I think they get tired, and more stressed, and it just wears them out. It seems emotionally exhausting, and some handle that better than others.

I'm irked with this week's outcome. Debbie has behaved badly two weeks in a row and the judges have given her a pass both weeks. I thought she was gone for sure when she told BF that the capers were in the dressing. I'm rooting for Jeffrey.

But I saw a program I LOVED yesterday! It was "Dinner Impossible" and they were doing a dinner party for Will Shortz and crossword puzzle enthusiasts (okay, I'll say it because I am one - word geeks). I love Will Shortz' clever puzzles, I listen to the NPR Weekend Edition Sunday puzzle on my way to church each week, and I love to eat! perfect combo!!

CM,
Oh, you have to check out the WHOLE story about "DI".
We talked about it in this thread....It's funny, sad and weird at the same time! The host, Robert Irvine, began the series, he was busted for 'lying' on his resume, then left the show.
They did one season with Micheal Symon as host-the program really stunk-then brought back Irvine this past year!
D&D,
I had never heard of garbanzos in menudo.
The shrimp cakes in the red sauce and cactus are called "tortas de camaron"
-the ant caviar is waaaay optional-and are a staple during the religious observance of Lent.
http://www.recipesource.com/ethnic/americas/mexican/05/rec0561.html
This was the easiest recipe I found-I saw another that was way more complicated -
http://www.astray.com/recipes/?show=Tortas%20de%20camaron%20(shrimp%20fritters)% 20mexico
I had to laugh- when you look for a recipe, go with the simpler version, most
intricate versions are the "gourmet" variations that people think up.
You have to watch out if you do decide to try them, the can be ungodly salty. Some people prefer them that way...
Dried shrimp is very salty and some cooks -if they make the dish often- don't taste the dish, they just cook it up and take the chance!
-----------------
The taco stand segment really sucked.
I sat here drooling all over myself. I haven't had a good taco for a while.
Tacos de cabeza are the best.
From a cow head you get......Tongue, cheeks, eyes, and brain.
I won't do eyes but love the 'buche" and "sesos" tacos.
-------------------------
I once had a bad experience with brain tacos, with the mad cow thing, it made it worse, but brains and cheeks are really good.
The program itself?
I loved the way that they put a spelling of the dishes on screen, I found Corwin to be a little rude and abrasive at times? He said some things that made me wince-you don't go into anyone's home and crack jokes about the food, prep or atmosphere. He ground on me a little when he started to do the
'wacky gringo TV show host' bit.
The women at the markets and cooking were the real thing.
You will see these women at the store in their aprons, shopping. Follow them home to get the best Mex food......especially tortillas!

I was happy as well - how many times did they tell her to use more spice, make her food more flavorful? If she had stayed, I would have lost faith in the whole thing ... she may get a show anyway, time will tell! I have seen commercials for Adam Gertler - who didn't win season - and his "will work for food" show. (He annoyed me, I don't watch it.) And on Bravo, the contestant Tabatha, who didn't win that season's "Shear Genius" got her own show - and a TV show isn't even part of the Shear Genius contest!

I can't hide the fact that I was surprised when Deb was eliminated. I thought she was already chosen to win. Maybe that's what they wanted us to think. I think choosing between Jeffrey and Melissa will be really hard. I expect to see Deb in another FN show.
I remember the contestant that won a couple of years ago and never returned after her first episodes. Amy Findley, I think, was her name. Melissa sorta, in a very small way, reminds me of her. It would be difficult for me to try to do a tv show on FN and have 4 kids at home. I'm guessing that Jeffrey will win.
Richard::::What a Mexican education we got last night on the FN!!! WOW!!!
I was blown away by all the things I saw. I never realized that the Mexican culture included so many "unusual" food items. Are those insect items delicacies, for the most part, or normal cuisine in Mexico? The nest on the wall was unbelievable. I also couldn't believe how many ant bites those guys must have been getting while hunting for the eggs.
I almost barfed with the cow head segment. Actually, I almost barfed in several of the segments. Not so much what they were eating but listening to Corwin describe what he was eating. He kinda surprised me in the fact that he seemed to like everything but the cactus paddles.
I thought Corwin was trying to be a comedian and not really respecting the Mexican people as much as he should have. He had to be the center of attention.
I also thought it was great when they put the words on the screen. I couldn't understand anything they were saying.
It was fascinating to see the Mexican people in their homes, doing what they normally do every day. I can see why they appreciate America so much. They are incredibly poor but proud people.
Do they eat tortillas with every meal? Flour or corn? I saw them put everything in tortillas. Do they make all they'll need for the day and night in the morning? Those women must wake up long before dawn every day to start cooking.
What were the black sooty things on the ears of corn? Have you ever eaten that, Richard? Corwin called it "black pus". OMG!! I almost lost it.
Do the Mexican people grow all their own vegetables and fruits?
I was surprised to see the garbanzo beans in the menudo. I didn't remember ever seeing that either. Of course, I've only seen menudo a few times. It always looks delicious. Why do they choose to use tripe in it?
I was amazed at the alcohol they make. I know tequila is made from the agave. It was awesome to see the older gentleman extracting the liquid from the plant. I wondered if the older matriarchs normally drink a few shots while they're cooking, no matter what time of day it is. Was that a custom or just done for the show? I can hardly see them being pretentious for any reason though.
Richard, have you ever had mescale(spelling?)?
After that show, we had the throwdowns with Spanish fare. Fish tacos and puffy tacos. It was a Mexican night!! I really enjoyed it.:)
I'm sure I have more questions that will come up later.
RICHARD
07-27-2009, 11:22 AM
Richard, have you ever had mescale(spelling?)?
Mezcal?
What do they say about the 60's? If you remember, you weren't there?
If I said I remembered, I only took a sip.;)
Pulque is trippy, it's like non-alcoholic beer, I haven't had any in years, altho I do have two agave plants in the yard! Most of the old men in the culture are some of the best people you will ever see. I think they are pickled-that is why they last so long-You can go into those small towns and see a group of men-60 to 80-sharing a table. The women on the other hand? I think the drink was just manners, none of the women in the family were drinkers.
The sound of glass clinking and smoke billowing tell you that there is a lot of living to be done!
I had an uncle who could roll a ciggie with one hand-had he lived any closer we would have killed him-How many ciggies could he have smoked in a day?:D
--------
No, not all Mexicans don't eat paper wasps off the wall.:D The strange stuff, like chapulins are staples in the really rural, poor areas. It's like delivery or shopping......the food is there, you just have to get off the couch and go shopping.;) Quite a few people have veggie gardens and slaughter their own meat.
Corwin is a food wussy.
Brain tacos are creamy and tasty....But, if you already have an idea that you do not like that food, you will give it a 'blah' review.
----------
CORN SMUT!
No, never had it. It's a fungus, like truffles or mushrooms. I'd give it a whirl-no 'caviar'!
Tortillas...
Every meal.
The cook wakes up early.
Their was the old line in a commercial about joining the Armed Forces-
something like "soldiers do more before breakfast than some people do all day". These women will probably cook 90-95% of the weeks meal's. So they do more cooking in two days than most of us do in a week.
Tortillas are a bit daunting when I try to make them.....An old Mex woman
can look at a pile of masa/dough and the tortillas make themselves....
Almost.:eek::D

Does Mezcal have something to do with mescaline? Excuse my spelling please.
How did you rate the show overall, Richard? I was impressed to go into the inner workings of the families of the region. This is something we rarely get to see. I loved the way some of the people were totally unscathed at Corwin's behavior.
We have a large Mexican population here. These people are simple and determined. It's amazing how they are.
Being a simple culture, I can never believe the elaborate decorations I see in some of the Mexican restaurants here. I saw some of them on tv last night on the show. Our Mexican restaurants never serve anything like the show depicted but I imagine you can get that food somewhere around here.
I'll bet the FN start incorporating the corn smut in future shows like Iron Chef. It's fascinating and exotic. FN always tries to throw the stuff in that we can never find or afford. i.e. truffles The stuff looks like something that would taste exactly like mold.
Are Mexican people pretty healthy? I imagine their immune systems are perfect. Eating some of the things they do, they have to be strong.
I think I mentioned before that I learned, years ago, that the young Mexican girls are required to make tortillas. When my sister had 64% Mexican students, her students always had burns on their hands. They told her how they made tortillas before school to help their mother's.
I also see the Mexican families are all about family. No question about it. All the family members are together most of the time. It was a big thing for all the Mexican men to gather after dinner and especially on the weekends to party through the nights.
Very interesting information.

Without being a spoiler let me just say I'm pleased with the result of this week's NFNS. I'm surprised that it was done, though. I thought Michael looked very different - wonder what happened to him after he left Miami?
I couldn't watch the show that was on afterward about food in Mexico. I tried to stick with it but I was grossed out. If Mexican families in Chicago are typical, all about family is exactly right. The generations are together and I like that about Mexican families here in Chicagoland.

