Carrots are good, crunchy a relatively low calorie. Avoid onions, grapes and raisins, as all an be toxic in high amounts. And for other veggies, add just one at a time, and see how your dog reacts. Just like people, different dogs can react differently to the same veggie.
Our Saint Bernard LOVED corn cobs once we were done with them. I have also known dogs who enjoyed eating watermelon rinds, right Kimmy?

As or anything else, as Karen said it is just a matter of whether or not your pup likes it.
Carrots and green beans are great treats and sliced raw sweet potato helps clean off their teeth. Apples are enjoyed by most dogs.
Then there are dogs like my Lacey. If it is healthy, she is NOT interested. So I add bits of broccoli, green beans, apples to their food bowl and Lacey cautiously sorts those bits out and leaves them in a pile on the floor; all the while throwing me dirty looks for trying to sneak them by on her, ha haa.

Delta eats about anything. I will be pureeing her veggie mix soon and just went shopping. I got her:
- Apples
- Black, blue, ras, and strawberries
- Sweet potatoes
- collared greens
- kale
- carrots
- turnips
- cabbage
- parsley
- broccoli
- celery
- green beans
