Ingredients for Basil Shrimp
1/4 cup butter
1-1/2 pounds large shrimp, peeled and deveined
1/4 cup finely chopped garlic (about 12 cloves)
2 medium red bell peppers, julienned
3/4 pound zucchini, cut in half lengthwise, sliced into1/4-inch thick slices (about 3 small)
1 large onion, chopped
6 cups cooked rice
1/3 cup chopped fresh basil or 2 teaspoons dried basil leaves
1/4 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Fresh grated Parmesan cheese
Fresh basil leaves
Directions
Heat butter in large skillet or wok over medium-high heat until hot. Add shrimp and garlic; cook and stir 2 to 3 minutes or just until shrimp turns pink; remove from skillet, set aside. Add peppers, zucchini and onion to skillet. Cook and stir 4 to 5 minutes or until vegetables are tender. Stir in rice, shrimp, basil, lemon juice, salt and pepper. Sprinkle with Parmesan cheese, garnish with basil.
Makes 6 servings.

Each serving provides 432 calories, 29 grams protein, 10 grams fat, 54 grams carbohydrate, 1 gram dietary fiber, 193 milligrams cholesterol and 838 milligrams sodium.

I've been addicted for years! Emeril and Iron Chef are my favorites. I loved Two Fat Ladies and a lot of the old shows, too. Logan, what was cooked for the Beach picnic?? I can't imagine what your group wouldn't like! Met Emeril here on the beach a few years ago. (He's originally from New Bedford) He was doing a book signing/clam bake. He is SO fine! mmm, mmm, mmm!