She came in with a 'plan' for her show.
I knew she would win when I saw a clip of AB talking to the guy and asking him to explain his 'cooking w/o borders' type of show/cooking.
They talk about the contestants not being original - when you can use keywords like "butter, mango salsa, yum-o, and cocktail time!" to ID the cooks on the network - I think that they have become way past the point of being predictable.
The life span of most of the cooks on the TVFN depends on how they can reinvent themselves when they get boring.
Lately, it's been inviting family to cook with the host or having them go 'on the road'.
I wouldn't mind the programs where they actually get out and show you where the food comes from, how it's grown or ????
It's the talent - and endless bowls of Yum-o mango salsa that make me gag.

I was wondering last night why they stick the new shows on Sunday at 1:30(EST). Are there that many people actually at home watching FN at that time? It seems senseless. I say, put them on in a decent time slot and give them a chance.
Amy Findlay might have made it if they would have made her more accessible.
I think FN has been most successful with the more educational shows. I really enjoy them. It would be interesting to see more about where they grow the food. That show with Sunny Anderson, "How Did That Get On My Plate?' was something like that but it was short lived. I think it died because they spent too much doggone time on one subject.
The new show, "Best Thing I Ever Ate". What are the chances that any of us will every get to try those dishes? Is that why they're showing us all the delicious things available across the country? Because we'll never get to go there?

Because they think it is in tune with the "economic issues" of the day? I watched the first of her shows, and even went and got the recipe for the potato-bacon torte from the website - it is even "Karen safe" - which is a rarity! And the apple granite was very interesting to see done as well - it's just frozen applesauce, and then you run a fork through it to get the grainy texture - looks simple and yummy! Oh, I am sure that the eco-times have a huge impact on her show. I was hoping for a show that would fall between the "pan roasted finger potatoes with truffles in a white cream sauce with saffron and foie gras".
I dig the recipes until they get to the "ingredient from Heck" that is either too expensive or only exists in the small specialty shops of New Haven, Conneticut.;)
Flay made some a middle eastern meal the other day and bought some bulgar wheat (I think that is what he bought) along with some other stuff like buckwheat honey? It was a ME market that had TONS of stuff in it, but unless you live in a metro city, where will you find the ingredients? The other thing that had me perplexed was the assortment of the wheat.

Richard, once again, you've hit on the head exactly what I was thinking.
I had a discussion with my sister a couple of days ago about the crazy ingredients on the FN. Some of those things are impossible to find. If they are available, they cost a fortune.
Your pan roasted finger potatoes is a perfect example.:)
Cooks vs. City was pretty ridiculous. It was the two guys against two girls. One of the girls is on the network and the other one is Kelsey, one of the NFNS contestants from the past. They had to work as teams against each other and race to a finish line after completing assigned tasks.
Aaron was pretty humbled down in this show. I don't like his arrogance either but there was something different about him in this setting.
Did anybody watch the premier of Dinner Impossible? The one with the roller derby people. It was all dishes with no utensils allowed. They made the food to kinda serve as utensils itself.
The amount of food he wasted on camera, during that show, could have fed a family of 4 for a month. It was hard to watch.:(

Today, I saw Sandra Lee dump a handful of some spice in her hand and it was supposed to be like a teaspoon.:D She discretely dumped the other 40 tablespoons on the counter top.
This is so much fun!!:D :p ;)
That's funny.
For a long time I was 'blinded' from seeing the little things that happen while I was getting the spit off my chin.
The hands, hand washing and other faux pas that take place during the show.
Check this one out.
I also thought of this one while watching SL. They grab cans (RR is another magician when it comes to this trick) off the counters/shelfs and the lids magically open up for them. Dang, if I could get away from opening up cans when I cook, I'd save so much time I could to to Zimbabwe and teach children how to open beer bottles with stones!;)
I have always wanted to be a person that gave back the the world!;)

I finally figured it out.

RR-- 30 Minute Meals = Yea, sure, if somebody is doing everything for you and all you have to do is dump the stuff in a pan.
We've never seen that day she brings hime the groceries and supposedly cleans everything before refrigeration. She doesn't tell us that takes the entire weekend.:D Wouldn't we love to see her doing this?
You can watch the chefs spill something over the side of a bowl and in the next scene, it's gone. There are people all over the set acting like slaves. They're probably getting minimum wage and the chefs are living in $5 million dollar homes.

Food Stylists. baby, Food stylists! If you ever get a chance to watch the 'behind the scenes' programs you can see all the different shots needed to make a show. Each scene is outlined, then blocked-they do a run thru of what will be filmed, where the cook will stand, etc., etc., and what angles they need. That is why you see the drips that disappear after certain shots!:D

LOL, there are two sets of rules! Home and cooking for 'guests'. At home you can do anything you want. Most of the time we just cook for ourselves and we can dip as much, or little as we want.
I just find that when they -FN-pushes these little tips about chicken safety and washing hands, then you catch some of the chefs doing the exact opposite, I stop and say, "Did I just see that!":D

I think I mentioned this before but I'll keep saying it. Ace of Cakes:::I can not believe how many times the cake decorators scratch their heads, shake their heads, scratch their skin, right over the cakes!!! It's unbelievably gross. There isn't much sanitary anything going on in there. None of them wear gloves, hairnets, etc. I wonder if they wash their hands after going to the bathroom?
I've never noticed that! Eek!
I've been watching a lot of "Throwdown" lately -- is it just me or does that show air often throughout the week? Anyway, I want to know if the people being thrown down aren't in some way tipped off that Bobby and company are going to be crashing their party. If he were throwing me down, I might be pretty p*****ed at him for showing up!

I have watch only a couple of them, and it is usually set up that the person thinks they are going to tape a segment for a cooking show on their "specialty" and BF shows up for it to become a "throwdown." That way they are prepared, have ingredients and everything handy, are ready to explain what they are cooking and how, and aren't freaked out by the camera ...
I think they may be on reruns for the summer season, I don't know, I don't watch it regularly, or have my DVR record it.

I saw whahisname - Tyler Florence do this today.....
He was making something that required some cookies made from pine nuts.
He needs to put the cookies into a bag and crush them for the recipe.
He grabs the bag from the shelf/cabinet, opens it up and pulls one cookie out.
He breaks the cookie in half - as a demonstration - he wipes his left hand on his pants and opens a plastic bag and tosses the cookie halves in.
He reaches over to the cookies, then empties THAT bag into plastic bag and begins to smash the cookies. I sat there for about three minutes trying to figure out why he didn't just empty the cookies into the plastic bag then break one open from that pile. TF has a weird way about him-he talks to the audience like we are stupid.
It was a weird segment and I really couldn't figure out all the drama over busting up cookies!

Barbara Walters Says Paula Deen Makes Kids Fat
When cookbook author Paula Deen appeared on "The View" on ABC Tuesday, host Barbara Walters lashed out at her for pushing fattening food for children. Deen, a zaftig, Georgia restaurant owner, was on the program to plug her book, "Paula Deen's Cookbook for the Lunchbox Set."
"This is a cookbook for kids. Obesity is the No. 1 problem for kids today. Everything you have here is enormously fattening," scolded Walters as she sat by the famous chef. "You tell kids to have cheesecake for breakfast. You tell them to have chocolate cake and meatloaf for lunch. And french fries. Doesn't it bother you that you're adding to this?"
All things in moderation, counseled Deen. "No, I'm not saying they should eat like this every day," she said.
Walters snapped that Deen's book is hardly a lesson in moderation. "Not when you're giving them this!"
We have two words for this. Awk. Ward.
And speaking of childhood obesity, our chubby brethren on the other side of the Atlantic are tipping the scales as well.
A Scottish couple reportedly lost custody of their two youngest children this month because authorities considered the kids to be too fat.
A family has been torn apart because the children are overweight. Credit: STV News
The couple, of Dundee, Scotland, has six children ranging in age from 3 to 13. WorldNetDaily reported that Scottish social workers told the parents last year the children needed to slim down or they would be taken into state custody for their own protection. At the time, the youngest girl reportedly weighed 56 pounds. The oldest boy, according to the online news service, now weighs more than 220 pounds.
The couple's 3- and 4-year-old children are now in foster care. Meanwhile, the mother is pregnant with the couple's seventh child.
"This whole case has been dreadful," Kathleen Price, the couple's attorney, told Scotland's television station STV. "Neither of these parents take drink or drugs. They have a big, happy, noisy family, which is prone to being overweight."
Social workers ordered the parents to enroll their children in dance and soccer classes last year while paid monitors watched the family's progress, WorldNet reported.
"They keep making an issue about the kids' weight," the mother told reporters last year. "I didn't even own a deep-fat fryer. All my food is home cooked and my kids are not fed junk food."
In Scotland, child welfare decisions are often made at the city council level. Tam Fry, a member of the National Obesity Forum, told STV that "more councils are now viewing obesity as an abuse issue."
Last January, Fry spoke out in the British newspaper The Sun in support of a decision by the city council in Leeds to deny a couple from adopting a child because the husband was overweight. Overweight parents are poor role models for children, he told the the newspaper.
Have we gone a little nuts in our concern about child obesity? Or are we setting our kids up for cream-filled doom?

