Dinner tonight for hubby and I.
OK... I have 2 green peppers, a chicken breast, and some mushrooms.
I was thinking about making a modified stuffed peppers with chicken instead of ground beef... does that sound gross?
Any suggestions?
:)

Do you have any tortilla shells?
Maybe fajitas if you do? :)

If you have rice you could make a stir fry...

Try going to this website (http://www.allrecipes.com) . You can then go to search, then ingredient search, type in what you have, and it can recommend recipes for you.

I love this site. Let us know what you end up making. :D

That got me thinking.....we should do a recipe swap!

No tortilla shells....
I don't know how to make them.... even if I had the tortillas.
How do you make fajitas? I bet hubby would like them.

Stir fry sounds good.
I do have rice.

Thanks Lobodeb for the website. I'll look.

Just like a stirfry - cut up the ingredients, add some hot sauce (if you like hot), then put them in tortilla shells, with cheese or whatever toppings you like and roll them up. :)

Maybe you could make ka-bobs if you have skewers?

You can take the peppers and chicken and shrooms and put them individually into plastic bags. Put them back in the fridge and go out to dinner!!!

kidding!

Add an onion to the recipe

Slice and marinate the breasts and the veggies, cook the in a hot skillet, heat a can of refried beans and a side of rice!

Wipe the beans on a tortilla add some rice and chicken roll it up and there ya got it!
----------.

Before you eat the tortillas heat them on a griddle before you try and roll them!;)

Oh I just remembered another variation.

-------------------------------

Cook the chicken, slice and sautee the veggies...

Set aside,

Shred cheese ....heat up the griddle and place a tortilla on...
put the cheese on it and then the chix and veggies (drain them well before) on top and cover with another tortilla....

Heat that sucker until the cheese melts....

cut into wedges and serve with sour cream and guacamole or a salsa!

Chicken Enchiladas???

Easier still!!

marinate and cook the chicken then shred it.

Pre heat the tortillas, place the chicken in the tortillas and roll them up-about an inch in diameter....put into a pyrex dish..

Get a can of enchilada sauce, and cover the enchiladas and cover with shredded cheese. toss into the oven until the cheese melts.

Beans, Rice and You are a genius!:D

Hi everyone!
Thanks for all the ideas. I ended up making a stir fry with an onion (like Richard said to add), peppers and mushrooms. It came out yummy. I served it on white rice. :)

Hey, I just came from Italy 3 years ago. They don't cook mexican there. You can find items in specialty stores there.
I usually cook Italian or American. I have never cooked anything Mexican. I really didn't know you could get Tortillas at the grocery store. :(
I know... I'm weird.
I should try to cook different types of cuisines. :p

if you don't eat them and you don't cook them and you came from a different country you wouldn't know what they were.
But you learn something everyday right?! ;):)
They are pretty inexpensive - usually found in the Mexican Aisle of the store. You should try them. The are EXCELLANT with some chocolate chips and Peanut Butter melted inside them or marshmellows and chocolate.
The possibilites are endless - anything you make a sandwich with you can put in a tortilla. They are great for low carb meals.
Good luck!

S'MEXICAN S'MORES????

:D

-----------------------------------------

One thing about tortillas,

There are corn tortillas, yellow and white. When you warm them up you have to make sure you eat them quickly or they get hard.

There are flour tortilla, green, red and white......
They make them with different kinds of flour.

One thing you can do to keep them warm and soft it to put a kitchen cloth (what do you call them?), put the warmed tortillas into the middle and fold the the ends over cover them up.
--------------

Sorry Kfamr,

I didn't see your recipe until it was too late....

I just added the beans and rice...

No worries.

One of my favorite things to do is make pizza out of tortilla shells.
I smush up some ripe tomato, spread it on the tortilla, top with cheese and other favorite pizza toppings, fresh basil - then put it in the oven until the tortilla is crisp and cheese is melted.

It's delicious! :)

I knew you wouldn't let the s'mores go unnoticed Richard! ;)
And btw they are HAND TOWELS is that what you mean? OR dish rag- dish towel or I like to think of Slick and Gini using them as firemen catchers! ;)
