What did you eat today, Thanksgiving?
I ate tons of turkey, mashed potatoes & gravy, and for dessert I had Pumpkin Pie with lots of whipped cream and ice cream with chocolate syrup, yum yum ^^
I could have had stuffing, corn bread, cherry pie, apple pie, pumpkin cheesecake, and other stuff but decided not. :)

Thanksgiving is my absolutely favorite holiday of the year -- it is such a great time for a family and good food. What more can a person ask for? Yesterday was especially special -- we had such a necessary and SPECIAL time of remembering my dearest Mom-in-law who passed away in March. We laughed and we cried together.

I got up at 3:00 in the morning to start cooking :eek: but then went back to bed between 7:30 and 9:00 so that I could make it through the rest of the day. This is what we had:
* Turkey
* Gravy
* Mashed potatoes (made by brother-in-law)
* Squash Casserole
* Stuffing (homemade by my sister in law)
* Creamed Peas
* Far-east Celery (an awesome dish my mom used to make when we were little)
* Home made bread (made by my brother-in-law)
* Pumpkin Bread
* Cranberry Bread
* Cranberry Sauce

And then later on we had PIE, all made by my sister-in-law: Apple, Pumpkin, French Silk, and Pecan; all served with whipped cream and icecream.

Needless to say, we were STUFFED! And even after sending away leftovers, my fridge is STOCKED for a week! :eek:

We had veggie lasagna and garlic bread.

We don't have family here, so it was just a nice day off more than the traditional holiday.

I-Luv_Rusty, come on over any time!!! ;) :D

Joycenalex and ShaisMom, here is the recipe for Far East Celery (Yum!)

FAR EAST CELERY
4 Cups of 1" Celery slices
5 oz. can Water Chestnuts
1 Can of Condensed Cream of Chicken Soup
1/4 cup diced pimientos
1/2 cup bread crumbs
4 Tablespoons melted butter
Slivered almonds

Boil celery in a small amount of water for 8 minutes -- they will be crisp-tender. Drain and place in a 2 quart casserole dish. Stir the water chestnuts, soup, and pimientos in with celery; and smooth out. Top with bread crumbs, and sprinkle with melted butter; sprinkle with almonds. Bake at 350 degrees for 35 minutes.

Let me just make the note that I HATE pimientos! But in this recipe they are sooo good!!! This is the only reason I buy them, ever!

Every year, we'd go to my grandmother's house where Mamoo would fix a TON of food. It was all SO good (everything she made was) every year, but since this is the first year without her, we decided not to be traditional. It was for our mind's sake - we didn't think we could handle upholding the tradition without her.... plus, none of us can cook like her.

So instead, we had a MEXICAN FIESTA!!

I had:

Homemade salsa with chips
Shrimp Burritos with:

beans
homemade Mexican rice
spiced shrimp
lettuce
tomatoes
black olives
sour cream (just a dab)
green onions

Homemade Mexican rice on the side, of course
Dairy Queen icecream cake that says "Happy Bird Day!" - yes, the guy who wrote it thought we were nuts. :)