Holy Cow!!!! Thanks, Richard.
Awkward to say the least. Baba has no problem coming down on people. I bet Paula almost melted into the floor. After all, Baba is right!! I am sorry I missed that.
Knowing what she knows, how could Paula produce a cookbook that pushes poor nutrition and overeating? Not to mention the fact that she's talking about it on The View. I know she knows what's going on because she always laughs about using the mayo and butter to extreme. I believe she's been criticized so long, she has built up defenses for the backlash. Baba's lecture must have been hard to handle, no matter how savvy southern Paula thinks she is.
Even though her recipes are delicious......C'mon, Paula, get it together. Did no one warn her of what the ladies of The View might do in response to this? I'll be honest, not just The View but everybody.
The family in Scotland:::if the mother thinks she's such a healthy cook, maybe the kids just aren't exercising enough. If someone took away my kids for being overweight, I would pack up the whole family and head to Weight Watchers and then to the gym.:(
That's horrible.:( :( :( This issue is so controversial.

I read somewhere that Paula Deen's favorite recipe was Mantequilla con Cuchara.
Butter with Spoon:eek:.....I gotta behave-I did see a Food Net special on her.
It was a special and all her family was out and about. Somehow one of the sons was on a tour bus and a fan asked his what was PD's favorite food.
The kid didn't skip a beat....."Butter!", he said.
Yikes.......
There is something about pushing a book on kids cooking and having a Surgeon General's warning on the spine?:confused:
As it is, kids do not eat anything you cook for them in the first place.
Do you remember the commercial of a baby in a swing looking out the window that overlooks the McDonald's sign?
The kicker there was the kid would laugh when he saw the sign, then cry when he swung and lost sight of it.
I can see her point for wanting to do a cookbook for kids, but feeding them sticks of "budder" will kill them faster than global warming!

That's a funny story, Slick.
Paula and the butter have gone too far. It makes everything taste great but she sure isn't helping America slim down.
I have to comment on this::::Sandra Lee has the show that tells us how to save money. On the other hand, and another day, she has Semi Homemade which uses the opposite of what she says to use on the money saving show.
Ok, Sandra, is it pre packaged, pre chopped, pre shredded, or, do it yourself and save mega money?? Kind of a conflict of interest isn't it?
I saw that roller derby Mission Impossible. It was one of the better shows.
I think Robert Irvine is acting like he has a serious problem this season. Everything irritates him more than ever. The roller derby show wasn't showing him completely stressed.

Iron Chef......

Something like, "Guess again!"
Now, has anyone noticed that Alton Brown will comment on a food or technique and it turns out that he is wrong?

OMG!!! Scary!! Is the stuff really made in China? Do the people of China make anything that's good?
I forgot that I watched the Paula Deen segment on The View on youtube or something. Baba let her have it but Paula kept on talking.
I figure the empire has to crumble sometime. Paula has gone on longer than I expected she would. That woman has her hands in everything.
What is with Alex Groanacelli? She does have those weird faces all the time. She looks totally depressed and talks about something wonderful. Then she talks about something awful with the same look, basically. I don't get her at all.
All FN needs is another show with her as the star.
Another show with GF? Does he have enough time?
The Next Iron Chef was long and strange. Did you watch the part with the exotic ingredients? Do people actually eat chicken feet, cockscombs, jellyfish, stinky tofu? I was a surprised at how well those chefs adapted to the items they were given.
I predict that Amanda Freitag will win. I think they need another female iron chef and she is a favorite of the network. Alot of the contestants have appeared on Iron Chef before too.
There are three guys in the group that look alike to me. Maybe it was two of the guy and one of the girls??
Alton Brown is like a walking encyclopedia. I have seen him make a few mistakes lately. He does correct himself sometimes. I think he might lose some of his over confidence if the mistakes keep happening.
Has he lost weight or is it me imagining it? I know he's losing his hair pretty badly. Poor guy.:(
Gina Neely is getting on my nerves again. Pat is the greatest guy on earth but what is wrong with her? She is really putting it into overdrive.

What time is The Next Iron Chef on? I thought I recorded the new season, but I must have chosen the wrong one, as it has Michael Symon as a contestant, and he's already an Iron Chef on the show - or is he on this season again?

ODo people actually eat chicken feet, cockscombs, jellyfish, stinky tofu? I was a surprised at how well those chefs adapted to the items they were given.
You must never have been to Dim Sum at an authentic Chinese restaurant, they send around carts, and one always has chicken feet sticking up, and another has duck feet! We always declined those carts. And I have eaten jellyfish - at a banquet in Beijing, China! (It was kind of like bouncy rubber bands, not a lot of taste.)

TNIC is on Sunday nights. 9 p.m.
They re-run the previous season as a teaser, before the premiere of the new season.
D&D, I have had feet and comb,
Karen,
You can win tons of stuff from friends and family by betting people you'll eat duck or chicken foot.
The only problem is where to put to bones!:eek::D

Karen. Michael Symon is not on this year. That is an old show.
Richard, are those things also the part of Mexican culture? Have you seen the show yet? I'll look forward to hearing how many of those exotic ingredients you have tried as a part of Mexican culture. I see you've had two of them. How were they prepared? Mexican style? I can't remember if those items were mentioned on the show about Mexican cuisine with Jeff Corwin.
While the segment was running, I was wondering what Richard knows about these strange food items.:)
I had no idea, Karen, that some Chinese restaurants offer the items. I'm not even sure if there's an authentic Chinese restaurant around these parts.:D

Soup, stew, fried or BBQed.
When you are a kid you eat and do not realize what you are eating....
I've had pretty much all the animal, The last time I ate brains, I almost died. Not, really died, but kinda.
One of the worst meals/dishes was a green chile with pork that I bought from a Mex market.
The green sauce was outta this world but the meat was tongue. Green chile dishes always have pork in them. As it cooks, the meat shreds and melts in your mouth.
The food joint put tongue in the chile and you could tell what kind of meat it was because it held it's shape and was 'tongue-y' in texture.
It was very strange to have to chew the meat.
-------------
A good chicken foot soup is really good, but a little work to get the meat off the 'hoof'.:cool:

I wonder why we have a repulsion for certain parts of the animal? If we can eat the flesh, why not the rest of it?
Well, maybe it's not everybody that has this problem. Even when I see this on tv, most people are making faces and turning up their noses.
Richard, did I ever ask you about certain Spanish cultures eating meat that isn't fresh? This really intrigues me.
I may have mentioned my daughter visiting a Mexican family years ago. She had made friends with one of the girls in the family. She would tell me about the rotted, smelly, meat in the kitchen. The meat was there and going to be prepared for dinner. What do you know about this? Do the jalapenos and chiles kill the bacteria?

Did anyone see the "Dinner Impossible" where Robert Irvine was at the New Jersey bakery? Was it just me, or was he rude to the front of house lady? Although she did come in a couple times and ask him about special orders he didn't know he needed to have ready. And the one at the Hotel Hershey, he should have used the test kitchen consultant more. And an entire meal, chocolate in every course, but no mole? I thought the Irish/Asian wedding project was great fun, though.
New Jersey people, what is pepperoni bread? They don't sell anything like that at Weber's or Kirschbaum's (my two favorite bakeries). It looks yummy! Do you heat it up before you eat it?

I think he and the girl were more flirting than mad at each other. If it is the same episode? They asked the gal to help on the Groundhog Day mission and she was just as funny.

MMMM, that sounds great.
I make a 'cheese bread' last night with some Jiffy Pizza Dough mix. I didn't have the pepperoni, so I just made it w/the recipe on the box and left out the pep!

I made some olive and pepperoni bread and it was good.
Get the pizza dough mix - I can't remember the name of it!-and follow the directions.
I made peanut butter cookie-from a box and three loaves of bread in the last week.
For the first two loaves the yeast was too old.
I took the 'experiments' and make bread crumbs with one, and croutons with the other...;)
The last loaf I made, with newer yeast, and came up with a dense sweet bread.
I followed the Amish bread recipe and it worked very well, I think will take some herbs nicely.
I am going to make another 'test' loaves as it cools down today. I'll post the recipes later on.

