He would have a fit if I ate bacon, which I love. In the end, that's what I used to get rid of him. "OOOH.. I had this huge smoked turkey BLT from WaWa's.. it was soooooo good!!" :p

We would go out to a Mex food place every two weeks with all the gang from work.

We invited a new gal in the office and the next day she came in FUMING because we 'tricked' her into eating pork-she was married to a Muslim- she told us she got sick when she realized that she ate pork and didn't talk to us for about a week.:confused:

Funny story... said ex-boyfriend was a cheapskate and thought he was being really frugal by buying this "sandwich" he saw every day at his school. It was only $1 for 2 of them.

These "sandwiches" were hotdogs, lol!!! :eek: :D

It took him over 6 months to figure out what they were, and then he was so upset, he was sick for about a week.

Just made me crack up even more.

I never saw him eating them, otherwise I would have said what he was eating. I tried to tell him that they do have chicken and turkey dogs now, but he just wasn't interested.

I wasted a whole hour last night watching GF and his Family Feast program.

What is the program supposed to be? A cooking show? A 'family' show? I have to admit that I was more curious about his family. LOL, dad is taller than he is.
He looks like his sister and mom. I took it that the sis was a veggie...

I always wonder about that - GF kept up with the "we are eating seafood, you are eating granola!" WHY even bother having her come up on stage?
I have had my share of meals where I didn't care for the food or an ingredient, but I ate anyway. Some effing veggies act like they are going to die if they even touch meat-I know there are people who will get ill if they come in contact with some food/products-but I find them less hostile and calmer when they come across the subject. Some 'by choice' veggies are rude and try to make you feel guilty for eating meat. GF's sis looked like she was biting her tongue about it.

THe show was really bad, there was no cooking, as far as giving out a recipe and the eating at the end was kinda rude too, I know he fed the audience, but it looked like sandwiches-not the food he cooked.


The other thing that make me laugh is the spinning utensils trick he does with the platters.:rolleyes:
I may have to bill the TVFN for my lost time? Ya think?:D;)

OH! Had to tell you guys that Guy Fieri's recipe for Mean Green Beans was a HIT at my house. I was shocked!!! It really tastes good.

A few things, the bacon CAN be omitted and you'd never notice it. The fresh deep fried onions on the top are EASY to do, and omg, are they ever worth it!!! My mom kept picking them off and eating them before I got to put them on the casserole, lol.

Very tasty, very well liked, you guys outta try it!!

I ran by the Iron Chef battle with Batali and Oliver and wanted to die.

One of the assistant chefs opened up an ostrich egg and when he saw the yolk was broken tossed the whole thing into the garbage.

AB said it was worth 20 eggs.......what an omelet that would have made for some hungry people?:rolleyes:

I find "Man vs. Food" offensive on so many levels. It can't be healthy to eat that much food, and that's just plain being a glutton when so many people don't have enough.

That's one of the reasons I cannot stomach-pun intended- Guy Feedme (Fieri). I would like to slap him when he goes into the restaurant kitchens and acts like a friggin pig. I refuse to see the comedy of trying to stuff a corned beef sandwich into your piehole because you can. Give me chefs, not animals or personalities.

Last night I was listening to talk radio and the subject was food and buffets.

Some places are adding a 3% fee to diners who waste food.

I love buffets and never ever serve myself more than I can eat. I always clean my plate and it ices me to see people pile on the food and leave half of it on the table.

I also cannot stand the folks who let their kids serve themselves-like animals- then beg them to eat 'one more spoon' of a serving that's suited for a grownup.

The kid pushes the more than half filled plate away and I just think of all the people that would have killed for some of that food.:(

I'm getting a kick out of the latest on FN. For years, all we've seen is high fat, high calorie foods being prepared(not that there's anything wrong with this;)). Now.......everybody is suddenly going light. It just seems ridiculous because we know they won't stay light. It's so funny. FN is trying to keep up with the national trend that occurs after the first of every year. I vote we go back to the way it was and we can all put our low fat/low calorie spin on it ourselves.
Paula Deen uses one stick of butter instead of three.:) Do we ever see Paula as a healthy cook? She can't stop joking about it while she's doing it.

I'm having a problem with "Ask Aida". She's a little too arrogant for my taste.

What happened to NIgella? I am actually missing "Emeril Live" every day at 2:00. What happened to the guy they call the "Naked Chef"?

Iron chef's judges are getting more and more comical. Some of those people don't know what they're eating and nothing about food at all. Is it good to use them as serious judges?

I am starting to like Gina Neely a little bit. I really like the whole Neely family. I'm still in love with Pat.:D

I enjoyed the "Ultimate Recipe" show too. That mac and cheese almost put me over the top.;) Some of those dishes looked pretty darn tasty.
GF is another story. Where did he get this new wardrobe? From bowling shirts to western wear. Get along little dogie. Get along GF...........

Booby Flake is on every time I turn the tv on. He seems to be the Iron Chef chosen more than anyone else. Where are Maurimoto and Mario Batali?

I guess we all know that Ricochet Rachel is recovering from throat surgery now. I think she had it on the 16th of December. She actually has to have a voice coach to learn how to talk all over again to save her vocal chords.

Richard: Is it Aaron McCargo that's bothering you? He is one dynamic personality. Last Sunday's show, the first of the new season, was terrible. I was really dissappointed. I like this guy alot but his food was unappealing to me. Almost gross looking. He was treating his little son like his partner in a comedy routine. Unbelievable!!
You might be talking about Michael Symon. Another fairly dynamic personality.

I'm with you, Richard. AM started being a great chef/cook and he displayed that. It seems that FN has him performing way too much now.
Like Gina Neely. If she would just cook and cut the performance, I would really like her.

I'm not fond of Bobby Flay at all. Everytime someone beats him at "Throwdown" I get so happy!

I find that I like Sunny Anderson. She's not as "stuffy" as some of the other hosts. I'll get tired of her too, I'm sure.

Flay is a chump. IT's his ego. I feel sorry for the gals that cook with him on UT......

Guy Feedme gets more and more obnixious, the TGI Friday's commercials make me flip channels very quickly.:D

Oh, Nigella is on early on the weekends and RR had sir jury on her throat?
Hmmm, Has anyone seen the DELISH or NUTRISH dog food commercial?

I had to laugh, What does RR know about dog food or nutrition. She probably starves to dog so it will eat her cooking!:rolleyes:

HOkay, I have to to this because I have a interest in Sandra Lee.

It's not an eye candy or lust....IT's more who she is and where she comes from.

Is she married? I know she has had a tough childhood, but she talks about her family and wears a wedding band, but never talks about a hubby..

I know she lived in Cah Lee fuh nee ah for a while-Lost Angeles?-she pronounces some words with a Hispanic accent. The way she says 'plate', for example.....We noticed that a while back.

And I wonder if she's the control freak that Martha Stew-heart is. I saw the biography on her and it seems they both have the control gene!

I was watching Anthony Bourdain on his Travel Channel show and he stopped into visit Mario Batali's dadm who runs a salami shop! I had seen bits of the show episode-Oregon and Washington- before.


MB's dad, mom and sis are remarkably ordinary. None is overweight and none have the flaming red hair.......They make and sell salami out of a shop they all work at, amazing food and none of the segment, other than AB saying it was MB's family even mentioned him!

RR had a cyst on her throat and had to have it removed.
Blue: the only way to listen to her is with the sound off. FN has been running some of her first shows. Holy Cow!!
They took off the Dunkin Donuts commercials because she was wearing a scarf that was supposedly a possible link to terrorism. People complained about it and the ads were pulled.

I have seen RR dog food commercials. The woman is into everything. That came after her animal special last year.

The last I heard about Sandra Lee was that she was living it up in Gordon Elliot's place. I thought GE was married and has children. Not sure what happened there.
I never hear her talk about a husband either. She seems to be obsessed with her sister and her family.

Booby Flake is so arrogant. He tries to lower himself to other people and he just can't pull it off. I also love it when he loses on Throwdown.:D He always has that fake smile on his face. It's obnoxious.

Giada is another one that can't handle defeat. Did anybody see any shows that were filmed while she was pregnant? I saw one and she was still 85 pounds.

I like Sunny Anderson too but I wish she would stop acting so nervous and relax. That laugh of her's is unreal.:eek:

I do blame The Food Network for that - remember in the "Next Food Network Star" they kept criticizing him for not having "enough personality"? They said that about him almost every week, when he obviously just wanted to cook and present his food - they have created a "character" out of him, instead of letting him be who he wanted to be. Sad, but true. You can tell he's uncomfortable, at least I can, being so "over the top" about things and mugging with his kid. But that's what The Food Network pushes and pushes and I don't know why, frankly. I liked watching him before they "transformed" him a whole lot better. Interesting to see Adam, who lost the "Next Food Network Star" show apparently now has a show ... I don't know what it is, as I have the DVR on "skip" over the commercials, I just see his face flash by.

I watch the Ultimate Recipe show today, and Richard, for some of us, mac and cheese - the REAL stuff, not the orange stuff in the box - is comfort food. Yet I know people who, even as adults, still eat the orange stuff as their own "comfort food" - all has to do with what you ate as a kid, obviously!

And I'm guessing growing up where you did, in the climate you did, there wasn't a lot of call for heavy "stick-to-your-ribs in bitter winter weather" type food!

We so have a cold season, It's on December 17th from 4 a.m. until 6 a.m.

