    Thursday #688 Salad Days Thursdays!

    I had a chicken salad sandwich for lunch today - so.......why not do a salad Thursday!

    I think a salad bar would hit the spot.

    LOL, mon mentioned a 'greek salad' in the last thread - my mouth watered.,.....

    I think a huge vat of ice tea sounds good too,.

    I think a good DOTD would be a gin and tonic, something simple and refreshing?

    A chicken salad sandwich sounds good. Could I have some potato salad on the side and some iced tea?
    No matter what anyone does, someone some where will be offended some how!!!!

    Had pasta salad last night, gluten free of course. I'd take a large glass of iced tea, please.

    Gonna be a heat wave here this weekend I hear. Lotsa popsicles, greens and I made a big quiche to nuke slice by slice. Only gonna use the BBQ if that's not enough and it sure won't be me doing it Fruit smoothies in the blender, I never cook in the blasting heat.

    I have some tarragon chicken salad in the fridge right now, which several people who have tried it raved about:

    1. Chop up cooked chicken into 1/2" or smaller cubes. I usually use one large chicken breast, baked and cooled, but whatever you have will work.

    2. Slice 1 shallot in very thing slices

    3. Add a tablespoon or so of tarragon

    4. And enough mayonnaise to make it all stick together, and salt to taste

    Stir all together, and chill until you are ready to serve!

    I usually make a sandwich on toast with a leaf of good lettuce - Boston or other dark green, not iceberg. If you are going to be carrying the sandwich somewhere for lunch, a slice of lettuce between the bread and the salad on both sides keeps the bread from getting soggy!

    Sounds really good Karen, never use tarragon much. I can't even remember when I used it last, gonna sort that out one day. There is a heat wave here, so hot. My Aunty just emailed, she just moved and wants us to go buy two new air conditioners and install them in her new high rise . Husband knows how, I am pretty sure he will be thrilled about that when he wakes up from his nap..... EEEEEK!!! Ohhh God. Think I will just tell him tomorrow a.m. Tonight a lovely samosa and a fruit salad for dinner.

    Let me pour some tea, a martini and scoop out some chicken salad.

    I used to date a gal that made a good tarragon steak - Chicken w/tarragon sounds great!

    DONE!