Well I dont have cable to tv, but I do work in a restaurant so I do know about clean and unclean things. Here's my little rant about working in a restaurant. First of all, you really shouldn't wear hand jewelry while working there, its rather disgusting. Secondly if you are wiping off a table, dont throw the towel around your sweaty neck and then wipe another table (we had a bus boy do that once, it was SOOOOO gross...luckily he was fired that day). Plus don't order a TON of cucumbers or tomatoes during the off season because they will just go bad before we can use them. Also don't eat food out of the bus tubs that is just plain WRONG (had a cook do that once-he got fired also). And and for people who go out to eat, please please don't ask the waitress if theyre fish look like male genitals. I mean thats a little disturbing. I know you are all discussing recipes, but this thread made me think of my work. Ahh the joys of working in a restaurant.

Is anyone into "Iron Chef America"? If you see (or have seen) the one airing this week with Paul Virant, where the secret ingredient is pheasant -- He's from Chicago and his restaurant, Vie, is 5 minutes' drive from my house! And it's terrific! He is recreating his menu prepared on the show this week for $85. He lost to Morimoto by one point. (For those of you in Chicago, it's in Western Springs, on Lawn and Burlington, next door to the post office, half a block south of True Value Hardware and the BNSF Western Springs station :D) www.vierestaurant.com

That's the episode. The one where Irvine didn't realize the floor wasn't level. Whoops!
When I was little, the Bohemian (Czech) bakeries around here used to wrap hot dogs in their biscuit dough, sprinkle them with poppy seed and bake 'em up. Yummers! I tried doing it with Pillsbury biscuit dough, but it's not the same.
And remember Colombe from the season of NFNS with Amy, Rory and JAG? She's on the FN Web site doing a Web-only cooking show --
And D&D, there is a Fresh Market in Geneva, which is in the further west suburbs of Chicago. I looked at their Web site and I want to go find it! One of my all-time-ever favorite boutiques for Christmas gifts is also in Geneva, so I will do both of those shops in the same car trip! Thank you for the tip!

Oh, I read that Gordon Ramsey is cancelling his "Nightmares" program.
It seems like after he leaves the eateries they still end up failing, causing the owners to try and sue GR because he came in and tried to help!

How is the "Chairman" doing on the dance program?
I caught a clip of him while flipping thru the channels.

The Chairman(Mark) was eliminated tonight. :( :( :( I was really bummed out. He was incredible. A born dancer. He has six pack abs and seems to be in great shape. What I liked the most was the fact that he was so gracious through the whole time he was on the show. I'm going to miss him.:(
Richard:: I love dried basil more than any other herb. Maybe rosemary equally. I use it in everything.
What is making the bread sweet? Is the pizza dough naturally sweet? Could you get some pizza dough from a local pizza restaurant that would be more savory?
Elyse, I hope you love Fresh Market. It is such a cool store. I went to the one in Asheville, NC. It's awesome. I love everything about it. Let us know how you like it.
I saw the episode with pheasant. That chef was such a nice man. I was sure he had won. The judges seemed to love his food and not like Morimoto's so much.
I'm not loving The Next Iron Chef this year. It seems too serious. Last time, we seemed to have some humor. I'm not seeing any sense of humor from anybody this time.
Did anybody watch Chopped tonight? The black man(Malik) was pretty argumentative. I'm surprised we haven't seen that before.
I think it was Alton Brown that said, "Chefs never get a break". Maybe I heard that on Top Chef. Whichever one it was, does anybody want a sick person preparing their food? I vote for letting them sit it out and get well.
I'm having a big problem with these cooking shows where the chefs are dripping with sweat. Some of them excessively sweaty. I can almost see the sweat dripping into the food.

OH my lordie!, Get yourself a basil plant. I have one and have really enjoyed it. I even make salsa and toss a few leaves in.:)
When I made the PD it was from a box-Jiffy makes it and it's not always easy to find. I hoard the boxes and usually have to toss a couple out because it gets insects in it! They pack it in a wax paper envelope inside the box that's folded, not sealed....
I am currently looking for a recipe for PD.....There are the usual pizza chains but I haven't looked into buying just the dough.
The bread recipe asks for the yeast to be proofed with 1/3 of a cup of sugar.
I see on the yeast packets that you can use less-I may try that.
:D
Not digging the IC program either. Question-Does the chairman look sick or is it a bad haircut? He looks gaunt!
Yeah, the sweat thing is a real turnoff, Especially when you look at the staph infection epidemic storis in the recent news.
Chopped, was that the episode where the guy tells AB he's Nostradamus?
I have to see that one.
Daisy and Delilah

I've had several basil plants but they died. I need to get another one. It's fantastic!!
I've seen alot of shows where they tell you to go to the pizza shops and buy the dough. I wasn't aware they would sell it.
The Chariman looks like he's lost alot of weight. They were talking on Monday night, I think, about his rigorous schedule. He's supposedly been flying back and forth all this time and he's exhausted. He was starting to look like a sick young teenager. Last night, he was wearing so much makeup.
The Chopped wasn't that one. It was on last night. He didn't call any names. He just argued with the judges that his cooking was good and he has his opinions and they have theirs. I know the producers did it to shake things up on purpose. Otherwise, they could have cut that part out.
It was pretty entertaining to see this guy stand up for himself. The judges are so rude on that show. Often, I think they need to be brought down a little. On this show, it wasn't really necessary to become so angry like he did. They were offering constructive criticism and he refused to take it. He actually said he was cooking for the people at home and not the judges. WHAT???

If you want a doughy crust, you could probably use that bread dough to make a pizza ... every grocery store around here though sells balls of frozen dough just for that purpose - thaw, roll out and go!
I have to say that the Dominos we have nearby is wonderful - you can order online so you can specify exactly how you want your pizza, and the employees there are unfailingly nice, and do a great job - it's yummy. I go pick it up, instead of having it delivered, but it is worth it. (There are two North Streets in Newton, and most everyone (and many GPS devices) knows the other one, not ours!)

Seriously - try ordering online! Go to Dominos.com, and type in your zip code and find your store. You then pick your pizza, and you can just click on things for what crust, what sauce, what toppings, etc. And, after speaking with the folks at our local Dominos, they prefer the online orders, because they know exactly what the person wants, and the person knows exactly what they will be paying, too. I can easily order a pizza with no sauce - I am allergic to something in each of their sauces - online, but in any store, I have to repeat myself several times "Yes, NO sauce, I really mean it." I have never had them put sauce on a pizza when I have ordered it online!

Did anyone watch Food Academy on Bravo?
I started to hate this program but it's starting to grow on me.
I am a little tired of the "Mean Foreign Chefs". I HATE IT WHEN they destroy dishes-both the food and plates- by dropping them into trashcans or the floor.
Mainly because of the shards of china/ceramic. That stuff is sharp.
---------------------------------
It looks interesting but, with BRAVO, they edit the programs/previews to make it look like something else is happening-That turned me off to TOP CHEF. It starts out well, then the program and editing gets stupid and I don't care about the chefs towards the end of the season......Oh, Padma has become very irritating-it's the way she presents herself and the way she talks.
---------------------------
I was trying to catch up with Top Chef and wondered....
Why did they bring everyone to a steak house, then the special guest tells everyone she's a veggie?
The cooks change their dishes and when they are served the judges wonder why the meal sucked?

I have had pizza everyday since Sunday.
I posted another dough recipe on the "Recipe" thread and I was amazed at the results of the new batch.
The dough is so light and fluffy that I have made pizza, breadsticks and a few other creations.
I got a can of cheap spaghetti sauce, opened a can of sardines and mixed those together. I rolled out the dough and put the sauce, cheese and pepperoni on one edge, then rolled it like a jelly roll and cooked it for 20 minutes on a pizza stone. I let it cool and sliced it into bitesized pieces..Great with beer, the saltiness was a little too strong in some bites, I jsut have to adjust my recipe.
I didn't use all that sauce, too salty, so I saved it for tonight's creation. a regular pepperoni and cheese, with sausage and basil from my garden.
I have yet to taste it, If I post tomorrow it means it was o.k.!

Is anyone out there (besides me) following The Next Iron Chef? I was rooting for Chef Mullen, but he's been eliminated. If Chef Mehta wins I might need to have a chat with the Chairman. Chef Mehta's kaiseki preparation was over the top with all those flowers. Go, Chef Garces, go!
I stumbled into Guy Fieri and his son cooking together - it looked like the topic was Thanksgiving leftovers. I thought it was nice to see him with his son! They were making sort of a one-dish meal with potatoes, tomatoes, and leftover roasted turkey. I came into it part way through so I'm not sure what all Guy had in the pan before he added the tomatoes.

I am, I kind of like Chef Mehta's exuberance, but maybe that's just me! I was rooting for Amanda Freitag, but she got eliminated, so it'll be interesting to see which one wins.

Chef Mehta did a regular Iron Chef not too long ago. I forget who it was against. He almost won the battle. He seemed more versatile in that one than he has on the Next Iron Chef competition. I am voting for Chef Garces right now. Chef Mehta just seems like somebody I wouldn't want to watch on a regular basis.
I'm still shocked that Amanda Freitag was eliminated. We needed another woman in the Iron Chef group !!!