Dad was a M&C, SPAM fiend. I used to go to the pantry and look for something quick to make......and all there was was M&C and cans o' SPAM!
Sometimes I'll bust out a can and box and go to town!:eek:

Part of it is not having a 'dairy' gene, when I get real M&C, it sours me, literally, on the dairy in real food!:(

If I am invited to dinner or I have a frozen M&C hanging around, I'll do it! It's just not my cup of tea. All the people back east eat good food anyway, what else is there to do during the winter except cook?;):D

The AM thing is really irritating, the guy CAN cook! The smiles and over presentation make me numb. I don't care for the catchy phrases and sayings....

JUST COOK!

All the people back east eat good food anyway, what else is there to do during the winter except cook?;):D

Let's see - shovel snow, try not to fall down while dealing with ice on the driveway, spend time hacking ice off of driveway and the vehicle one intends to drive, refilling the windshield washer fluid again, shoveling the front stairs again ... digging out the end of the driveway after the plow refills it again ...

Cooking is the warm alternative! ;)

Believe it or not, I actually enjoy all that stuff, except for the "trying not to fall down" part which takes more concentration for me than most ... having half the sense of balance that normal folks do. After all, what other kind of exercise is as immediately as gratifying as shoveling snow? For each shovelful thrown onto the pile, you not only are rewarded with a clean patch of pavement, but a taller pile AND calories burned! And even days later you can look at the snow pile and think "Hah! I did that!"

I can really agree that the new Aaron is a FN creation. He is obviously uncomfortable with it. Maybe we should all email them and let them know how we feel. Enough with the theatrics and more cooking, Please!!!
I hope he doesn't get tired of it and decide to leave them, down the road.:(

I read yesterday that RR didn't need the surgery after all. She just needed voice training. I don't think this was a surprise to anybody.:rolleyes:

This morning at 9:30, our time here on the east coast.......there was a new show called "Viva Daisy"(I think that was it). This lady was cooking Mexican style food with a healthy twist.
I hope you get to see it and give us your opinion. I enjoyed it.:)

I saw Viva Daisy too! She's originally from the PBS channel, and I have one of her cookbooks. I remember her being thinner and having shorter hair. She cooks really down home latin foods. You really have to check her out. She's great. You might want to look for her old PBS shows too, Daisy Cooks. I'm worried they're going to try to "food network" her show and make her less of what I liked watching. They already have her hair different, although maybe she decided that herself.

Yeah, I had the DVR recording Aaron's show, but just told it not to bother. They've made him pretty much unwatchable. I liked him before they made him a "PERSONALITY" - one can have a personality and still be calm!

RR's production company is footing the bills for this new 'Daisy' program. Is the other "latina" cook still on? She is a staple on the Mexican language channel stations in EL LAY.....toned down but still cooking with cleavage!

I missed the show this morning! I kept thinking to post a reminder about it and forgot. I was distracted about the new Hell's Kitchen and Top Chef!

I remember catching Daisy Duke on PBS, but didn't stay too long. PBs has always had a great rep for bringing good cooking programs to the tube. Rick Bayless is the top and there used to be an elderly woman, who I cannot remember her name, that made the 'real thing'.

Here's the deal-

Mexican cooking is as varied as any large country's cuisine.

Examples?

France, Spain and Germany influenced the cooking and culture of Mexico, the southern edge of the country's cooking is influenced by the Central American states-and even Cuba has a little part of he pie.

I can watch the "Mexican" cooking shows for entertainment only because the Mex cooking I grew up with is different than the regional dishes that get put on the air.

Tamales?

You can have Southern tamales, middle tamales and nothern ones!

The 'wraps' change - you can get a banana leave wrapped tamale from the south, one wrapped in a corn husk in the central part of the country and closer to the northern border you get the 'bastardized' tamales -wrapped in paper because some gringos won't do the organic wrappers!

I used the term GRINGO with affection, so complain to the newspaper, not me!;)

Menudo, tripe soup, varies too! You can get it white, red, with or without hominy!

Beans! Black beans are more a southern and Gulf offering, Pintos more a nothern fare. Then you have the TEX MEX twists on what is plated in a restaurant closer to the U.S. border.

My only peeve about Mex cooking on T.V. is the availability of the food used,
Where I live there are tons of Mexican stores and when I trip thru the produce sections I find stuff that even I don't know what it's for. Many herbs and spices are used for their medicinal and food properties-so you can find all kinds of weird stuff.

Oh, I almost forget!

ANCHO CHILE POWDER! One of Booby Flay's faves!

The ground up powder is an 'invention' of the gringo again! If you walk into an older person's kitchen you will see the garlic 'tail', dried chiles and a bowl of veggies hanging around someplace!

Dried chiles that get stuck in humid places or get wet get moldy. Some one figured out that if you grind them up and bottle them, they travel and last longer. At the AMerican store you can find displays of chiles and herbs in cellophane packages-that's another MEX thing-when they shop in Mexico you have to see what is being sold-the markets are open air affairs with product out in the open. LITERALLY!

Anyway, I'll shut up now and see if they put the show on again!

This is Daisy Martinez, not Daisy Duke, lol. She uses a lot of fresh herbs and spices. She's the one I found out how to make home made Sazon, and about the herbs culantro (not cilantro), and achiote seed. She was not a "wow" personality, but she talked about how her mother and grandmother cooked, even did shows out on a beach to show how they cooked there when they were with family. She had a really nice show on PBS.

The flavors that you get from 'native' palnts is amazing. But, those plants or herbs are not always available everywhere and I really hate to see the prices on line. I mentioned that I pay 1.18 for a bottle of fruit seasoning and online it costs 4.95 plus s/h!

That's criminal!:eek:

I'll have to watch her. I like the COOKING shows and don't mind the storytelling.

There is one "MEX" veggie that really give me the heebie jeebies.

IT's called a chayote (chai yo teh) It's a squash-like veggie, looks like a green pear and about the same size. Kinda sweet, my dad loved them and would cook this soup and use them in the recipe. For some reason I could never get behind them, these days I see them in a store and want to buy one and cook one, just to punish myself!:D

Yes, Richard. Ingrid Hoffman is still on. I really like her. I didn't at first but I do now.

I just went shopping and saw chayote. I think I've seen someone use them on the Booby Flake grill show. They look strange and flavorless.

We're fortunate to have some selection of Mexican products here but I don't know what to do with them. You are a wealth of knowledge, Richard. I really enjoy reading about different things. Thanks.

Daisy is pretty straightforward right now. She's all about cooking and not trying to audition for Broadway.:rolleyes:

I really adore Paula Deen. Her accent is so adorable, 'ya'll'. I do agree that she puts butter in everything though.

Guy Fieri, I like him, spiked hair and all. Rachael Ray, she's cool but her laughter is hideous and that smile really makes me scared. LOL!

I hate Giada..she's cute but her head is big enough to be on a bobblehead shelf, her laughter is hideous and I hate the way she 'pronounces' things with her hands. Ina is cool too, I love her show.

Hey, don't confuse knowledge with endless trivia.:)

Mexican cooking is filled with wonderful branches of other cooking.

Example? THe French brought in the french roll, known as the 'bolillo' (Boh lee low) in espanol. The local places make TONS of them around a holiday and that is the go-to bread for fiestas!

The 'torta' (tohr tah) is a sandwich in a bolillo roll- My fave is pork.
They cook pork -carnitas- until it shreds. Avocado, mayo, some shredded cabbage, pork and some hot sauce?

Really good on a hot day with cold beer!

I am stunned!!!

Mex food is usually spicy, fatty and off the charts when it comes to 'healthy food'.

Chorizo is a really spicy sausage made from beef or pork.

It's pretty fatty and you have to drain the grease off of it while you cook it.

I was tripping thru the bacon/sausage section of my local store and was going to pick up some chorizo when I saw-


VEGETARIAN CHORIZO!

I recoiled in shock and walked away in shock, now, you know that I will buy a package of the stuff and report back to you about what it tastes like!

I was too shaken to buy a package, but my curiosity is piqued!

How did you do your chorizo?

LOL, there is a dirty association about what people do with chorizo!

Cook the chorizo, drain the fat and then you can add onions, eggs or nopales (cactus).....the cactus is just like green beans and a wonderful way to finish off the dish. If you do add them to the dish put them in in this order?

Fry your chorizo, drain the fat off, add your cactus, drained, then toss in some eggs and scramble them.

The liquid in the cactus is sometimes slimy, you can rinse or put them out out to drain before you add them to the chorizo!

I know nothing about polenta/grits! That's gringo food?:D

The Flake thing might have to do with Tex Mex food. Corn, in the south west is a strange puppy. It's different colors, blue, red, yellow, white! And all those colors can show up on one cob! It's mostly a regional thing and when some cooks discover it, they ALWAYS us it-it's a signature thing and they cannot let go of it!

I am going to buy some in the next week and cook it.

Polenta is made with ordinary cornmeal, as far as I know. Boiled like oatmeal.

Grits are mostly southern. Made of finely ground white corn, boiled also. Hominy is also white corn, just not ground up. I don't like grits, but like to add a bit of hominy to pea soup. Grits are moving into the high class restaurants after being the mainstay of the diets of the very impoverished.

Ever nuke bacon? It's quick and not as messy. Not turkey bacon, though. It morphs into a twig. I don't care for turkey bacon anyhow; it tastes sour to me but I cook it for my son when he visits.

