Lately i've been enjoying cooking and I make dinner almost every night.

What's on the menu at your home?


Tonight we're having:

Teriyaki BBQ'd Chicken
Garlic & Olive Oil CousCous
Cheesy Bisquits
And a fresh Salad

Swordfish all'acqua pazza (baked w/ black olives, capers & 1 plum tomato diced)

buttery rice

green salad with lemon and olive oil

wow, to me that sounds like a fancy meal, and would be weird to get used too..at my house all meals are fend for youself, and occasionaly someone will be making food for themselves and ask if anyone else wants anything at the same time lol

Nothing fancy. I sent my husband to do the grocery shopping yesterday and he got 3 varieties of steak (cubed, skillet, etc.) in addition to the two NY strips we already had in the freezer. Anyone want to buy some red meat off me? :eek:

Dinner was yummy tonight and it totally caught me offguard. It was like what we used to have many years ago.

We had:

- A rainbow salad (brocoli, cauliflower, carrots, red cabbage, tomatos, and cucumbers with lime juice and olive oil as dressing)
- Stuffed shells (manicotti? and some other cheeses)
- Baked bread
- Vanilla icecream with fresh strawberries for dessert

I'm happy to see when dinner is completely vegetarian so I can get a FULL meal. :)

You guys are making me hungry!!!

Unfortuntely, I'm still at work (going on 12 1/2 hours!! :mad: ) waiting for this family to leave so I can go home and eat dinner before I pass out from exhaustion!!! I'll probably just go to bed.

Sorry, had to vent. These people were SUPPOSED to leave at 7:00 pm! (it's now 8:45 pm here) UGH!!! :mad:

Been eating out lately, and eating leftovers, haven't cooked for a while. But tonight I made salmon with basil butter, homefried potatoes, and edamame (japanese-style steammed soybeans). It was yummy!

Hey! We sick girls will gladly accept "Meals on Wheels from PT"!

I really haven't cooked since my mom went back to the hospital in March. just easy, odds and ends. Then with surgery, the guys were on their own. Recently, John and I have been invited out (his son is a gourmet cook) or eating out though I hate to spend the money, I hate spending the time cooking even more. What a nice excuse not to be able to stand on my feet for long. Plus, with all the stuff that's happened within 2 months, I haven't been hungry. Lost 20 pounds in 6 months.

I need to make something that lasts a few days so it can just be heated. Besides tomato sauces for pasta, meatloafs...anybody have any other suggestions? I can't cook anything different every night cause my brother gets home at 11p, so it has to be easy enough for him to warm up, Any website or ideas??? I can put John to work (not a bad cook himself-he makes a mean breakfast)

Sorry to ramble when all that was asked was a simple question! :p :rolleyes:

How about Chicken Spaghetti? The recipe I have makes a humongous amount and I have 3/4's of it left over so I put it in small containers for Brad to take to lunch..usually atleast 4 generous servings left over...and its easy to make.

I also make Spicy Kielbasa Soup on a regular basis..you can make it in the crock pot and it will make 4 or 5 generous servings to freeze. I always keep some in the freezer to pull out for Brad's lunch when we don't have enough leftovers the night before.

I added the link in a previous post to Pamela's Kitchen but am posting these 2 recipes for you:

SPICY KIELBASA SOUP

kielbasa, sliced and each slice cut into fourths (or just use any polish style sausage)
1 medium onion, chopped
1 medium green or red bell pepper, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) chicken broth
1 can (15-ounces) black beans or kidney beans, drained and rinsed
1 can (14-1/2 ounces) fire roasted crushed tomatoes*
1 tablespoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
3 green onions, white and some green, chopped

Mix all ingredients together in your crockpot and cook on low for 10 hours

Chicken Spaghetti
4 to 6 chicken breasts, cooked, reserve broth
1green or red bell pepper (optional)
1 onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel (with chilies)
1 can stewed tomatoes
1 pkg spaghetti (1 pound)
1 box of Velvetta cheese, cubed (pound)

Cook Spaghetti in broth
Cube chicken and saute with onion and bell pepper in large skillet until veggies are softened. Add soups, Rotel and stewed tomatoes. Cook on low til bubbling and then add cooked spaghetti.
Transfer to greased baking dish..9 x 13. Top with cheese and bake 20 - 30 minutes until cheese is melted.

Enjoy~~

Yummy! Thanks for the recipes! I actually cooked last night. Made spegetti sauce with *ta-da* kilebasi since I had no ground meat! Being 1/2 Polish, you know I'm going to make that kielbasi soup! Yummy! My mom would be so proud!

We ate out tonight because it is my name day (saint name day).... anyway it is celebrated in Europe.
Had some really good fried mushrooms and veggies, a yummy cheeseburger and 2 beers. (i never drink) so you can immagine when I got home.... i just wanted a nap! :)

Bruschetta is an italian starter.