I'm following the Next Iron Chef, too, and I was rooting for Amanda Freitag as well. In lieu of that; I actually like Chef Mehta - I think he is a more versatile chef. I wouldn't argue with either, though, they both seem very good.

I think Chef Mehta will win.
Again, the TVFN is searching for the ethnic angle...;)
------------------------------------
LOLOLOLOL,
I just busted Tyler Florence.
(I do have a love/hate relationship with this channel.)
TF was making turkey mole (moh-Leh) - turkey cooked in a chocolate/cinnamon sauce.
Ewwww.......I have never cared for anything sweet with meat. I don't like it.
Anyway, TF starts with "mexcan cinnamon"-they look like regular cinnamon sticks to me, then he breaks out the "Oaxaca Chocolate".
"Chocolate from Oaxaca"- he says..
(Oaxaca is a state in Mexico!;))
DUDE!
He pulls it out of plastic wrap and I see that it's a mexican style of chocolate
called "La Abuelita"-The Granny/Grandmother.
It comes in wheels that have the name stamped on them - Nestle' is the company that mass produces the chocolate for the Mexican market.
Now, people will think that TF is cooking with a 'real mex' chocolate, and in a sense he is....But, you can get the same stuff all over Mexico and in your local Mex restaurant.
That's the kind of tom foolery that makes me laugh and dislike some of the programs and hosts on TVFN.
Yeah, I understand the idea of wanting to make a dish that is true to the original, but when they try and pass off regular ingredients as original?

I was curious who sits in the audience at the IC tapings...
The smell is intoxicating, even for savory foods at 8:00 a.m. As the shooting wrapped by lunch time, I was horrified to see the crew dump all the food into the trash. I guess next time I'll come as a judge -- I can't watch, hear, and smell all that food without tasting it!

How can they do that? They advert the "food for millions" food drives they have, yet, they toss top notch food items into the trash?

I know what you mean, Richard. It kills me how they so willingly throw away such a large amount of good quality food. The advertise how needy kids are, etc., all the time.
On the show, Iron Chef, they use the most expensive of ingredients available sometimes. Don't they at least have a hungry crew that could make use of the food?
I've always thought the prepared food on any show was going to the camera people, set people, etc. They throw it in the trash?? That's crazy.

In the Audience of Iron Chef America
By JULIETTE ROSSANT
Recently, I joined the studio audience for a taping of Iron Chef America. I knew both teams of chefs: Mary Sue Milliken and Susan Feniger (see Super Chef, chapter 5) versus Iron Chef Bobby Flay. While all of us signed away our rights to write about what happened or what the secret ingredient was, there is still the audience story.
We were told to arrive by 7:30 a.m. at the studio. In the second of two waiting rooms, Bobby came out to meet and greet. Then, crew led audience members out in groups to sit down, and we sat through segment shoots of the president's greeting of the contestants Susan and Mary Sue, his choosing of the iron chef to combat, and the revealing of the secret ingredient. The actual kitchen battle really took only one hour.
Even from the audience section -- right behind the spice rack on the Iron Chef side of the studio -- the frenetic pace of both chefs and camera crews as they raced about the half-hidden set were exciting. We got an extra bang the when a camera cable caught on fire and momentarily added its own pungent smoke to that of the cooking food. Flat screens showed one of the sous chefs peeling a hard boiled egg, while Alton Brown made light of the cable disaster.
It is amazing to watch how parts of a dish are brought together on a plate from scattered places all over the kitchen. Logical steps begin to reveal themselves in the flurrying parade of preparation. It was like a three-ring circus, with something exciting all the time in each ring. To watched one was to miss the others, but that is part of the magic, circus or kitchen. Besides, it was marvelous to see a gaggle of top chefs at work rather than interviewing them.
For Foodies (or unfed breakfasters, take your pick), it was hard to keep seated throughtout. The smell is intoxicating, even for savory foods at 8:00 a.m. As the shooting wrapped by lunch time, I was horrified to see the crew dump all the food into the trash. I guess next time I'll come as a judge -- I can't watch, hear, and smell all that food without tasting it!

altho the article was written in '05? I doubt that they now would have taken the time to package all the stuff up and try to find a charity to donate it to.
I have noticed that the product placement in Top Chef -Glad storage items- and have to roll my eyes that TVFN hasn't really lent itself to getting anyone/any company on board to sponsor or donate their products. I'd like to see Reynolds Wrap donate some foil pans and a driver to take the stuff to a homeless shelter once or twice?
LOL, I know what Umami is, kinda, and rolled my eyes when the NIC did the whole program/commercial on soy sauces.:o So, if you get someone to sponsor a whole hour of soy sauce cooking, how much harder can it be to get a small donation to help out the needy?
-----------
Like the T Florence 'chocolate' thing there is a slight 'integrity' issue I have with the channel, but I keep coming back. I only pay attention to the competition shows and the rest are background noise to my indoor chores should I tune in.
Looking back at all the great food I have seen on that show, and knowing that it went into the trash at the end?
My mom used to tell us that wasting food was a sin. If so, That means I will have to share hell with Alton Brown.:eek::mad:

Thanks for posting the article, Richard.
This absolutely makes me furious. How can anybody be so wasteful? Are there laws that don't allow sharing with the audience like they used to on Emeril's shows?
Paula Deen shares with the audience too.
What in the world could stop them from trying to find someone that could take the food and put it to good use? Homeless shelters would love to get the donation. Heck, the audience would love to taste it, as we can read for ourselves.
As I've said before, Dinner Impossible is a show where RI seems to enjoy tossing food in the trash.
$70 a pound lobster in the trash?? It's insane.:( :(
I would write to FN and complain but I have sent them a half dozen emails in the past and none of them were ever answered, as I recall.
Maybe I'll fire off another email anyway.

Morimoto, BF and (especially) Michael Symon seemed to like Chef Garces better than Chef Mehta. Interesting to listen to the judges and the Iron Chefs discussing the competitors. I got the impression Mehta had a couple of mistakes in his dishes that should not have occurred at that level.

She really loves Ina Garten's 'Barefoot Contessa:' "I tried to get on Ina's show. I tried to use my, well, you know...I say, use what you have to make the world better or for yourself! I love (hate) the Food Channel.
If I am feeling crappy or have to deride someone, I load up on the NERF gun and tune in the the FC.
After a few minutes of target practice, I feel better.
Today, I tuned into Raychul Rae and she was doing some kind of hour long special on Christmas party food.
She was making cheese balls in olive oil and herbs and goes off to the local cheese shop to buy cheese for the party. She is making an antipasti platter?
I was trying to check out the prices-they had the little signs that have the little wire prongs on the bottom that get pushed into the cheese.
She checks out some 9.99 (looked like) cheeses, then the clerk pushes a 23.99 dollar a pound cheese on her-which, of course, she has to buy.
She walked out with two bags that I guesstimate weighed about 6-7 lbs.
I figure she spent about 75 bucks there.
She goes off to a meat market and buys some sausage and other meat.
I had lost interest by that time.
I love to watch food programs, but, I still get irritated by the claim that it's a meal that you can put up in your kitchen.
That 24 dollar cheese is probably 32 dollars in lost angeles.:confused:
I really doubt that RR would even consider her purchases if the FC didn't pay for them?
-------------------------
Christmas really is a time for family and feasting.
I have always thought that if you invite me into your home and feed me a meal, I would gladly eat a can of dog food on account of your courtesy.
(Cat food smells too funny....):o;)
So, I could buy a brick of velveeta, toothpicks some chips, stuff for salsa and a 12 pack of Pabst and have a rocking party. All that for 24 dollars and maybe I'll have a paper dollar to buy a lotto scratcher?
And to all?
A good night!

I love this, RICHARD. My sentiment exactly. I'm always thrilled when I receive an invitation. It's the company that I appreciate and the effort that's put into serving a meal or snack or whatever.
Hey, have you tried Mario Batali's jar pasta sauce? I usually have a container of sauce in the freezer b/c I make a batch when the boy comes home, then I freeze it. But I didn't have any left this time and I was in the mood for spaghetti but didn't feel like making a batch so I tried his sauce. The tomato basil is really good. It's light and isn't made w/puree. If you want a quick, light, meatless sauce, give it a whirl. I'm sure I'll play around w/it later and add a few ingredients but for right now, it's good. If you've tried it, let me know what you think.

I am very old fashioned about food and eating at someone's home.
I would rather see a table of 'real' food, than a spread of fancy stuff that I cannot pronounce or spell. One funny part about that RR show was her discussion with the clerk/owner of the cheee store.
I think the expensive cheese had truffles in it....during the clip she mentions that the viewers can pick up a cheese with mushrooms in it if we can't find the truffle kind. Hmm, I guess us suckers will have to make do with what we can find?;)
I have never seen the MB sauces.
I tend to stay away from 'name brand' sauces. The get kinda pricey and sometimes are too sweet.
I do stock up on canned, flavored sauces, then, as you do, punch them up with other ingredients when I make spaghetti.
I'll keep my eye peeled for it next time I go shopping.
Thanks!