I think its more to do with the current "Let's focus on Regional Cuisine!" Mind you, we had a North Carolina native who, every year, would cook grits for the Palm Sunday breakfast ... and admitted when I asked what they even tasted like, she said - well, something between cream of wheat and wallpaper paste ... the point is more the butter you put on it" so I was never convinced to try it. I never even ate Cream of Wheat when Ma made it, oatmeal for me, thanks!

We both prefer bacon microwaved, it gets crispy and is not messy if one uses enough paper towel. I cannot imagine being patient enough to bake bacon and get it crispy.

I use regular corn meal as well for my polenta. If you want white grits, you can buy white corn meal. Hominy comes in cans in the veggie section by the cans of corn. The kind I see around here is a white label with blue writing on it. I had a few people ask me where it was when I worked in the Giant foodstore.

Sidenote... when I was reading the book "SHILOH" to the kids in elementary school, we discussed what they ate, and it talked about fried cornmeal mush. The kids had no idea what that was (we're in Pa, and this was a southern appalachian story). I grew up eating this, as it was cheap and what my mom had eaten as a child as well. You cook up cornmeal to make cornmeal mush, and then refridgerate it over night so that it sets up and you can slice it. You can slice it thick or thin, fry it in oil and serve it with Karo syrup, or table syrup.

I decided to make this for the kids I was reading the story to, and they LOVED it for the most part. It took some time to do, and the frying is messy cause the cornmeal tends to pop and spit when you fry in oil, but the end result is sooooo good, and crunchy and yummy! I took pancake syrup with me, and the kids in each 4th grade class tried it. Only 2 kids out of about 95 didn't try it, but that's not a bad percentage!

I gotta tell you, Richard.....the chorizo I bought was a cheater. It was just a small package of Goya brand, already cooked. I cut some slices and ate it. It was so good. I plan to take the rest and crumble it for scrambled eggs. I bet the fancy stuff is to die for.

I absolutely love grits to pieces!!!! I grew up on them and I can't get enough. They must have enough salt and butter though.:)

Oven bacon shrinks less comes out crispier and I put away half the cooked product. I can see doing a few packages, putting it aside and nuking it to get it hot.:cool:

Well you MIGHT be able to 'patty it up'!

You usually take the casing off-ALWAYS DO THIS! You could get it in a natural casing once upon a time-now it's plastic.

It crumbles into mush-it's almost like a chili con carne-without the beans!

After you cook it up for about 10-15 minutes you crack a few eggs into it and scramble away. Now, IF you want patties, You could probably add a spoon full of chorizo to a beaten egg and drop it into one of the circular molds that people use to make round eggs?

I have heartburn this morning so I may resort to a oatmeal brekkie....but I will be doing soy chorizo in the next few.

I noticed that for the same price you get twice as much soy chorizo than you do with pork!:confused:

We have alot of Mexican stores here. I have to say I've never ventured into one yet.
There was one at the end of my street on the main drag. They closed after a month. I was bummed because I wanted to go there.

The Mexican people aren't really heavily populated in my town but very heavy, north of me. Many of them are fern cutters in Pierson, the Fern Capital Of The World. I kid you not. That's what they call the town.
Alot of them are brought in by the wealthy growers to work the fields. It's a fascinating story.

I was lucky to have lots of Mexican kids come into the library where I worked. They were so appreciative and delighted to be there. Polite and kind as they could possibly be.

My sister is a school teacher. Her classes, for the last 5 years, were 60% Mexican kids. That school was about 30 miles north of me. It unfortunately closed last year along with 7 other small schools. My sister was so fortunate to have homemade Mexican food every day. In the cafeteria, and, delicious food brought in by her students Moms. She was in heaven.

I need to get in the car and drive up north and hit one of the stores. I'll let you know when I do. I've heard about the cactus and I've seen it in stores. It's another thing I have no idea how to cook.

You don't have to cook the cactus-you can get it canned!

Nopales! They are just like string beans. You can buy them raw and cook them, but you have to de-spine them, chop and then boil.

They make a 'slime' that some people find offensive, just rinse and heat.

Breakfast?

Chorizo, egg, some nopales?

Or you can buy a canned enchilada sauce-has to be red- toss some nopales in and heat it up! serve as a side veggie.

Scrambled eggs and nopales, with some salsa in a flour tortilla? Lunch?

By themselves!

Buy a small jar to get the taste -sabor (sah bore)- and go from there!

Oh and invite your sister over and cook for her!:D

I wish we had a TV in our library at school. I could have been watching Food Network on the days that I went in at 6am.

I'm still shocked that as a "media center" the only media we really have are books and magazines. My cookbook section kicks butt! I've put some major money into it on our book orders during the past 4 years.


On a side note, about Food Network... anyone find Ina Garten, the Barefoot Contessa, a bit pretentious? Even though some of her food really interests me, she just annoys me.

The whole 'push' for the cooks on the FC is that they demand more personality and it detracts from the recipes.

I always looked at the food as the star of the programs and the 'talent' as merely guides to the dish.

They do detract from the programs and get annoying very quickly!:(

Ingredients:

2 1/4 pounds of raw almonds ( 1 Kg )
2 1/4 pounds of sugar
1 box of instant mashed potatoes (dry)
1 egg
pine nuts

Mash the almonds. Put in a big bowl the mashed almonds, make a hole in the center and add the sugar to the hole. Prepare the mashed potatoes with 2 glasses of almost boiling water and the contents of the box. Pour it (very hot to mix easily ) on top of the sugar and mix everything together until you get a compact paste. Let it rest until the paste is cold. Form the paste into little balls (about 1 inch diameter), soak them with beaten egg, roll them in the pine nuts until covered. Bake at 375 F, 8-10 minutes. You can change the flavors, adding to the paste shredded coconut, instant coffee, cocoa...

We so have a type of almond cookie that is made, but I never heard about the potato flakes!

Were the cooks tonight a little catty?

What happened to the scores of the first round? 80's? The scoring leave me baffled.

Hot and Spicy are two different things. It's really difficult to do both in the same dish. I love hot and spicy, but not Nuclear and Heartburn.:rolleyes:

I have to agree with the judges about naming a food and not keeping true to the origin.

What was with the contestants minding each other's business so much? I don't remember any other URS when peeps were being so nosy about their neighbor. So busy, in fact, they were having trouble making their own dishes.

I also thought the judges went from "everything is great" to "nothing is great". They seemed really critical last night when I never thought they were before. Especially the lady from Family Circle. She loves everything!!
The judge in the middle acted like he was having a really bad day.

When the judges said none of the dishes had enough heat, I would have doubled up on the heat in the second round. Give em what they want!:)

Did anybody see the Neely's yesterday? The one where they made the chicken wings. The rub they made was cayenne pepper, red pepper flakes, black pepper and some other things. They made a sauce out of horseradish, cayenne, and something else.
I hope they had their guests sign waivers before eating them.:eek: FIRE!!!:eek::eek::eek:

You can eat them on a plate with some salsa or heat up a flour tortilla, scoop some fillng into it, cheese on top, roll it up with salsa on the side.

It's friggin awesome -some peope think that a spicy breakfast like that kills a hangover!

I just made a pan of Reynaldo's "Soya Chorizo".

The ingredients are textured soy protein, water, veg oil, vinegar, paprika, salt red pepper and garlic.

1 to 10 scale? 10 being best?

The taste is almost there-it's the texture thing.

Regular chorizo fries out into a mush as it heats up, The SC crumbles and there is not much fat in the recipe- A good thing!

I skinned the link-I cooked only half because you get twice as much soy sausage than a regular link
of chorizo. I made some diced fried taters, cooked in bacon fat,then cooked the chorizo, tossed in two eggs, scrambled it all up and added back the potatoes to heat them up and dug in.

No too bad. If you had take abreak from the pork or beef styles because of health/ weight issues, you still can have this as a replacement.

One thing?

Watch your heat and add some oil or fat to chorizo-it cooks quickly and I feel it could burn quickly!

This reminds me of my friend Mona's cookies she makes that are from Syria. They are like a butter cookie, and have pine nuts on top of them. They are to die for!!! She doesn't put potatoes in them, she puts in farina I believe.

I just made a pan of Reynaldo's "Soya Chorizo".

The ingredients are textured soy protein, water, veg oil, vinegar, paprika, salt red pepper and garlic.

1 to 10 scale? 10 being best?

8!


The taste is almost there-it's the texture thing.

Regular chorizo fries out into a mush as it heats up, The SC crumbles and there is not much fat in the recipe- A good thing!

I skinned the link-I cooked only half because you get twice as much soy sausage than a regular link
of chorizo. I made some diced fried taters, cooked in bacon fat,then cooked the chorizo, tossed in two eggs, scrambled it all up and added back the potatoes to heat them up and dug in.

No too bad. If you had take abreak from the pork or beef styles because of health/ weight issues, you still can have this as a replacement.

One thing?

Watch your heat and add some oil or fat to chorizo-it cooks quickly and I feel it could burn quickly!

How cool!!! Today for lunch I had eggs with chorizo and potatoes. It was so delicious. I'll try the salsa the next time.

I was watching Ask Aida and she made some stuffed potatos with chorizo and topped with cheese the other day. The Chorizo she used had no color to it.
I think it was spanish styled. Gowd, that rankles me , because people will look at the red chorizo and go, "EW, AIda didn't use THAT!"


Also, I had to laugh at AB making corn tortillas.