Last night I made my own hummus (thanks to Kay always talking about it) I fried an eggplant and blended that with 2 cans of peeled garbanzo beens and 8 cloves of sauteed garlic:eek:

It was good...I have really good breath now;)

Saturday night here, we always try and have an easy meal, tonight was these yummy lil savoury pies, three flavours to choose from, ham and egg quiche, mince and potato top, they are reasonably low in fat for pies as well, followed with a salad and a very nawtee yummy treat dessert, Cornetto tim tam ice creams.......:)

:eek: I actually went grocery shopping, back brace and all, and cooked! Pork sirloin filets (never heard of it but they looked good) with orange marmalade glaze (made it up), home made potato salad (Ok, I was on a roll), corn on the cob smothered with real butter and later, cappachino chip ice cream! I warned everyone not to expect that every day, so eat hearty while you can!!! :D :D

Tonight my parents, my dad's cousins, my grandpa, sharon(his wife, I just call her Sharon because she isn't my biological grandmother, my biological grandmother(my dad's mother) died when I was very young) and myself are going to a BBQ. We're going to BBQ'ing hot dogs and hamburgers and we'll have some side dishes as well. When I am done, I am going to go swim in the lake :) It should be a nice dinner this evening :)

You could do that or cut the chicken & zucchini into squares, marinate them in your favorite sauce/seasons, and make them into kabobs. :)

or...

I LOVE zucchini on the grill. I cut it in long slices and put them directly on the grill. If it's a small zucchini you may want to use some foil on the grill.

A type of fish. :) I put some hot peppers, garlic, and olive oil on it in foil and on the grill. It's cooking right now.
I've decided to make yellow rice & green beans with almonds to go along. :)

Not 100% sure but pizza. Home-made if I can get hubby to make the dough. We make the dough from stratch but he makes it better than me. Or that's what I tell him anyway. :p

It was, promise! :p Next time you should come on over. We have about 4 filets of fish in the freezer (it was on sale so we got some extra pieces for later!)

My mom made a piece of fish and I made a piece. We were having an "Iron Chef competition." ;) Everyone (me, my mom, and my sister) liked my fish best.

It's all gone so I assume it was pretty good, and my piece was larger than my mom's. :p

Elk is exactly like beef, only with less fat and no hormones pumped into it! We eat alot of wild meat here. Elk is definately my favorite. You can do anything with it that you can with beef. We have elk roast, steak, sausage, ribs and burger in the freezer right now.

Tonight we will be having frozen pizza--as we do every Wednesday night. The Humane Society puts on a weekly bingo, every wednesday. We both seem to work at it every Wednesday--bingo volunteers are in short supply. By the time we get home, it's too late to cook anything that requires thought!

Elk is exactly like beef, only with less fat and no hormones pumped into it! We eat alot of wild meat here. Elk is definately my favorite. You can do anything with it that you can with beef. We have elk roast, steak, sausage, ribs and burger in the freezer right now.
Like Glacier said it is like cow but leaner. When you cook it you have to make sure that you don'y over cook it, as it will be very tough to chew!
We eat alot of wild meat, my favorite is Buffalo..Yummy!

We had homemade Herb Roasted Chicken and Mac and Cheese and Green Beans w/ Spaetzle (german style dumplings) in a Bavarian style sauce.

Since I'm still recovering from surgery, hubs cooked tonight- corn on the cob and ribeye steaks on the grill, little red potatoes, and roasted garlic bread.....mmmmmm!

I love making fish packets for the grill. Scallops are especially yummy in foil.
I haven't done that for a long time tho.
I bought some boneless ribs yesterday. Put them in the crockpot with Honey Teriyaki BBQ sauce and a bit of apricot Jelly and let them cook while I was at work.
Then I fixed Velveeta mashed potatoes and had some left over biscuits.
It was yummy.

I LOVE homemade Pizza. My dad's uncle would invite us down on occasion for his homemade pizza. It was awesome. He passed away last year tho. :(
I love to cook but with working 2nd shift I don't usually get much of a chance. I should do better b/c I really need to pack my lunch more b/c our cafeteria has raised their prices, lowered their helpings, and decreased their quality also. I usually end up in and out of the bathroom after eating down there! :(

Ack.. I just made the corn/black bean salsa..
It has basil, onions, jalepenos, corn, black beans, tomatoes, and a olive oil/lemon juice "sauce". Well, let me tell you those jalepenos were HOT! I cut them by hand and my fingers are still burning after washing them twice and dousing them in hand sanitizer. :eek:

Last night I did some baked onions, stuffed with ground beef, bacon, mushrooms , chili, garlic, rice and cheese. Topped off with a red wine sauce.:)
Tonight I'm roasting a beef, I just haven't quite decided what to marinate it with yet, I'll have a look in the pantry and see what inspires me.:)