What was the problem with Kevin and Preeti????
The edited out any interaction between the both of them and I wondered if maybe Kevin's 'eye for detail' may have sunk him?
I noticed K complained about her speed and the number of ingredients she dealt with. He made it clear that the squash had to be perfect, so maybe being perfect cost him the competition?
There is a certain level of perfection that demands you sacrifice speed to get the end result-I think he may not have trusted her to perform up to his standards!

Guy Fieri is a train wreck that I love to watch.
He did a Q&A in Playboy magazine....I'll have to read it again...he really didn't say much.
On his Diners and Dives program I caught a segment where he stopped in at a Mexican restaurant in Milwaukee (?)- It was in the Midwest and one of the signature dishes he tried was duck tacos.
GF and the owner made a batch. They showed how to make the marinade and then prepare the dish. I was kinda on board until they finished and the owner put pineapple and some other weird ingredient on the tortilla.
I DID DIG the fact that the tortilla were hand made with blue corn flour added
to them-but the add-ons to the duck made me gag a little.
Pineapple?
At the end of the segment GF begins to praise the owner for his Original Mex Tacos.....
I had to laugh because I don't think I have ever heard of a duck taco.
We kept them as pets, not as an entree.
People do use tortillas as a base for many kinds of tacos-If you can make a sandwich out of it, you can put it into a tortilla and call it a taco!
Anyway,
I love the way that the FN rewrites the menu and doesn't do fact checking or tries to pull a fast one on us all.

I dig Diners, Drive-Ins and Dives! One of the diners Guy visited for his show was a local joint not far from here, on Route 66 (Dell Rhea's Chicken Basket) ... and I like that he is actually trying to keep some semblance of a family life while he is boppin all over the country in that red car.
I watched the "Next Food Network Star" marathon on New Year's Eve ... not as much fun now that I know the outcome ... I got the impression several times that Jeffrey perceived himself as the one to beat; and talked/performed like he was aware of that. I'm glad Melissa won!

Chef Beau didn't stop David from chopping garlic with the peel on - ick! The blue team did pan-roasted duck and the red team did pork - I printed the pork recipe so I can try it when I get all the ingredients. I won't be a spoiler but I was a tad surprised at the outcome.
I caught just the beginning of Bobby Flay doing a Throwdown of a beautiful cake - twelve really thin layers with icing in between each one - that he said was one of his all-time ever favorite desserts. I think it might have been a coconut icing. I will have to go on their Web site and see if I can find the recipe for it - it looked super delicious, muy delicioso!

We watched it, and I was kind of glad that the one woman who didn't graduate, did not graduate. She made so many mistakes, and seemed to be there more for fun and home entertaining than for a real career like some of the other cheftestants. Let me ask you something.
Would the program have been better if they had kept the worst chef (compared to how they badly they cooked) and worked on them for the duration? I know they picked the chefs that made the most progress, but I would have loved to have seen the worst chefs staying on an getting their chance.
It seems that they kicked the worst chefs in the teeth, then kept the ones that were doing well. Or, am I crazy?;)
----------------
Some of the shot looked like they were stage a bit and I didn't care for the 'walking up to the buidling' shots. I don't care for Jeffrey Steingarten and I noticed that as he and the women judges approached the front door he made no effort to open it for the women!
---------------
On a side note?
I am disliking the Barefoot woman more and more. She's a snob. Guy Fieri....
I love the places he goes to eat, but just find his humor and the need to touch the food items very unappealing.
I just find that a person's kitchen should be treated like a underwear drawer.
LOL, bear with me....
Should you get an invitation to look inside, it doesn't give you the right to touch everything in there.:rolleyes::D
Now, If I found undies in your knife drawer-that's another show!:o:eek:;)

Yeah, I was waiting for that too.:(
Something good will happen for her...
---------------------------
I was doing some chores with the channel on-and Guy was making some kind of turkey melt.
The recipe calls for some bread crumbs, egg and herbs.
He grabs a bowl and fills it with the bread crumbs, He cracks the egg on the cutting board and you can see some of the yolk has leaked onto the board.
He grabs two plastic bags with the herbs in them and drags them over the spilled yolk. He takes what he needs from them and pushes the bowl away. The spilled yolk is now spread across the board.
The next ingredients are onions to be carmelized, the slices them on the same board and the spilled yolk is now part of the onion slices!
The onions go into the pan and he brings out a package of ground turkey, opens that over the spill, puts the turkey in to the breadcrumb mixture and
then slides the bowl over the smeared egg and goes on to make the patties for the sandwiches.
He never washed his hands, nor made any attempt to clean up the spill.
ewh....With all the paranoia about salmonella and e. coli I was kinda hoping that he would be a little more careful in the way he prepped the food.
As you can see, I have quite a bit of time on my hands!;)

This is Hell's Kitchen, The Next FN Star and Top Chef rolled into one, on heroin, steroids and just a tad of mental problems.
WOW. It's far more interesting than I thought.
The language is coarse and I miss some of the stuff because of the accents?
But, if you do any of the kitchen/chef shows?
You cannot miss this one.

So glad to be back online after a 5 week period of no computer. Love this thread!!
I am watching the reruns today of the Worst Chef. I am shocked at who won. I thought it would be the other one(in case someone hasn't seen it). Did anyone notice the judge, Kareen Bacume(not spelled right), and how much weight she lost? She looks fantastic!!
Richard, I'm with you, as always, Ina Garten is so stuffy-la tee daaaaa. I can't stand to watch her anymore. It's all about her cooking, and, her period.
I also love Anne Burrell. Isn't she great?
I saw the cute little Mexican girl last weekend. Adorable. However, everything she's made was kinda already done. Richard, I'm thinking you can get your own show.;)
Paula Deen does keep wearing that billion dollars worth of rings. TAKE THEM OFF PAULA!! I can imagine the ground meat and food particles in them. Yuck!!

RR boards the dog during the day while she's at work.
It was a clip in a bio about her. The dog is taken/dropped off at a day care/kennel in the morning and picked up in the afternoon.
The dog does not have to be PTS, That is a selfish, stupid thought and that's is the mentality of a 'blind' pet owner.
Look at M.Vick's dogs! They were rehomed and some were PIT bulls.
When people are overly enamoured with their dogs, they overlook the basic tenets of owning dogs.
The dog should be spared life with her and her husband.

If she cares as much about Izzy as she says she does, I think she will find a better way to deal with this. I really believe RR is a true lover of animals. Her schedule may not permit her to spend as much time with her as she needs to but I hope this brings out a need to make some time in one or both of their schedules. To put the dog down would be ridiculous without trying to train her or muzzle her or whatever else they can do.
Best wishes to all of them. I would not like to hear about euthanizing her for "convenience". She seems like a good girl and deserves better.

Who invented "Umami"?;)
It's been promoted as the 'fifth' taste and I was wondering when people would to jump on it as a 'food fad'.
http://en.wikipedia.org/wiki/Umami
I was watching a news/lifestyle report on the local TV station and a woman was doing a report on a hamburger joint that opened with the name "Umami".
http://www.nbclosangeles.com/around-town/food-drink/Umami-Little-Spoon-Twitter-Trucks-70574947.html
Here in El Lay you can find almost anything to eat...If it's on the Food Channel, we have already seen it here.....I find umami to be a gimmick, not a real kind of food, but more like a concept towards food and it's prep.
The word, because of it Japanese roots, kinda grinds to a halt when I hear abouts chefs tweaking it and using it to sell hamburgers.
The burger pictured in the link was the star of the news clip. I tried to find the clip on the news web site, but could not.....
The reporter, who was an Asian woman, went to Umami to taste the burger!
The chef showed her what is in it - he did not cook it in front of her, rather it was made, taken apart and reassembled at the table- You could see where the roasted tomato was smeared on the cheese part of the burger.
It's a six ounce meat patty, a 'slice' of cheese that was grated and put onto a tray and melted, then cut into a square. Roasted tomato slices, a whole mushroom and the top of the bun finish it out.
She starts to bite into it and describes it, "I can taste the meat, the mushroom, but I don't taste the umami!" The cook tells her, "The umami is in there!"
I started to laugh.....
Is it a soy sauce or a enhancement of the food by using the sauce? And would sending an ethnic reporter make her better suited to tell us what this umami is?;)

I have been taking a break from the usual TVFN stuff, it seems like they take a theme and schedule it across all the programming.
I noticed that pot pies were 'hot' last week? After I saw Tyler F gush over his ultimate recipe, I felt dirty and lost the taste for any kind of pies.... ;)
I try to put alarms/warnings for the programs on my cable channel, then I have the TV off during that time.
I did catch the premiere of the LMG when she first came out.
-----------------
Tweeting taco trucks?
This is almost two different topics.
Taco trucks...there are the Mexican version of a roach coach. We have had a problem with trucks that are not licensed to serve food, stay in one area and the neighborhood complains about them being there for various reasons.
Too many people parking on the street, littering, loitering and stuff like that.
Recently the owner of a empty car lot had the idea of inviting the trucks to go there and serve food. I guess he was charging rent to them-THAT idea ran afoul of the city laws and ended rather quickly. So, some of the more popular trucks will post their location on the internet.
In the same clip there was a truck that served Korean BBQ on tortillas.
The sauces in KBBQ are rather sweet and have wonderful spicyness to them.
I think I know what they would taste like....;)

Just like his "I am going to steal that!" lines about the recipes, from the shows he does?
He seems to mostly take recipes and modify them to his own use. The more I see of him, the more I think that he has never "invented" his own recipes.
It's always about 'taking' recipes/concepts them adding ancho peppers. I see he's drifted away from mango salsa the last few years.