Out here you can buy HAND MADE tortillas. In some places you can watch the viejitas(Vee eh hee tahs) little old ladies making the dough and as they stand next to the griddle, they slap each tortilla into shape and cook them as they go....Great theater if you get a chance to see it!:D

We have a grocery store here called Freshco. I'm not sure if it's a chain or not. I went in there a few days ago. They have the biggest selection of Hispanic foods and spices I've ever seen. The spice selection alone is unreal. They probably have that brand of flour. I'll take a trip down there and give it a shot.:)

Cut the recipe in half and practice! If they don't have La Pina, look for other brands! I think MASECA is another type.

On Guy Fieri's show, "Diners, Drive-Ins and Dives" --- Guy visited a restaurant called the Chicken Basket that's about a five-minute drive from my house! I was so surprised when I realized where he was. I love their chicken soup, which they make from scratch.

Nixtamal! You get and A+ for spelling!

Now you have to add to his 'recipe' elbow grease, amor (love) and a little wrist action to make the 'hand formed' tortillas, Some people use a press, like he did!

Now think of doing that every day for breakfast and dinner! Lunch is a little more informal! and is usally made from left over breakfast stuff!

I had one of the best meals last night.

The cilantro rice was really good-when I make it next time I'll add an extra chile - I couldn't really taste the one serrano chile but over all it was really good!

Recipe?

Three ounces of cilantro
three cloves of garlic,
3.5 cups of chicken, beef or veggie stock.

Puree in blender the cilantro, garlic and 1.5 cups of stock.


Dice half an medium onion, and sautee-
Add 2 cups of rice, the puree and the rest of the stock,
cover and cook. about 20 minutes.


I am going to try this with some stir fry later on in the week.

I have seen parts of chopped, like the premise, don't like the judges.

Hokay,

Did anyone watch the Iron Chef/Crab show last night?

I tuned in to see what they were cooking and saw a chef from the Top Chef Show as a sous chef to the challenger lady chef.....

I was laughing because I was trying to figure out if she was on Hell's Kitchen or Top Chef...I think it was TC...anyway, she made a dish that she showed to the woman who had challenged Booby Flay and was told to toss it-she burned it!:eek::rolleyes:

I started to look for her on the TC sites but gave up rather quickly-but I also found out that Marcel-the guy with the "Wolverine" haircut got busted for a DUI and was criticized for 'stealing' an egg dish from another famous chef...

I know they don't use olive oil in some cases but I've seen at least three shows instructing to use canola rather than olive oil and that's in a dish that OO would have been great.
Aaron McCargo has used grapeseed oil several times. How much can that stuff cost???

I caught Aida M. the other day plating up chicken that was obviously raw and her assistant had to eat some from the same plate. I hope he got the cooked stuff.

IT's Hellman's, East of the Rockies!;) I saw that on a label when I was a kid and still wonder about it.

I think they really do not think about the viewer's when if comes to brands.
The reason they do not let brand names get thru is that they do not want to have to enter into any contract with a distributor.

Appliances and cookware do what is called a promotional consideration-they give the appliances for a blurb at the end of a show or a close up of the name badge during the show.

Also, they want a company to BUY time for commercials, so any name flashing is good for the company, it's free advertising.

The last thing about product placement and why people want to know what is being used is really simple.

People want to know WHAT is being used. Some products vary in quality-salt is salt, but when you get to exotic marks or brands people want exactly the brand the cooks use.

I guess a good example is tomato products. Every brand has a different taste and sometimes using another brand/cheaper brand will change the flavor of what you are cooking.

People get to be brand loyal for a number of reasons, they are the peeps that will buy the Official RR Cookware or Knives. A bunch of BS, I think-I you know your kitchen you can cook in anything.

I did not know they admitted to printing labels, I just saw the lettering on the cans/boxes and would laugh at the stupid names they came up-it reminded me of a movies I saw where they had a can of seafood soup and it was labeled something like Captain Jack's Chum Chowder..:eek:

I had never heard of grapeseed oil until recently!

Having bitten into some grapeseeds and noticing that they were bitter I would have never thought about them being used for oil!

I just checked online to see what it costs and saw three prices -6.84 to 7.99 for 16 ounces. Probably cheaper at the store?:confused:

Butter, or peanut oil or corn oil if I "need" an oil. It's a challenge, feeding me!

I'll bet it is. I once worked with a girl that was allergic to almost everything. She couldn't touch most of the materials we worked with so she had to wear gloves all the time(eventually, the gloves bothered her). She spent alot of time being tested somewhere(I want to say the Mayo Clinic in Jacksonville). I'm pretty sure she had to resign due to allergies.

I can't imagine being allergic to so many foods and having to be careful of everything I eat or drink.:(

The late night coming home from ingesting ethanol and inhaling hemp.

You stand in your kitchen and declare to your date whom you adore and have invited in for a bite to eat-based on tonight's ingredients-
I want to make Arctic Char, creamed corn and something with tamarind. You feed it to your 'date' and they soundly critique you after they eat the crap you cooked!:eek::D

Going out to eat must be impossible with so many allergies. I guess I've never thought about this. I'm slightly allergic to iodine so I'm itching when I eat seafood(my favorite food of all foods). That's my only issue. I'm really sorry that you girls have this problem.:(

Rachael Ray used to dress conservative but she is also now showing half of her boobs. I used to really like Sara Moulton and was sorry they took her off. I guess FoodTV is trying to attract the male audience with their porno show. :D

In the beginning of the show, they give explanations as to what they should do. They can use as little or as much of each ingredient. Why do they always use alot in each dish. Well, almost always.

Alex G. is probably my least favorite person on the FN. I can't stand her!!:mad: She's so full of herself. I hate that show she has too. She gives the word "smug" a new meaning.

What I despise the most about Giada is when she has guests. I know I keep repeating myself but.......she thinks she's the only person that knows how to cook. She acts even more goofy when someone is there. She's very very arrogant otherwise too. I've seen her on other shows and she keeps that big nose in the air.

Enough of the cleavage and porn music too.:rolleyes:

I love Paula's Home Cooking,I love the accent,She seems to be a fun person.

And i also like Diners Drive ins and Dives,I dont pay much attention to the way they act im more intrested in seeing all the little resturants,Some of the history on some of the resturants is amazing,The down fall is i always get real hungry watching these shows.

I love any show, Like No Reservations on the Travel Channel, that go into restaurants or focus on the food or chef- MY problem with GF is that HE becomes the story and his manners while in the kitchens is a put off.

I mentioned a show where he wiped a sandwich all over his face - apparently he and the chef were going to share it- so he did it to get the whole thing for his nasty self.

I love the show premise, just cannot stand the host.

I love Good Eats. Can't hang with Rachel Ray, she's hyper and her voice is like nails on a chalkboard. Paula is OK but her sappy southern charm gives me too much of a sugar buzz and I can get the same charm from just about anyone around here, LOL. I don't think I've seen Giada's show, and I honestly think Guy Fieri wouldn't have a job if he looked like everyone else. Good Eats is the show I watch the most on Food, but I really like No Reservations and Bizarre foods on Travel

I decided to watch Aaron McCargo's show today. I think it was pretty good. He did all Greek food. He wasn't too theatrical and I saw some of the old Aaron that we loved in the beginning. Most everything he cooks looks delicious but sometimes greasy. I would love to taste some of the dishes he made today.:)

GF is Mr. "I Am The Center of Attention". He wants it no other way. I don't get the big bite thing. It could be a food description(I guess?) but he literally tries to eat the whole thing at once. He looks like such a slob when he does that. He gets to the point of wasting food to be cute. It's not attractive.

He really seems to be a nice guy but we could do without the drama. If he could be himself, he would be fine, in my book.
On the other hand......that show he had on last night. I think it was "Guy's Big Night", or something like that. He was acting so far over the top, I almost think he's on drugs. Where does he get this energy?
I also didn't see his wife in the audience with the rest of the family. She must not like the limelight.

I suppose the FN needs some of their stars to be like that but he is so intense, I had to turn it to something else.

I think Paula Deen is too heavy with the Southern Belle routine. I respect the fact that she's probably worth millions but she needs to cut the drama too.:rolleyes:

I like RR's show when she goes on vacation. What a job. Her and her husband travel around and eat like kings. Her 30 minute show is too much. I hope the new ones(if there are new ones) will be more tolerable. She had that throat condition and I think she's had to slow down with the talking.

I think she is more unlikeable than not.

I did watch her program today-it was a rerun of the 'tomato' show she did-Check out her arm movements-RR has the spastic "St Vitus Dance" AG has the refined hand movements of a ballerina/gymnast!:rolleyes:

She is very out there.

The hispanic guy is another smug dude. I find him to be annoyingly amusing.:rolleyes:

I think Aaron is pretty humble, for the most part. I love his recipes and the soft side of his personality. He's a chef and not a performer. Maybe FN decided to tone him down. Watch it and see what you think.:)

I've never really eaten Spam. I think it has almost a cult following(if I can call it that). There are Spam festivals, etc. Some people love it. There are all kinds of recipes. Maybe I need to check that out too.:)

How did you eat it, Richard? Plain, fried, in a casserole ? What are the ingredients in it?

We saw Chopping Block - we are watching "Last Restaurant Standing" on BBC America, and I though the description sounded like an American version of that show. Same "couples" compete - one 'front of house' and one cook on each team. In the British version of the show, though, it's a French chef, Raymond Blanc, leading the British teams, so I guess you need to have a foreign accent to be the big baddie on a restaurant competition?

It looks interesting - but in the American version, there are just two restaurants, in the Brit version, each 'team' gets their own restaurant to try to run.

