View Full Version : Recipe for Beaufort Stew

As requested on the Findlay Meeting thread.

Ingredients:
6 qts water
3/4 c. Old Bay seasoning
2 lbs new red potatoes
2 lbs smoked sausage, cut in pieces
12 ears cleaned corn on the cob, cut up
4 lbs fresh, unpeeled shrimp

Bring water and seasoning to a boil in a large stockpot
Add potatoes and cook for 15 minutes. Add sausage and cook for 5 minutes more. add corn and cook another 5 minutes. Stir in shrimp and cook until shrimp turn pink. Drain and serve with melted butter. Traditionally, drain and pour onto a layer of newpaper covered with paper towels or butcher paper.



Those who were at Findlay Park know that MY recipe was a little different.
Same ingredients but I didn't measure anything and added a bunch of onion powder. But I started the water at 2 PM and it never came to a boil---so I threw the potatoes in at 5, the sausage and corn at 6.30 and the shrimp at 7:15. Dinner was at 7:30. A hot plate just doesn't work!:rolleyes:

Sounds like a cross between a shrimp boil and a jambalaya...YUM!

I was just in Beaufort, South Carolina and ate at a little restaurant that had something very similiar to that. My friend ordered it and was repulsed by the unpeeled shrimp. My sister then had to peel them for her. LOL It was called Frogmore Stew I believe.

I spent the last 4 days kicking myself for leaving the beer out of the recipe. I added one 12 ounce can just before putting the food in.

Yes, Phred. You're supposed to take the peels off before you eat the shrimp. The shells get stuck in your teeth, like popcorn hulls.

Probably could use peeled shrimp if they were big ones. Easier to dip in melted butter too.

Someone put a picture of it on the Meetings board. Very nice picture.

I think b/c she used precooked shrimp they were peeled.
I never peel my pre-cooked shrimp.