We'll be eating out, since we have to go shopping for a new stove. Actually the stove works, the element went out in the oven and since it's over 20 years old we decided to get a new one. Not only that, last summer we had to replace the fridge and the dishasher and we got black, so now the stove doesn't match. Heck, if I'd known all it was going to take to get a new stove was for the element to go oout, it would've mysterioulsy went out a long time ago.LOL

I went to the store and bought a bag of sliced baby portabella mushrooms and soaked them in milk (forgot I didn't have eggs) and battered them in flour, salt, white pepper, and parmesan cheese and fried them up - they were yummy.
And I had never had fried green tomatoes - well I had a small tomato growing on one of my plants and I picked it and sliced it and breaded it and fried it up and it was excellant! Don't think I'll be doing it to all my tomatoes tho - I can't wait until they turn RED. :)

Really, I just wing it...

Here's what I put in it today.. I didn't measure anything, so this is just about what it looks like.

1 bag of potatoes
4 onions
3 stalks of celery
2 cans of chicken broth
1 cup of water
1 cup of milk
A few dashes of salt (I like it salty, so I put extra salt)
A few dashes of chicken bouillon
A few shredded baby carrots
2 sticks of butter


cut potatoes, onions, and celery to the size you like.
Boil potatoes in water.
In another pan, sautee onions and celery with 1 stick of butter. When cooked add broth and water.

Drain potatoes, add celery/onion/broth mixture. Add milk, salt, and butter to taste. Shred a few carrots over top for color.


I think that's it. ;)

wasn't much in the mood for cooking the last few days. It has been too hot and humid here. It has been in the mid 90's without the humidex. So last night we ordered pizza. Amazing as always. And tonight I made some oven roasted herbed potatoes.

Basically you just put some oil in a baking dish chunk up some potatoes then sprinkle rock salt, fresh ground pepper, fresh chopped (basil, oregano, parsley and rosemary). Drizzle a small amount of oil over top and bake for about 1 hour. They always turn out great and are a huge hit in my house.

Tonight, being as it's our last supper on campus, we ordered O'Charleys. The cafeteria had all leftovers from the past year and we were not about to eat any of it. I split a combo with my roommate; I had the bite-size shrimp and a baked potato, and she had chicken tenders, potato soup, and some broccoli cheese casserole. Of course, the rolls were a must too. It was SOOO good!!!

Since I've been at school this past year, my dad hasn't been cooking. He just relies on other restaurants. He says it's easier than fixing for two people. But, with my coming home to stay tomorrow, we're whipping things back into shape. Homemade meals every night and we're going to actually have food in the house!

On Saturday, we had pasta and homemade spaghetti sauce. It was made on a whim and we just kind of threw everything into the pot.

On Sunday, dad had a sirloin in the fridge that needed to be eaten, so we went to the store and picked up a few things and made fajitas. Mine had onions, tomatoes, annaheim peppers, and yellow bell peppers all sauteed in olive oil with some garlic. Put that on a tortilla with some sour cream and it was FABULOUS! Mom's had the steak, onions, and tomatoes. Dad ate out of both of the pans. :P

Possibly some seasonings and herbs. Though, I'd be extra careful when adding other flavors if you're adding a lot of worcestershire sauce. She might've meant some salt and pepper, though, I'd be careful with that because there is already a lot of salt in the stuff she used.

You just have to get a feel for what you like. Spicy versus mild, or tangy versus sweet, etc.

I cook like my grandma - a pinch of this - a bit of that -
so about a cup of ketchup
2 T of the other ingredients - (mustard, white vinegar, worc. sauce, teriyaki sauce)
1/4 brown sugar -
onion - but I used a SMIIIIDDDGE of garlic
and a can of REAL COCA COLA
and I used frozen skinless chicken breasts - I put them in the crock pot frozen and turned the heat up to high for the first hour - then turned it down to low for about 5 hours.....

Friday my mom came over and we spent over 4 hours planting flowers and weeding. :eek:
I put in the crock pot - a jar of Hunts Tomato sauce with Mushrooms, a can of crushed tomatoes, about 5-6 small packets of sweetner and 1/4 brown sugar. (like I said I like my tomato stuff sweeeet) Let it simmer for about 4 hours served it over chicken and prosciutto tortellini, and ricotta and spinach tortellini. It was fabulous!!!