When I was a teenager, my dad would get Surplus Spam which is an even, um, less quality grade than commercial Spam, if you can imagine. My mom would pack my school lunch and the kids could smell me comin'. Just thinking about it today makes me gag. Some Surplus goods were tasty; the butter was really good and chicken in a can was, too, believe it or not. Open the can and an entire cooked chicken would come out; great for soup. But Spam? Forget it. It always reminded me of congealed brain matter, not that I would know what the looks like. (Have I sufficiently whetted your appetite?) :eek:

I had Spam, cubed, in M&C. It gave it a good salty flovor.

Spam... that's like the PA Dutch Scrapple, but made out of regular pork products, not the smoked pork.

Still not very yummy. And like Spam, made out of the "scraps" of the pig.

HOWEVER... if I'm really craving food from home, I will go to my mom and dad's and have them get some of the scrapple out that their friends make when they butcher. That's the only kind I'll eat (I know what they put in it, so to speak).

I remember being really broke and eating fried spam and mustard sandwiches.

My friend at work, Billie, and I have been on a Spam kick. We have been buying those little SPAM single packets and having Spamwiches for lunch. People look at us like we're crazy, but she and I have done it once a week for the past month. We're nuts. :)

I HATE the stupid little ads they do in the corners of shows that I watch, I was watching booby cook on the grill and I saw something on the screen...

I thought, Dang, that looks like......RI!!!! He was wearing his dark shades and had his arms crossed in front of him....I remember they ran him off the air and could not believe it when I read that there was NEW EPISODES OF DINNER IMPOSSIBLE coming soon.....


I was so happy I wanted to pee! Kidding, He is a hoot and I really like his manner and the way he does his show. I am looking forward to seeing him again.

I could not stand MS-he's too creepy and has a really phony kind of persona.

It started out strong but the numbers declined.

The more I watch CHOPPED the more I dislike the show.


Now, I do not know where they pick up the people who are the contestants but I was watching the Duck/Animal Crackers episode and turned it after I saw one gal cooking duck. She gets to the last 10 or so minutes and spies some green onion/scallions.

She says something like "green onions, do I cook them or do them raw?"

It was really obvious, you cut off the root and clean your ears with them..

On one show AG made a comment about smelling something burning, Another judge made the comment, "Yeah and you will be eating it...."


They should do a show on the after effects of the food on the judges!:D

I thought it was pretty strange that a chef didn't know what to do with a green onion. I know she was a pastry chef but c'mon!! Apparently, it lost the competition for her.

Has she never seen green onions on a dish she's ordered somewhere? Really weird.:rolleyes:

I liked the chef that won but.....I think his soup won because the judges were buzzed after eating it!;) Just kidding. I think he could have done something with those animal crackers though. I guess the other chef was so ditzy, he won by default.:D

I Have to laugh because GF doesn't cook with coffee!

I firmly believe that there are two kinds of cooks on the planet.

Ones that have made a dish where they put something like watermelon, bourbon, potatoes and oatmeal together, laughed about it, then tossed it out.

The second type, who cannot deviate from grandmother's recipe file, are the kind that don't have the confidence to try something kooky.

I saw it last night. I didn't know what they could do to enhance the butter to make it the main taste. BOY!! Did they surprise me!! Those dishes they made looked wonderful. I'm glad it was a tie.:)

I can't hold out on this any longer. I have to mention it.

Complaint Number 1
Chopped: I like this show but I'm really put off by the obvious nastiness of some of the chefs. I can't get past how they handle the food. It's all hands and some of them seem unclean.

The show with the guy double dipping bothered me so much, I'll think twice before going to a restaurant again. It was a rerun on Sunday. I didn't like that guy at all because of his attitude but the DD really put me over the edge.

Complaint Number 2
Ace of Cakes: I have the same problem with this show. They treat the cakes like they're not going to be eaten. Unfortunately, they are usually eaten. I can't believe some of the things that go on in close proximity to the cakes on the shelf or in progress.
I also look at some of the workers and wonder when they last washed their hair, etc. None of them are wearing hair nets or any other protective gear.

The business caters to alot of wealthy people. I wonder if they actually watch the show?:eek:

Ugh, enough with the penny pinching. Every thing she touched was broken down to the cent. Very obnoxious to ring up every ingredient and total it up after the meal is cooked.

"This meal cost 7.85 to make and each person eats for......"

What is wrong with Alex Groanacelli on Chopping Block?? Hmmmmmm......she's got serious personality disorder issues. She scares me. One minute she's smiling broadly and the next minute she looks like a serial killer. That is one weird lady.

That segment where the meat gets dropped and the chef uses it, really shows me that that was all theatrical and rehearsed. Why on earth would the guy drop meat and use it? In any setting, I would hope he would just throw it away. Especially when people are watching him and it's on camera!! It's all part of the show.

I am really looking forward to NFNS this Sunday. YAY!!

I also saw the hamburger show. I can't imagine where those people get those ideas. What's wrong with a good old fashioned burger with normal toppings?:confused:

I saw her FN bio and it left me with more ???? than answers.

Now, I was obssessed, for all of three seconds about her being married...and I finally went in search of the answer.

I noticed that she wore a nice gold band-I find that the HUGE platinum hoops with giant pieces of carbon on a hand while a person cooks as being totally ridiculous- and thought, "Hmm, I wonder who she is married to?

I came across this article - funny because I too find the part where she gets all silly about the drinks a hoot.

Last I heard, Sandra Lee was living with Gordon Elliot. He's the producer of her show and Paula Deen's, etc. I don't know if it's true.

That article is a hoot. I never realized she was married. Between what she's earned and what she got out of that marriage.......WOW!!! She's worth a bundle. I have to say I like her alot more than I used to. She stopped rolling her "L's" so much and her show isn't too bad. I really enjoy the shortcuts she takes and I think she has some great ideas.

I watched NFNS last night. I thought this group was a little more talented than the last few seasons but I had to take it back as the show progressed.

Brett was on my nerves from the beginning. I think the big guy with the glasses could be entertaining at times, the good looking guy is too much with the attitude, the black girl seems sweet, the girl that made the apple tarts is a little flaky but ok so far. I can't remember anybody else. Oh yea, Debbie, the Korean/American girl. Why was she acting the way she did after they got back from shopping? Her way of shopping was ridiculous. Just fill up the carts and forget about what you really need?

That FN group was at their very arrogant best. Giada seemed bored. Why didn't she just stay home?

Did anybody else watch last night? What did you think?

That pound cake dessert was so lame, I know this show is all made up. Nobody in their right mind would serve that with a straight face. $1200 to spend and you can't get a decent dessert out of that?

We watched last night - I do think they could have come up with something better for the dessert - it looked, seemed and was an afterthought. A whole kitchen full of cooks and no one could do better than that?

It does seem like an interesting group of people - the apple tarts didn't look that great, but everyone loved them, so they must have been better than they looked. The woman who made them does seem a bit too highly strung to last long. I don't see the 'nutritionist" lasting long either unless she does better with her food than a salad and just plain Swiss Chard.

It will be entertaining, anyway.

Alex G has to have some kind of weird vibe going on......She looks like she was on a real bender and just showed up on a whim...the rest were uninspired and boh-ring!!!!! I had to laugh at DG talking to the people about serving him cake. Everyone knows that if it's not a Charm City Cake, it ain't poop!

Let them eat cake?:D:confused:

Like last year, Giada don't do 'spunky', Morimoto is understandable-the captioning is unnecessary, I am starting to really dig Anne Burrell-LOL, it's the freaking hair, it's always perfect. I found AB's comments about watching the contestant's show and being all wired up really funny...she don't watch her self on TV?:D

I got to the point in the show where the BF was roaming thru the kitchen doing a "tom collichio" and checking out the recipes, Ya think he wanted to get paid more to do that?

I tuned out when the judges started with the "GO BIG/Big personality" speeches. They'll be asking them to tone it down later on.

I'll watch the rerun an write a more 'cutting' review later on?:eek::rolleyes::D

I forgot to mention Anne Burrell. I absolutely love her!! Her hair is the best. That's the hair I want. She looked great last night too.

The nutritionist wasn't very creative. Although, I loved the first picture of the salad she made. I just roasted some beets over the weekend for the first time. They were beyond delicious!! Her salad wasn't bad but too easy.

Some bobo hollows out a tomato and it's a 'new wave' food sensation? There is an elitist ideal that goes on here in Lost Angeles.

Quarter a tomato,seed it, chop up some lettuce and bacon, then serve it as a some 'deconstructed' comfort food staple?

I noticed that it was touted as a B.L.A.S.T. bowl?

I thought it was C.R.A.P.

Because we live in an area that promotes grilling almost year round....

In the Land Of The Easily Amused, there is only so much to the standard BBQ fare. The "creative" ones get ideas and that is why you see grilled lettuce.

Booby Flake is into grilling anything and everything. It makes no difference what it is. As long as it's grilled and filled with chilies, he's fine with that.

There is quite a bit of food that makes me wonder about what prompted the originator to do it! The grilled lettuce thing is probably a Nor Cal invention. You can go on some nifty winery tours, they will feed you a grilled lettuce at a tasting, You are so drunk you don't realize what you are eating until someone asks,;)

We have tons of different people and cuisines out here. The Pacific Rim is a wonderful place. (We just have to get N Korea to behave). There are some stores in the 'towns'-China, Korea, Thai-where you have the cooks out on the sidewalk with a smoking BBQ.

