Here's my favorite. It's kind of a rhubarb upside down cake. But you could use other fruit if you don't like rhubarb.

Rhubarb Custard Cake

1 white or yellow cake mix
4 cups of chopped rhubarb
1 cup of white sugar
1 pint of whipping cream

Prepare the cake mix according to the directions on the box. Pour in a greased 9” X 13” cake pan.

Cover with the rhubarb and sprinkle with the sugar.

Pour the whipping cream over the entire cake pan.

Bake at 350 for 50-60 minutes or until cake springs back when touched. Cream and rhubarb sink to the bottom and form a luscious custard layer. This stuff is yummy.

Get a copy of Fanny Farmer - paperback cookbook. The Huntington Chocolate cake is perfect - not too sweet, but very chocolate. The Boston Favorite in there is a good "yellow" cake, too.

Here is my own family recipe for a genuine Flemish appelcake

ingredients

5 eggs
250 g selfraising flour
250 g margarine
250 g sugar
1 little bag of vanilla sugar
a bit of salt
4 sour apples

recipe

- mix flour with sugar (both types)
- add melted margarine
- add eggs one by one (mix after every egg)
- add salt and flour
- put 1/2 of this mix in a cake mould (don't forget to "butter" it)
- peel apples and cut into slices
- add other 1/2 of batter and cover all apples with it
- bake this cake in a preheated oven on 180°C (=360 °F) during 1 hour.
