They are uncommon, but not THAT rare, really. When cooked, they are as red as any other lobster, it's just an oddity in the gene pool lottery, I have seen a few in my lifetime, but I DO live in New England, after all.

We do occasionally get them; mostly they are kept for show for a while and then tossed back, to try and allow more of them to develop.

What a striking color!