The Mexican supermarket up the street pulls out a GIANT BBQ into the parking lot and starts grilling chickens. The grill surface holds about 20-25 whole birds, they also do marinated skirt steak for tacos and burritos.
When I walk to the store and the wind is right, you can smell it about 2.5 blocks away.


I have to go on about the grilling thing. One of the most special things about So Cal grilling, is that where there is a will......

The huge steel barrel BBQs are VERY popular- You can find one on every block. I have seen people put together some wild contraptions in order to make a grill.

I passed by a GF program where he was doing a seaside party in Mexico. He was 'laughing' at the grill he was using.

In typical Mexican fashion, someone took a steel tire rim, welded some rebar legs onto it and voila! Instant BBQ! It was really cool -I wish I knew how to weld! I have seen everything from a paint can, with holes punched in the sides and a scrap piece of chicken wire for a grill,s to someone taking a steel barrel, splitting it lengthwise and adding a grill made of steel screen door
material.

I love my heritage.:D If it holds hot coals?

The other thing that cracks me up is around the summer holidays you see guys with giant BBQs in the bed of their trucks, heading for the park.

They don't mess around with the small stuff!

Back to the grilled lettuce, when you see someone with a 'Cah Lee fuh Nee Ah' accent and they try to pull one over on you by giving you something that we eat out here, do not believe them.

Oh, people do pay 15 dollars for one shrimp, 12 toothpick slivers of mango, two olives and a squirt of Sriracha sauce and swear that it's the best thing on the planet.

They are the ones to blame for grilled lettuce.;)

Top Chef Masters?

I didn't much care for the hostess..she irks me in a strange way.

She was at some kind of a press/food gathering here in Hollywood/Lost Angeles last week.

She was walking the area where people were eating and someone noticed that she wasn't tasting anything. When asked she said something like, "If I eat I'll just throw it up".

Nice to know.

I loved the show in Mexico you mentioned. That grill was really cool.

Yesterday, on "Grill It" with Booby Flake, someone was grilling watermelon. She made a salad out of it with onions and a couple more ingredients. BF loved it. I can go for the grilled melon but she lost me with the onions. Onions are just too savory for me to mix them with fruit. I can't stand to eat chutney because it's usually fruit with onions. Yuck! :(

I watched NFNS on Sunday but I have forgotten the whole show. I guess I was busy doing other things. I'm sure I can catch a replay of it.

If I accidentally turn the FN on and see GF "Off The Hook" again, I'll probably hurt myself turning the channel. What is with this guy? I'm seriously afraid he's going to blow a gasket if he doesn't calm down.

I watched "Chopped" last night. I think it was the season premier. The ingredients were the worst I've ever seen. What in the world are sea beans? I lived by the ocean most of my life(still do)and I've never heard of them.
Does anybody know what they are and have you ever eaten them?:confused:

I hear you about the chutney and onion/fruit combos. Blech.

I know that it is a 'taste' thing....I just do not like the sugary sweetness of some foods. Example? A few years ago my brother was cooking a T-giving day turkey, with oyster stuffing.

I had to get past my gag reflex when I tasted it. It tasted like bread with oysters, raisins and carrots and brown sugar, It was soooooo sweet I had to push it over on the plate so I could taste the rest of my meal.

I can do the apple/berry/walnut/sweet styles of stuffing, but anything that is too sweet just turns me off. I just don't get it.

Interesting story about the sea bean. That is the only sea bean I've ever heard of in my life. I've seen those on the beaches here. It's been a long long time but I do remember those.

On "Chopped" last night, they must have had the plant that they come from. Very interesting.....

I found it to be a turn off.

While the thought of a nice looking gal eat a hamburger on your front porch is kinda appealing, I don't want her to smell like "secret sauce" or red onion, or wiping her greasy fingers all over my pillows, later on.....:confused::rolleyes::eek:

And if she's eating a burger with a bun littered with those little balck poopy seeds, I don't want her to stand up and spill them all over MY FLOOR.:(:D

Food is sexy, Spending a few hours with a SO in the kitchen is way better than a sloppy hamburger on some gum encrusted sidewalk.

An old college t-shirt, sweats cut into shorts and a pair of flip flops is my kind of dressing up for dinner.

Seriously, I have seen the commercial about 4 times and I still don't know what kind of hamburger it is.

The only thing I think about is the greasy clump of ketchup soaked meat, dropping off the burger and having to hear the moans and groans all night long...

If I see food on TV, I'll stop there and see "what's cooking" (pun intended):rolleyes:

Today I stopped at the QVC channel when I saw something being cooked.

They were selling tilapia filets-each 3.25 ounces- 14 for $44.95.

I checked the price per pound and it came out to 15 bucks a pound.

I bought a bag of four, gutted tilapia, individually wrapped- I have to check the price per pound and the weight of the packaging- I wrapped them in foil, tossed them on the outer edge of the grill. After they cooked I put them in a plastic bag for later in the week. I steamed veggies and tossed the fish on top for the last 5-7 minutes to heat.

Even thoough it's a spiny fish, it is one of the best eating fish you can have.
It's white, tasty meat that only needs salt and pepper as seasoning.

I know that boning fish for filets is an art, but I just can't see paying 15 dollars a pound for less than three lbs of fish! Half the fun is puling apart a fish with a fork and a piece of toast.:eek::)

I don't know why but I never get to see Top Chef much. I watched it a few nights ago and I enjoyed it. I've noticed that these chefs on tv are on all the shows. Some of them at least. I saw a blond lady on Top Chef that was also on Chopped last season.

I have a picture of CA, in my own mind, of all residents out on their patios, grilling around the clock.;) There is just not that much grilling going on in Florida, as far as I can tell. Not in my neighborhood anyway. Usually, if they're grilling, it smells like the cheapest meat you can buy. I think it's too hot to go out and cook. It's just unbearable. People are stuck inside the house or shopping in the cold AC.

Richard, for years, all the restaurants here have served tilapia. It's real common here. I love it. I buy it all the time and cook it too. It's really delicious. Grouper was a big staple here but it got so expensive, many restaurants went to other fish like tilapia.

I also love mahi mahi but I haven't had any lately. I agree--$15 a pound for fish is ridiculous.

Tomorrow nights NFNS looks like alot of the contestants are in tears. I think someone is in tears every week so far. I would love to see Jamika win. I think she's delightful. I read somewhere that Debbie is probably going to get it. Let's face it, Giada likes her so she must have something going for her. I think she might be the first person Giada has ever liked.

What does everyone else think?

You have to live in a Mexican neighborhood. Out here people find any reason to fire up the grill. The worst possible thing to happen is you walk outside your house in the middle of the week and you smell someone cooking! You can smell the citrus, onion and chile in the air, after I identify what the neighbors are cookling, I head indoors and open up a can of soup:rolleyes.:;)

Out here, the main meat is marinated skirt steak, it's cheap, not too thick and you can feed an army with a few bucks. You can buy pre marinated meat, a few dozen corn tortillas, Someone will make the salsa, A pot of beans, someone makes rice.

One guy grills the meat and heats tortillas, the meat is tossed onto a butcher block where someone takes a cleaver to it! It gets dumped into a bowl and everyone goes buffet!

Maybe you don't want people partying in your hood.

Sometimes we get parties that go until 2-3 in the A.M.:D:eek:


BTW?

Yeah, it does get way too hot to cook outdoors in the summer.:eek:

Sounds like my kind of party. People in Florida aren't nearly as clever. The smell of citrus, chiles, and onion in the air would drive me crazy. I would have to follow my nose to the nearest fiesta.

The Weber Grill Restaurant is really unique. I didn't catch the location. The kitchen is all Weber charcoal grills. All their food is grilled. I couldn't believe the fire coming up out of those grills. They grill all the desserts too--grilled pineapple and bananas. Those chefs must be burning up through their whole shift. When they go home, they're reeking of smoke. Very interesting. The chef said he tried grilling watermelon but he wouldn't recommend it.
Wasn't there a lady just grilling watermelon on BF's show and loving it?

It was a good show. I think FN was honoring grilling yesterday. Maybe the whole weekend.

And, yes, there was some Romaine lettuce on the grill.:)

I saw the Weber program...being a typical male I was in awe of the grills. That is something I'd like to have, just to wow the neighbors.:rolleyes:


Citrus Marinade?

This in not an exact science-lol, my recipe!
Go slow and add or subtract as you go along and TASTE, TASTE, TASTE!


Orange juice, Lime or lemon juice, About .5 cups of each.

You can use OJ and the lemon, lime or all three. You do get a different flavor
according to what you use and how sweet/sour the citrus is!

1/4 cup vinegar.
1 tablespoon of chili powder
1 tablespoon of garlic powder
1 tablespoon of meat tenderizer, like Sazon.
salt to taste.

Slice a small yellow onion or take about 4-5 whole green onions and a pinch of fresh cilantro. You can also toss in a few orange slices to the mix.

Toss it all in a bowl, toss in the meat, onion and cilantro. Let is sit for a few hours, over night is better? I plastic bag is fine, so is a covered dish.

Get a good fire going and toss it on the grill!

Don't leave the onion in huge chunks, do a julienne cut on it-most of it will fall thru the grill, but it already has flavored the meat, Green onions? Grill them away from the hottest part of the grill. You can eat them whole or chop them up to add to your meat.