Tonight hubby grilled out some teriyaki chicken. I marinated it in some bottled teriyaki sauce and it tasted great! He also grilled yellow squash and zucchini. We had the chicken & veggies with teriyaki rice (microwave foil rice) Dessert was sliced strawberries. Oh and sweet tea of course!! ;)

tonight i had left over breakfast. i made irish oatmeal-apple-cinnamon bake on sunday. i gardened tonight and i needed something quick and tasty.

we had breakfast for dinner. my mom made me and her an omelet with sauted mushrooms, cheese, and ham in it. :) then I had some bacon and some hashbrowns and a plum. my dad had an egg with potatoes and ham. :)

I had some corn pudding for supper. I fell asleep, and dad brought home Moby Dick at around 9:30. I had a few bites of it, but it was just too greasy for me. I've been feeling kind of nauseous here the past couple of days so food hasn't been too good to me. I might go have some watermelon later or in the morning because I haven't been getting that many fluids in me.

We just had scotch fillet steaks, with a honeyed bbq sauce, sorbaise potato's and steam vegies. :)

I haven't made it yet but for supper tonight:

Antipasto:
Cozze Al Prezzemolo ( mussels with prasley)
easy quick and yummy

1 kg mussels
1 clove of garlic
olive oil
50 grams of parsley chopped
lemon slices
salt & pepper

wash the mussels well. thinly slice the garlic and put into a pan add with 3 tbsp of olive oil. sautée for a few minutes. Add the parsley & the mussels.

add salt & pepper, cover and leave cook on a medium/low heat until the mussels open. Approximately 10 mnutes.

Transfer the mussels to a serving plate, toss those that did not open, and serve immediately with lemon slices.

Serves 4


primo & secondo piatto:
Bistecca Al Porto (steak in a port sauce)
Another dish that is very easy, quick & yummy

4 beef steaks about 200g each(1/2 pound each)
200 ml of dry port
30 grams of butter(about a tablespoon)
3 tbsp of extra virgin olive oil
1 clove of garlic
1 laurel leaf(can use a bay leaf)
3 or 4 basil leaves (for garnish)
salt & pepper

salt & pepper the steak and let sit for about 10 minutes.

In a pan melt the butter with the oil, garlic (whole clove) and laurel leaf.

add the steak and cook for about 5 minutes each side. tenderize with a fork while cooking. bathe each side while cooking in the port. (half each side)

remove the laurel leaf & garlic. transfer the steak onto a serving dish and por sauce over top. garnish with basil and crushed red peppercorns and cropped basil. Serve immediately.

Serves 4

I am serving this meat with a salad. This is the salad

Insalata di pomodoro alla menta(tomato & mint salad)
800g of fresh mature tomatoes
1 sprig of fresh mint
200 g of fresh spring onions
extra virgin olive oil
salt & pepper

wash and shop the tomato into wedges.

slice the spring onions in thin rings and wash well.

wash and chop coarsely the mint. add all together and toss lightly.

salt & pepper to taste and drizzle with olive oil. Serve as a side with the steak.

Serves 4

Dolce:
Something very simple.

It is cherry season here.So we are having
fior di latte gelato with cherries and whipped cream.

I can't wait for suppertime. :p

I just ate some macoroni and cheese (which I had been CRAVING ;) ). It stinks though, my family all sits down and eats dinner at about 6 when my parents get out of work so my brother Adam and I always have to fix up something quick (or if we're lucky they'll leave us some leftovers) when we get home at 9ish.

Tonight is a pot roast in the crockpot. I know that sounds like a fall winter dinner, but I didn't want to heat up the house and wanted something easy. Its in the crockpot with some onions and potatoes. Looking forward to it. I will have buttered rolls along with it. :)

Troy brought home a whole beef loin. After he cut it up, he set aside three beef tenderloins (about an inch thick, just a little over 1 lb.) and packaged the rest.

I set the oven to broil. Took the tenderloins and rubbed all sides with a total of 2-3 tsps of olive oil (collectively, that is). Each side was then rubbed with onion powder, salt, and pepper. I wrapped a slice of bacon around each tenderloin, secured it, and set it in a disposable lasagna pan. I cooked it for 6 minutes on one side, flipped them over, and cooked them for six more minutes. I cooked some frozen green beans to go with that. There was also milk and honey bread with butter.

It was pretty simple and very good! :D

Tomorrow I will take a small beef roast (cut from the loin) and put it in some barbecue sauce (probably honey or spicy honey). It will cook/simmer on low nice and slowly. It'll be put into whole grains buns on top of Cabot extra sharp cheddar cheese. :D Probably frozen sweet peas to go with it.

i wanted a practice run for thanksgiving dinner. i roasted a fresh turkey breast ( and it was it ever so much better then the frozen ones!) mashed potatoes, fresh cranberry/orange/brown sugar relish, peas, carrots, rolls. and there will be leftovers this week. what did you have?

tonights dinner is as much a tradition as the turkey and fixings. chili and cornbread. easily made, chili, very spicy, in the crockpot, cornbread baked while mom made the pies. anyone with pre t-day traditional meals?