Ina Garten is a real tool.
I had the FN on the tube and left it on while I was in the kitchen.
The program was about her visiting a friend and helping her cook some kind of pastry.
She had to stop and get the woman a 'piping set' to decorate the top of the thing that they were making. They started to cook and IG began to explain what to do. I thought she was kinda rude and thought she treated the gal like a dummy.
When the pastry was done?
IG sat at the table with another woman while the 'student' brought the thing to the table, then as any royal would do, she instructed the other woman to hand her the knives on the counter.
--------------
It's the IG show. You can tell the by bringing her friends on, she isn't shown up by a star. Plus, I get a kick out of her friends. The women hold her up with proper awe and the guys are FABULOUS!:)

IG gets more arrogant as the time goes by. I didn't like her much to begin with but she has moved into my top 5 of strong dislikes.
She is so full of herself. All she talks about is how great her food is. She has little to offer in my book. Most of the recipes I've seen her do are copies of someone else. It's sad.:(

Fire engines sent to Blair's home
Three fire engines were sent to Tony Blair's home in Buckinghamshire after the former prime minister triggered smoke alarms while cooking breakfast.
Firefighters were summoned to the £6m South Pavilion in Wotton Underwood by an automatic alarm system, reports the Daily Telegraph.
Smoke had started to drift from the kitchen into other rooms in the seven-bedroomed house, but the first crew to arrive found no evidence of an actual fire.
The alarm was raised by automatic fire sensors at the Grade 1 listed home which is monitored by a security firm.
Control staff at the receiving centre immediately made a 999 call to the Buckinghamshire Fire and Rescue Service which mobilised three fire engines.
A spokesperson for the Blairs said: "The Blairs were cooking breakfast when the smoke alarm went off. Because they live in a Grade 1 listed building, the smoke alarm is automatically connected to the local fire station, so the fire brigade sprang into action immediately.
"In fact it was just smoke without a fire but by the time Mrs Blair rang the fire service to tell them they didn't need to come, they were already on their way.
"All rather embarrassing and she'll certainly be sending them a big thank you note."
I don't feel bad now.

The Beverly Hills program was kinda interesting, I now have it on "record series," just young professional chefs in various real situations. I do like that the segment with the "Foodies" not everything went as planned, and they had to cope with real situations, like the equipment not working, simple things like each thinking the other was responsible for something ...
Did it show whether she put the lid down upside down, maybe so the bottom of the lid didn't touch the floor?

LOL, me and my 'OCD' watched the lid go on the floor!;)
I watched the BH chefs most recent episode.
The chefs catered a party for an insufferable 17 year old punk, another event for some people who were really into wine and a dinner for a couple.
The 17 yo was a rude little twit. I wanted to punch him. The wine party was so over the top that I had to watch THAT and the couple's dinner party was VERY irritating.
The husband was a macho jerk with absoloutely no redeeming qualities, what so ever. He was a b@st@rd to his wife-he cut her down every step of the way. He complained about everything she did - the woman went into the kitchen and ended up helping the chef cook, so that was the all the ammo the hubby needed to make her look like a fool, and he never backed down, even when the chef went to the woman's defense.
I could really see all the belittlement turning into a steak knife to the forehead if the woman snapped later on in the marriage...but, this is a food thread?:o;)

Top Chef Masters.
They were down to the final 8 chefs. I am starting to like Gael Greene and her hats....
Um......the chefs?
I like Jody Adams, Susur I cannot stand.
Susan Feniger creeps me out. When the FC first came out I would watch it with the GF. Her program, Two Hot Tamales was a laugh riot.
Her outfits are really bizarre and remind me of the horrible clowns that would show up in the pediatric units and scare the crap out of the kids.
Art Smith, Oprah's chef?

We did a psych eval on her earlier in the thread.
She's thrives on cooking for guys because they don't care, as long as they eat.
Plus, they won't be as critical about the food.
Guys like us are like that.....The adage about getting to a man's heart is true....straight down the esophagus.
She's safe with 'her boys' because she gets the adulation from the guys, without the baggage.

Richard, oh boy!! This new group on TNFN star is too much. I was not impressed with any of them. I love the voice of the lady from India(?)but the rest of them acted like they were in an acting competition instead of a cooking competition.
I was chuckling at cute little Giada being their mentor this season. Was that a punishment the network gave her, considering how much distaste she's shown of the competition in the past?
My brother said he saw Paula Deen at a Tampa grocery store a couple of weeks ago and she looked like she weighed 350 lbs. She was there to do a promo. Has anyone seen a current picture of her? Could it be true or was it what she was wearing??

I just heard that January Jones, the actress from Mad Men was involved in a hit and run accident.
Witnesses said she had been drinking.
Get this,
She calls Bobbly FLay, who tells her to leave, JJ comes back about 1/2 hour later, w/different clothes and chewing gum....then talks to the cops.
No charges were filed.

I was watching a show, I won't reveal which one, because I am embarassed to reveal that I view it RELIGIOUSLY, but they questioned the Paparrazi twist to the story.
They questioned the validity of her story because no one has come forward to shop around photos from the chase. Usually a photog will RUN to make a few dollars on a story like that.
Not to say that she wasn't chased, Just wondering why the photos have not shown up.
The AFTER photos of the crash were shown and the parked cars took some damage.

I just finished Top Chef Masters.
Why can't I be a judge on that program?
Because everything I eat is good to me?
-----------------
I figured out why I had such a dislike for Susur.
When he was talking about his first wife, it hit me.
He reminds me of a friend that I worked with.
He committed suicide by hanging himself in his garage.
He was a nice guy, popular and always good for a laugh.
Funny, I am still mad at him after all these years.:(

I have taken a vacation from most of my cooking shows....
I have been watching FitTV, it's an exercise channel and they have some cooking programs on that I really like.
I just have to remember the names!
-----------------
I saw a really funny cooking show on BBC called, "Come Dine with Me"
It's a gameshow where four strangers are hooked up to host a party at each of their houses. They meet, eat and then grade the meal with the winner earning 1,000 pounds.....
I laughed because I could GAIN 1,000 pounds just watching.
THe narrator is the FUNNIEST part of the show.
If you get a chance, I highly recommend the program.
--------------
The Cooking Channel?
I don't get the programming, but I do get a few of the programs on the ON DEMAND part of my cable....I have watched a few of the programs and the hosts are very pretentious. They have some gal that cooks on the sidewalk.
She's very obnoxious. The other programs kinda sucked.
TVFN is turning into a game show channel-and they are sending all the cooking shows to the Cooking Channel. They have brought back to the channel the "Two Fat Ladies". Loved them, but I don't get the programming, so I am out of luck.
I saw the next game show is Racing Food Trucks.
I can hardly wait.
------------
As usual?
I have a complaint about a show I saw..... Giada was cooking up a picnic to have at the Getty Museum. The GM is a huge museum that was built here in El Lay....
I have wanted to go to the GM, but never had the chance...I tuned in to see what they would show of the place.
Hardly anything......
The first part of the program was her cooking and then taking the food out and having a picnic on the grounds of the museum.
She made some kind of fish cake? (I didn't pay attention to THAT part....;))
As her and her guest sit down to eat, G has her kid with her.
The child is sitting in her lap facing away from G.
G begins to feed the child and takes this cake and just holds it up to the kid's face and lets her eat that way....
I was thinking, "Is she really sure that she cut up all the ingredients small enough for a child to chew/swallow?
I don't have any kids, but I know enough NOT TO LET A CHILD eat without paying attention to what they are eating.
My mom had a few rules about feeding tots.
You feed them first and make sure that the food is of the proper size.
Never feed them by holding food and letting them determine the size of 'bite'
they will shove into their mouths.
Don't feed a kid on your lap. Take the time to set them up so you can see what they are eating.....
A few steps to make sure the child is eating, not stuffing their mouths and you can see WHAT they are eating.
I gave up and changed the channel.....

