge monster melons (cantaloupe) from my favorite farm stand yesterday. Super sweet and super ripe. I diced one up yesterday and the other is in the fridge. I can contribute some cantaloupe smoothies, or just a nice plain slice to enjoy cold. It's really just too darn hot to eat much of anything other than cold fruit or a salad. Feel free to join me.........;)

I'll join you for fruit smoothies! :) We had something really exciting at 5am - and I know it's not so exciting to those people on the LEFT coast - we HAD AN EARTHQUAKE!! In MARYLAND!! It was a whole 3.6 I think, but it was enough that our house shook. Pinot wasn't exactly sold on the idea, I think she was a little freaked.

Cantaloupe and vanilla ice cream are great together.

Mom used to get small cantaloupes and cut them in half, take the seeds out and plop vanilla ice cream in the center. That made their own little bowls. YUMMY!

Of course, I have to use non-dairy frozen dessert instead of ice cream now but still great. :love:

Labatt Blue please. And keep the rest of the sixer cold. It's gonna be a long 24 hours.

New carpet tomorrow and getting ready for it with a nearly 3 year old and 2 hounds is... Challenging.

On the plus side... Moving all our furniture around to get the old carpet up is like a Indiana Jones movie. We are finding all kinds of old/missing stuff.... While dodging the random moth or two. Dogs in/Dogs out makes for many moths in house. But Beezer is a ninja moth catcher. :)

Hi folks:
Well, the end of another long work week. It's hot, but not too hot over here - I think about 75 deg F which is purrfect for me and Merlin.

I have not seen the Little Orange kitten for a while. Maybe he squeezed himself into someone's pocket on the way out the door. Hey LOK, show your furry face will ya? :) No, not you Orc. :rolleyes:

So barkeep, may I please have a couple of ice cold beers to see me through the rush hour traffic??? Accidents all over the place.

I've got a high school reunion to attend tomorrow - just a day thing at a park. Have not had one since 1995. Should be interesting to see if the jocks have lost any weight or grew hair...... :p since then.

MOFF, that soup sounds fabulous. I just might make some when I get home but hey, what is oleo??? :confused:

Bubba Gump Shrimp

Yield: 4 servings.
1 stick butter
1 Tb. oregano
2 Tb. chopped garlic
1 Tb. Crushed cheyene pepper
24 pieces large peeled shrimp
Put all ingredient into large skillet except shrimp. Cook on med heat till butter is melted and hot. Drop in shrimp.
Stir occasionally. Toast 2 slices sour dough or other good bread. Cook till shrimp are pink and just done maybe 5 minutes.

We are now all huddled in the basement as the carpet dudes do their thing. Beezer is beside himself... Protector he is and all. Weird noises upstairs and he can't do anything about it. LOL

Poor guy. But Belle is living it up. She gets to be outside ALL DAY. LOL

Barkeep! Tall ice tea and some of that shrimp. But just for me. Wifey poo is Canadian after all. Anything with flavor is taboo. ;)

That would be great I could use all the help I can get. So far we've picked two shopping bags full of green beans and wax beans.

How many rows of beans did you plant? We have 2, 5 foot rows that are close to being 'done'. So far, we have picked enough for 3 meals that serve 3. Also, we have 3 more rows that are about 3 weeks away from being ready to harvest.

Beans just don't know when to quit. LOL

We just have one 19' row, with a few plants in another row that didn't quite do as expected.

The surprise in our bean rows are a few tomato plants which sprouted all by themselves from last year's drops.

Today the ringing phone in the house was on ignore. We weeded a spot for the dogs to lay in & cool off & then tackled the jungle. We almost got lost between the carrots & beets but found our way out eventually. Those green & yellow beans a person can get them to last till November around here. Maybe the beans like the clay soil.;)

What are you going to do all the beans Steam, Boil, Can, Freeze, Eat, or all of the above? This a mutiple choice quiz. :D

Good morning all! :)

We have fresh canteloupe with cottage cheese (one of my favorite summer breakfasts) with coffee on the bar. Help yourself!

Last night we had Tilapia with a garden saute of several kinds of peppers, green and yellow squash, tomatoes and onion (all picked right before cooking except the onion) and OUR FIRST OF THE SEASON SLICED TOMATOES on the side!! :D:D

We'll have leftovers at the bar later! :)

Just came from an early garden romp. Picked the raspberrys, green & yellow beans, & cuccumbers early on. Heat & humidity are due later today have to get out there while the dew is on everything. I'll help myself to the canteloupe & will be back in later ( have to go do some more weeding) for the left overs from Pinot's supper last night. Things taste really good when they sit in the fridge for a day & you reheat them. YUM! You have tomatos already :) that is :cool:. Ours are still green on the vine thinking about turning red.:D
