I spent one entire day last week making tomatoe sauce, with all the fresh tomatoes from my garden. My freezer is not stocked and we will enjoy "OUR" sauce until about February!

I use the food processor to puree the tomatoes, then put them in the pot to boil down and get thick. I add salt (a MUST as tomatoes have a high acid content), garlic cloves, BASIL, onions, and sometimes green and red pepper. I put it in a Pyrex container to freeze, then remove to a plastic bag. So they are all the same shape and store easily without the added room of the container. Each bag is marked if it has peppers or not, etc.