So I was happy that Aarti won the Next Food Network Star - and did anyone catch her first show last week? I think she's fun to watch, and I like learning about new things - and might try her kulfi recipe - bookmarked it, though I'd substitute black chai for the Earl Grey and have to skip the pistachios ...

I loved Aarti too!!! I'm thrilled to death that she won. She is so cute and speaks beautifully.

Some of the challenges are too predictable and I am not a fan of Tyler FLorence.....But, I have really enjoyed it.
I want to know what happens to the money they earn at each stop.

Is anybody watching Top Chef Just Desserts?
I watch it, but Paul doesn't watch it with me, he's just not a big desserts person anyway.
I thought this past week's show was interesting - Seth never did seem mentally stable, so it was alarming when he had that complete breakdown, and then panic attack. I think the producers did the right thing is saying he was not allowed to return to the show. It might have made "interesting" tv, but he clearly needs some sort of help.
And I thought Malika taking herself out was pretty gracefully done, she had talked about just not being happy being in a competitive environment, and seemed at peace with her choice. I have nothing but respect for her.
What did you all think?

The TailGate program.

Just make Guy a HUGE plate of food, serve him and put a mike on him.
"Money, FlavorTown". Sheesh.

The Next Iron Chef.
Chef PonyTail is a d-bag of the most stellar proportions.
He was the most insufferably whiny, cry baby have ever seen.
What was his beef with Ming Tsai? Anybody can have a show on TV. Walk into a cable studio and do your own.

Most of the cheftestants on Top Chef don't do that, I promise.
Now, on Hell's Kitchen - that's another story, lots of unsanitary, and unprofessional behavior of all sorts, but I haven't watched a single episode this season, it's just too predictable and frankly boring.
Richard, I am looking forward to watching the Top Chef All Stars - there are some "not winners" that I genuinely like, and will root for. Carla, in particular, has always reminded me of a smarter sibling to Big Bird from Sesame Street, so it'll be interesting to see how she handles a second season.
Also, Richard, I have been rooting for Ming Tsai all along. I have eaten at the "Blue Ginger" restaurant whose you see on his jacket, and they take food allergies quite seriously. They took my list and asked if they could keep it to enter it their computer under my name for future visits, and created an entree and salad for me that was not on the menu at all, but entirely Karen-safe and scrumptious. Paul and his mother, who were with me, did order from the menu and enjoyed their food, too. The man has my respect, and I have seen nothing on the show to diminish that. He's not the flashiest or loudest, but may be the most experienced and most capable.

Richard - you should explain your links - telling people it's one writer's opinion of the Worst 5 Food Network Shows is a lot more enticing than just a link!
I just watched the Next Iron Chef Finale for this season, and thought it was obvious, as the meals went on, which chef would win.

I saw one of the grossest/funniest things on the local morning news the other day.
There was a segment on New Year's and places that were doing dinner specials.
The program had an eatery set up a table with food outside of the studio-the menu for the NYE festivities.
The cook/chef was there with an assistant, giving samples to the host and hostess of the show.
The woman host took a taste of one dish, then set her used spoon at the edge of another dish of food that she had not tasted.
The camera caught it and showed the assistant grab the spoon and take it off the plate.
I was amazed and kinda disgusted....I think I am going to stop watching food programs or shows that have food on them.....:o:D

Here's another observation I had about Paula Deen and her show.
We came across her program and she was making some kind of Rice Krispies Treats - RC and marshmallows, shaped and put on a popsicle stick.
PD's son was helping her while she played with a small child that was also on the set with them.
PD sat the kid on THE CUTTING BOARD next to the area where the food was being prepped.
Holy Mole!
Does that woman have a brain?
I remember going to the bank with my mom, when I was a kid and getting yelled at for hanging on the counter..."People sit their kids on the ledge!"
I never forgot her words.:mad:

Oh my, what happened to the finalist that got eliminated? I had high hopes for that person! I am BUMMED!
Did the NFNS producers intentionally tell the finalist shopping for the quinoa to purchase two boxes instead of ten? Felt that way to me, but I'd like to try that recipe.
And Mary Beth left me with a strange impression. She felt to me like "Food Network Star" meets SNL.
Karen
06-27-2011, 03:47 PM
That elimination was so abrupt! And the quinoa thing - he repeated back to her two when she said ten, one or the other of them should have clarified, given the quality of the cell phone connection! I thought Susie adapted pretty well, considering.
Justin seemed like a nice guy, but turned completely wooden whenever the camera was one - he seems he'd better made for a Top Chef contestant than a Food Network Star, cared more about the food than the presentation part. We were hoping they would get rid of Penny, for the burnt macaroni and cheese that she was in denial about, but it was obvious the judges somehow "like" her more than I do!

I'm surprised that xxxxxxxxxxx (won't put the name in case anyone hadn't seen it) got eliminated last night. This person got mowed down by their team's stronger personalities. I thought xxxxxxxxx had a really good thing going and I'm sorry about their elimination.
I'd love to try making Vic Vegas's Philly cheese steak burrito or Penny's middle Eastern steak wrap. And Jeff's meatball sandwich - well, he's from the Chicago area, so I think I might have a chance to actually get my hands on one of those. Why did Mary Beth bring up the onion chopping thing in the eval room? I thought that was a bad decision.
Edited to ask: What's on a Philly cheese steak sandwich besides the steak? (Bell pepper? Onion? Tomato? I think I'd like it with a slice of tomato under the melted cheese.) What kind of cheese do you usually find on the sandwich, and do you toast the roll first? Is it on a hoagie roll, or can I make it with good Chicago Italian bread? Vic Vegas's wrap looked gooey and yummy to me and I think it would be easy to prepare, but I'd also like to have it as a traditional sandwich some time.
Karen
07-11-2011, 03:15 PM
I was not surprised, it seemed like she was giving up, she just didn't have the energy she had when she first came into the competition.
Mary Beth brought up the onion chopping, because Penny was claiming she had no help from her teammates, and listing everything she did by herself, and when she listed chopping all the onions, Mary Beth spoke up.

07-13-2011, 10:19 PM
So I was thinking... If Penny and Mary Beth ran at each other at high speed and collided -- together they'd probably be a contender for the NFNS. Penny's food has ranked high with the judges; Mary Beth's hasn't but the camera likes her. It's a good thing they can't, because I'm rooting for Jeff from Chicago (and Vic Vegas, but don't tell Jeff).
Karen
07-14-2011, 06:35 PM
It's funny, because Mary Beth seems much more likable as a person, whereas Penny mistakes being petty, self-centered and vicious for being "strong" - and appears to have no understanding that this alienates people of both genders. It's kinda sad, really but I wouldn't want to watch a show of hers.

My dad enjoyed having the whole family around, especially his grandchildren. They're good about calling or sending him an e-mail to say hello from time to time, which is nice.
They sent two people home, basically the first camera challenge they had to make and demonstrate their signature dish, and they had two minutes. Bob Tuschman gave each contestant some specific aspect of their on-screen presence to work on, and some people did better than others. Vick Vegas, sadly took so much time giving a thorough description that he never demonstrated any cooking, Penny did great food, but even though she tried to be more likeable, didn't pull it off at all, Mary Beth did great on camera, of course, but her food was poorly seasoned, Jyll was told to "surprise" them, but came of as too rehearsed in her "surprising' line, Chris, as usual, had a much, much too complicated dish and ran pout of time, Jeff tried not to be too crazy, and be warm, but just came off as slow and kinda lackluster, Susie was a little scattered in her presentation, but pretty good ... Whitney worked on likeability and was happier and friendlier and talked about making gazpacho for her sorority sisters, and won that one.
When they cooked for Wolfgang Puck ion the dinner party, it was pretty obvious where the flaws were. Jeff did a salad - not a sandwich, for the first course, and presented it well, Mary Beth, reacting to being told her previous dish was underseasoned, put so much cayenne in her butternut squash soup that the judges couldn't taste anything else, everybody else did well, but the worst two were Jyll and Chris. Jyll's "Risotto" was "too stiff" - in other words, it just looked like a pile of rice with stuff in it. As soon as she presented it, too everyone's surprise, Wolfgang Puck said "this is not a risotto," and took her by the arm into the kitchen to show her how to make a real rissotto, and what it should look like in terms of consistency. Bobby Flay was appalled, Jyll was mortified but managed not to dissolve into tears, and the show went on. But Chris, who ended up with dessert (Whitney got to assign courses) apologized three times, said he was not comfortable making dessert, etc., before they even got to try his food.
So it was obvious he was going home. Susie won the evening, and most of them were told they were safe. At the end, it was Mary Beth, Jyll, and Penny standing, and then MB - to her shock was told she was safe, an they sent Penny home, as her food was still great, but she just was never getting any better on camera.
