    It's Derby Thursday #531.

    Well, it's time for hats, fancy dresses, mint juleps and the horseys!

    ------

    Here in "the Ville" is a pretty much a citywide party. Last night was the paddle boat race on the Ohio.

    Tonight is the Pegasus parade - I still am a little puzzled about all the partying on school nights?

    Tomorrow is the Oaks race and Saturday it's the Derby.

    One thing about Derby day that I didn't know is that there are about 12 OTHER races beside the one that's shown nationally.

    Anyway here is the 'signature sandwich of Louisville.....'

    The Legendary Hot Brown Recipe

    Ingredients (Makes Two Hot Browns):


    •2 oz. Whole Butter
    •2 oz. All Purpose Flour
    •16 oz. Heavy Cream
    •1/2 Cup Pecorino Romano Cheese, Plus 1 Tablespoon for Garnish
    •Salt & Pepper to Taste
    •14 oz. Sliced Roasted Turkey Breast
    •2 Slices of Texas Toast (Crust Trimmed)
    •4 slices of Crispy Bacon
    •2 Roma Tomatoes, Sliced in Half
    •Paprika
    •Parsley

    In a two-quart saucepan, melt butter and slowly whisk in flour until combined and forms a thick paste (roux). Continue to cook roux for two minutes over medium-low heat, stirring frequently. Whisk heavy cream into the roux and cook over medium heat until the cream begins to simmer, about 2-3 minutes. Remove sauce from heat and slowly whisk in Pecorino Romano cheese until the Mornay sauce is smooth. Add salt and pepper to taste.

    For each Hot Brown, place one slice of toast in an oven safe dish and cover with 7 ounces of turkey. Take the two halves of Roma tomato and set them alongside the base of turkey and toast. Next, pour one half of the Mornay sauce to completely cover the dish. Sprinkle with additional Pecorino Romano cheese. Place entire dish under a broiler until cheese begins to brown and bubble. Remove from broiler, cross two pieces of crispy bacon on top, sprinkle with paprika and parsley, and serve immediately

    I'll take a sandwich (sounds delish), but hold the Julep, please. I'll take a lemonade if Orc hasn't used all the lemons for skeet shoot practice.

    I'd love a hot chocolate with extra 'mallows' please!! Hard to believe it's almost Derby Day when we are supposed to have 1 to 3 inches of accumulationing snow tonight. A first for our neck of the woods. Might be the first time in history that I have to pay some one to shovel out my sidewalk and mow my yard all in the same week.
    No matter what anyone does, someone some where will be offended some how!!!!

    Those sammiches sound good! Might have to try them...

    I'll pass on the julep, but a cold beer would sound good, as it's garden time! Cabbages, Bok Choi, Okra are all in the mini-greenhouse sprouting, and we have work to do this weekend, namely a final round of tilling and planting.

    That sandwich does sound wonderful! I'll take one, thank you, with a splash of Chardonnay. I'll save the Julep for Derby day!

    Just me sneaking in for a hot chocolate refill. Can't believe it is snowing outside. blah

    It is sticking to the grass. I'm hoping it has enough manners to stay off the sidewalks and streets. This is the latest in the year we have ever had snow. At least our weather people are enjoying it!!!

    I would love to have some snow.....the dandelions are driving me crazy, I cut the lawn and they show up that afternoon, again!

    Odd that you mentioned dandelions. I was just noticing the other day what a fine crop I have of them this year. They really looked pretty!!! I did have two lilac blooms opened. Sadly all got snowed on last night. We had an inch that stuck just to the grasses. Thankfully it had the good manners not to stick around and melted before noon. Now it's just stinking cold!

    One refill.....

    The dandelions grow so fast that they are a pain to try and keep them under control..

    I put down fertilizer and weed killer so, we'll have to wait and see!

    Now, if only you had a bunny, it would eat the dandelions for you! Miss Hoppy loved them, so we never put down weed killer, just picked the blossoms when they appeared for her to munch! They are human safe as well, lots of vitamin C! If you haven;t yet poisoned them, throw some on your next salad!
