Hi everyone. Rachel asked me for this recipe but I thought I'd post it here on DOTD so anyone else can make them if they wish. They were real easy and quick and pooches seem to LOVE them!

Carrot Cakes

2-3 large carrots - grated
Just under 1 tablespoon baking powder (it's alot but it's what the recipe called for)
1 cup whole wheat flour
3/4 cup wheat germ
3 tablespoons molasses
1/4 cup 100% pure maple syrup
1/2 cup soy or rice milk (or cow milk)
3/4 cup rolled oats
2-3 tablespoons sugar (optional)
1 large egg
1-1/2 tablespoons olive oil
1/2 teaspoon fresh ground cinnamon

*Preheat oven to 375*

Combine dry ingredents in large bowl. In a smaller bowl combine the other wet ingredients together. Then stir it all up. Put the batter in a lightly greased 9x13 pan (I used a glass pyrex pan)and bake 20-25 minutes. Cut into small squares when cool.

Store in the fridge in an airtight container.

They are mainly for dogs, but I snuck one and they are pretty good. Not real sweet, but alot of nice flavors. I got the recipe from a website for homemade doggie snacks. The only bad thing about them is that they are soft and spongy like a normal carrot cake so they are not great on the teeth since they don't requre much chewing.