The meat cooks up pretty quickly so have all your stuff ready to go.
The basic fixings are chopped onion, fresh cilantro, chopped tomato, lime or lemon slices to squeeze on it - or you can toss together a fast salsa with all the above and a jalapeno. Again, this isn't an exact recipe, so go 'thirds' of the veggies, add some lime juice and a jalapeno-to taste!

If you heat your tortillas on a grill be careful about turning them-and don't heat up too many at a time, either kind get hard if you do not eat them quickly. YOu can take a hand towel, folded in half, and put them there as you go along.

I never realized how many uses there are for cilantro. Eating it alone is difficult for me. Mixing it with other things, it really tastes great. Especially in salsa and guacamole.

Has anybody seen the new shows. "Best Thing I Ever Ate"? I can't stop wondering how all those chefs have been so many places and just happened to take a camera crew with them to get film for the show. I'm being a little sarcastic, of course. So far, I think I've seen three of them. One was for fried food, BBQ, and food in general.

Did they really go to these places and discover these items themselves or did someone else go and discover the item and FN assigned that particular chef to the bit? Where do I come up with these questions?:rolleyes:

Michael Symon's definition of two kinds of people:::people that admit to loving fried food and those that love it but act like they don't.....there is something to that. I know people that tell you that don't eat fried food but it's usually the first thing they pick on a menu.:D Do they not know that certain foods are actually fried?

I almost lost in when Duff Goldman ordered and ate shrimp heads. Has anyone else heard of this at all? Is it popular in the big seafood areas of the country? It was disgusting!!

I had the tube on and was in the kitchen cooking. I could hear GD 'making out' with her food. It sounded vile-the moans and groans!:eek: Then I thought the same thing......Does she roll over and go to sleep?

I saw part of the "Best Thing", It's all re-creations and probably places they had recommended to them.


Shrimp heads, in different forms aren't uncommon, but they are deadly.

Well, not deadly but.......

If you look at a shrimp head carefully you will see a sharp barbed spike that protrudes from in between their eyes. I was eating dried shrimp and got that spike shoved into my gums. I'll spare you the details but it's cost me dearly!:confused:

I had to laugh, just after I posted the last time, someone fired up a feast next door, you could smell citrus all over!


Fish........I have only done the 'foil fish' packages.

I take foil and place a thin layer of potatoes or lemons down, then the fish/fillets, lemon pepper, top the fish with the lemons or taters and wrap it up.

It you choose to cook a whole fish? A few green onions in the belly will give the fish a nice onion-y flavor, cilantro is also a good stuffer!

Trout is far and away the best fish to cook this way!

The potatoes/lemons keep the fish from sticking to the foil-they are pretty much stuck to the foil, so do not bother to try and salvage them for the meal.

A citrus marinade will 'cook' the fish and make it flake, like a ceviche, I have to admit I never have prepped a fish too much before cooking it.

I checked the prices on the tilapia I bought. It was 5.98 for about 6 lbs of fish. You get the head and have to dig around for the meat, but it was well worth it. I like the whole fish on the plate. It is a challenge, but food should be fun!

I am seriously hungry for some fish right now!! I can't wait to get to the store for some fish. The foil pack sounds delish. I'm lucky to have a great fish market/restaurant about a mile from here. A little pricey but fantastic.

The entire shrimp head looked dangerous to me. Duff was loving them. He seems like a guy that would eat anything.

Ahhhhh......to walk outside in Florida and smell citrus wafting through the air. I'll be looking for a Mexican family cooking out.:D

i watched the last 40 minutes of the program last night-The groupings and food choices for each set of chefs is pretty predictable.

The 'offal' group had a pretty good grasp of cooking the meats they got.

I was pretty interested in the pig ear and the menudo.

I'll watch again to see who else goes to the final show.

I was in St. Augustine yesterday and bought some mahi mahi. I'll try the fish with citrus marinade and potatoes. I can't wait. Probably tomorrow.:)

I have had lamb, but never cooked it. It's not common in my neck of the woods. I do see it in the more expensive 'hoods.

The last time I ate lamb, it was pan fried. I was surprised because of the denisty of the meat. Nothing bad about it-I was used to the texture of pork chop. A good PC makes you work for a bite. Lamb is a more delicate meat.

I hear that rosemary is a good herb to pair it up with. Otherwise, I have nothing!:D

I don't like lamb any more but I cooked it years ago and ate it up! I quick pan fried it as I did w/pork chops and sometimes I broiled them. Just added a little rosemary and we were good to go. Now they taste odd to me, musky or something. That isn't the right word but I can't find the right word. Give it a whirl; you may love them. My son still does.

Yes, I forgot to mention the mint jelly. I don't care for that at all, though. As for the rosemary, I kinda rub it into the meat a little, rather hard to do w/rosemary but it always came out pretty good.

I love lamb, but unfortunately I'm in the minority in this house. I usually just buy a half leg boneless roast rather than chops, since the chops are so expensive. I don't like mint jelly with it or rosemary. so I just score the top of the roast and stuff fresh sliced onion in the scores, and sprinkle with pepper and roast. Dee-lish!!!!

I personally like roasted potatoes with the lamb. Don't peel them - just dice them up and throw them in the same pan with the meat. Also - anything apple is good - such as spiced apples, or maybe a baked stuffing with apple, onions and celery. Just about anything goes good with lamb IMO.

How about cooking it with indirect heat on the gas grill? Throw on some fresh corn on the cob when it's almost done, and serve with some nice homemade potato salad, and a salad of fresh tomatoes and onions in olive oil.

Thanks for all the lamb info everybody. Mint jelly sounds like something I wouldn't like for any reason and certainly not with a meat I'm not even accustomed to yet. Yuck! I'm so happy all of you don't like it either. I just couldn't see the connection.

Then we had the incident of Debbie being hit in the head by Michael with the oven door. C'mon....are we stupid? Neither of them saw that coming? If she was hit as hard as she pretended to be, she couldn't have pulled herself together so quick. Did anybody notice there were no marks on her face at all? I was thinking a black eye would have been a given. I guess that entire incident was to take the happy attitude from Michael for awhile so we all won't think he stays ecstatic.:rolleyes: Not to mention the drama involved when Debbie got whacked.:(

I can't forget to mention Jeffrey and the lousy dish he cooked. Did he have a brain freeze? How can he be so savvy every week and all of a sudden, he can't think of anything? That's his job, his life, etc. I was getting sick watching him cut up those lobsters. That was brutal and it could have been left out of the show.

I expected they would oust the healthy girl-Katie? Instead, they got rid of Teddy. Teddy was sorta forgettable.

I made my mahi mahi yesterday but I had to cook it inside because of a grill incident(long story). I marinated it in orange juice, lime and lemon juice. I also sliced fresh lime and lemon for the foil packets I made. Garlic, onions, peppers(assorted), smoked paprika, basil, sea salt, peppercorns ground. I wrapped the fish in foil after marinating for about 30 minutes. I precooked some sliced potatoes and added those and baked the packets for about 15 minutes at 425 degrees. It was delicious.

I haven't done the lamb yet but I'm dying for it now. Ellie, I'll join you too!!:)

The contestants can cook, but making them pair stupid ingredients and giving them time limits is the problem.


Here's the rub.

I would not pair Captain Crunch with tuna, nor put grapefruit with lobster.

The idea that someone would plan a meal with ghastly combos like that has no bearing on what people can cook.

Steamed fish is the absolute best.

If I cook fish I like to grab a piece of hard bread, butter it up and use it to sop up the 'fish juice'! that you get!

OR

(Again, this is a make as you go recipe!)

Gather up all the packets, drain the broth and place into a saucepan. Add milk and butter, a little cornstarch and heat. A splash of white wine and you are there!

You can leave it rough or run a boat motor thru it, strain the solids out for a smooth sauce.

Terry - if you have lamb chops - I'd recommend broiling rather than pan frying. Much more tasty that way IMO. My Mom used to fix them like that all the time. Geeze - I can remember when lamb was cheap and we had it often. Same with scallops - they were always on the dinner table.

What happened????? I love them both, but only rarely buy either because of the price. :eek:

The health of the Chesapeake Bay has been negatively effected by various things. Also, now people can get scallops shipped to places like Colorado, so there is a broader market for a smaller quantity, that's why your scallop prices have gone up so much! The people in states in the middle of the country, though, probably are glad to at least have the chance to buy them at any price, which before the days of overnight shipping, wasn't a very good idea!

I lived on the Narragansett Bay growing up! :D Dad had a boat, and we were always going out fishing and clamming in the nice weather. No clam rakes for us tho - we did it the old fashioned way - with our toes at low tide. Those were the good old days!;)

When I visited Maine about 5 years ago, we ate at a restaurant that served all kinds of seafood. I ordered a platter, all fried. Don't usually order fried but I was on vacation.;) I was served these gigantic sea scallops, fried to perfection and some unbelievable tartar sauce. That was probably the best seafood meal I have ever eaten in my life!!! It was in a small town. I can't remember the name of it. I will never forget it.

There is no point to this story except for the fact that the talk about scallops brought back those memories. Thanks ladies.:D

Yummy!!! I'm with you, Ellie. Maine lobster sounds so good!! I don't know anybody than can afford lobster. I always look at the lobsters in the store and know they are the same ones I saw last week.:)

I love crab too!!! Love it!! We have blue crabs here and they're just like your's. Alot of work for a little meat. I really enjoy making crab cakes when the big can of Phillips crab meat goes on sale.:)

I had East Coast crab at the family reunion a few years back, Ill stick to Alaskan King Crab legs.

Can you believe that I had crab legs for the first time just a couple of months ago? They were good but too much work, definitely not the meal to have when you're really hungry and my friend had to keep helping me w/removing the crab from the legs. That was really adult. LOL When my son was home, we went to a special restaurant for his birthday and I ordered lobster, which I hadn't had in probably 20 years. It was delicious but too rich for my aging tummy and I paid the price the next day. I'm the same way w/shrimp, though; I can only eat a little.

I'm in the same boat, Ellie! Raised on fresh lobster (you don't want to know how we got it when we were kids!), I came to Maryland, got introduced to the blue crab, and said - you want me to get MEAT out of that thing? You're kidding! My husband spoils me; on the occasion we're at a crab feast, he'll share. He knows I hate picking them, but I do love the meat! :)

It was the pan that clipped her on the cheekbone, and he was moving pretty quickly, so it was a hard hit. You could tell afterwards that that side of her face was swollen, but only from certain camera angles.

Makeup can hide a bruise, but not the swelling. I wouldn't be surprised is she had a black eye the next day, but at least she was in a kitchen, and there was ice to put on it!

They sorta come and go, Elyse. The ones that I think are looking good, screw up the next week and vice versa. For some reason, I think Melissa looks pretty good and so does Debbie. Those two are fairly consistent.

What does everyone else think? I still think Jamika is the most pleasant and easiest to listen to for the times I've seen her.

I was watching some TV when I came across a program in Japanese and thought I saw someone familiar.

This dude looked like the "Chairman" on the Iron Chef show. Didn't think anything about it until today.

I stopped on the Sci Fi channel for a second and there is an actor that looks like the Chairman on the IC show....

I checked the IC site and sure enough, it is him. I never knew he was an actor.....Seems like he has a pretty extensive Marital Arts background too!

There is nothing irritating about him.

He presents the food with none of the stories about stealing recipes, where he ate it, where he went to eat it.......He just gets into the cooking and is basically boring.

He does remind me of a university professor doing a cut and dry version of his class. You know the kind-I wrote the text, so pay attention!:D

He does cook some bizarre stuff. He just did a BBQed eggplant and some kind of Indian/cheese kabob!

Strange, but worth a look?

Aarrgh! I disagree with the decision, but that's just on the basis of what I saw this week. I also missed the first part of the challenge so I'll try to catch it Thursday night when it's on again.

Did anyone see "Iron Chef America" where the food item was bananas and plantains? Who won? I wanted the cameras to show more of them working with the plantains because I've read they are very nutritious. Alton Brown said you can use them like a starch.

A short lesson?

A plancha is an iron, to use to iron clothes. to planchar is 'to iron' in espanol! Pollo ala plancha is grilled/griddled chicked. Women would take steel blocks-shaped like the irons you see today-and heat them on stoves in order to iron clothes.

The iron had a stand that was placed on the griddle to heat it up. The iron was placed on the stand, heated and used.

The griddle under the iron stand was used to cook chicken, hence the pollo a la plancha reference!


So forget everything you heard!:D


I have to hate on Booby Flay. This guy is a moron, the ultimate in cooks who 'think they are bigger than the rest'-I have to laugh about something else.



He made a comment about the Asian woman, something like, "I was hoping her Asian flavor would come through". So every one with an ethnic backgound has to produce something that reflects their skin color, features, background?

Again, I think that they are just looking for the next "Ethnic Food Star".

That said?

There is a definite slant to who they want to keep on the show.

The whiner stayed on, while the guy with the wild hair, tattoos and big mouth got booted.

The next ethnic food star is exactly what I was thinking. I remember Debbie messing something up on the first show and they've let her stay, singing her praises most of the time. How many more snafus is she going to be allowed? Hmmmm........

Michael was driving me crazy last night too. "Who loves you?"--over and over and over. I was thinking how many times he must have done that altogether. Those guests must have thought he was so annoying. I really thought he might stay and Debbie would go for about a minute. They need Debbie~~

BF said he was hoping for some of her Korean flavors but didn't he just say last week that she mentioned the Korean thing too much?? I can't keep up with these people.

This isn't a terrible show, but it earns a place on our Worst list by failing to live up to its compelling premise. We love the idea of a food travel show where a guy drives around in a '67 Camaro spotlighting the best greasy spoons across the country, but did the guy have to be Guy Fieri? Fieri, the winner of Season 2 of "The Next Food Network Star," is about as bland as they come and offers no real insights into the food or culture of these retro dining establishments. When the most interesting part of your personality is your spiky bleach-blond hair, it's time to relinquish your hosting duties.



"$40 a Day" (Food Network)
The Food Network's inexplicable superstar, Rachael Ray, cut her teeth in this show that challenged her to visit different cities with only $40 a day to spend on food. Offering tips to budget-conscious travelers is a noble goal, but everything about this show rings false. The production crew takes over a restaurant that's obviously been researched in advance, then expects us to believe that Rachael just popped in for a casual meal. What's worse, Ray has the gall to tell an underpaid waiter that she can only afford a 15 percent tip because she's on a budget. This show also has the distinction of introducing the world to the insipid catchphrase, "Yum-O!"


Anthony Bourdain, who's show was picked as one of the best, has often ragged about RR and other people on the TVFN as not being chefs. Fair enough, But AB has been cruel to RR by bringing up her non-tipping ways.:D

I love the description of both of those shows. Really good and spot on for sure. GF, I never thought of as bland but he doesn't teach us much of anything on that show. He just tries to be cute and see how much food he can eat in one episode. I have learned some things from the people he visits.

I just watched tonight's new episode of Chopped. The judges were so critical of all the chefs. I was hoping they would say something nice to one of them. All three of them maxed out the arrogance meter. I honestly thought they were praising the chefs and then they blasted each one of them.
Arrogance is a requirement for a judging position on the FN.

TVFN makes the travel/cooking shows seem like a clinical experience. (What do they do with the blooper reels?) The trade off of having RR sit in your place for hours trying to get a shot perfect and getting people in from the free publicity may be mininal?

But I thought Debbie failed as the expediter at the party. She just lucked out because the committee liked her dishes better than anyone else's. I thought there were several occasions when Jeffrey needed to take charge - when the menu was being planned and getting more and more complicated; when he knew each individual could not exceed $300 at the grocery store or they'd be over budget; and when the food was just not making it out of the kitchen, he was schmoozing with the party guests. But he made it through another week anyway. We'll see what happens this week. I predict that Debbie will be one of the final two because the committee seems to like her.

Oh, I forgot some of my other complaints!

I sent the FN an email about BF and the BBQ lid. My standards aren't that great, but I draw the line at plopping something like that on the ground and using it to cover the grill.

The Delicioso woman is a a shrimp-I saw her on a Mex program cooking with someone and I thought she looked kind small- any way, I looked it up and she's around 5 foot one or two.:eek:

The other hispanic lady - Daisy -was cooking with her SO and they were cooking food that reminded them of their vacations or some part of their lives. They kept talking about the dishes and kept slipping into Spanish...I don't care or mind, but thought it was very weird and rude maybe?:confused:

I don't see the reason for bringing 'family' on the programs. It's irritating to me.

Watch the next FNS when it starts again, I saw they are taking applications for the next round, you will see the same 'recipe' for contestants.

The first winner was Guy.
The second one was the crazy bistro lady.

This one has to be Debbie.

For nothing else but to show the percieved need for "international cuisine".

Ratings is the name of the game in TV. So the networks look at the demographics and how to tap into that market. There are a few Asian cooks, Ming Tsai, Tommy Tang and Martin Yan who would be great for the network-I remember Tsai being part of the FN lineup years ago- By holding a "competition", they can get a cheaper version with a game show thrown in.

The winning talent gets a short term contract - I think it was six shows? The total number of shows for both projects is 16.

When you tune into PBS you see the chefs there hawking their cooking CDs and there are about 30 shows in each series? The PBS shows are produced with almost no commericials and the sets are pretty bland. But they teach you how to cook and the personalities are somewhat kept in check.

The NFNS is bearable when you stop thinking about all the politics and stupidity.

I was laughing at the studio challenge- if anything happened on the set, the floor person yells "CUT" and they do it over. Why make the person panic by handicapping them during a screen test?

What was the purpose giving the cooks a chance to pick out their recipe/food then changing it?

I have never seen any chef on the channel stop in the middle of a show and say, "I don't have the ingredients to continue, so I am changing the menu!"

I wasn't surprised that Jamika was ousted - she kept doing exactly what they told her NOT to do, forgetting to smile and be pleasant even when stressed. That's kinda a big requirement for a TV host, doncha think?

I do think it will be either Debbie or Melissa, as both have a specific target market they will appear to, and Melissa has gotten better at controlling her reaction to stress, where Jamika got worse.

I think whatshisname - had to go look it up, I can picture him, but couldn't remember his name - it's Jeffrey - doesn't seem to have any identifiable "hook" or reason why you'd watch his show. He's perfectly nice ... but not, at least for me, that memorable. In one episode, he talked about how international his house is - he's Lebanese, his wife is from somewhere else - but he never seems to bring that multicultural influence to his food or his presentation.

Did anyone else find it strange that Michael and Jamika started out being so bubbly and outgoing and suddenly, both of them changed and got kicked off?

To me, it seems hard to believe that a person would start a show like that with everything it would take to win and change all of that later.

Jamika kept talking about knowing what she should do and she continuously did the opposite. :rolleyes:
